This satisfying breakfast is so simple yet so delicious.

2 large Land O Lakes® Eggs
1 tablespoon milk
Salt, if desired
Pepper, if desired
1 tablespoon Land O Lakes® Butter
1/2 cup (2 ounces) Land O Lakes® Shredded Mild Cheddar Cheese
Chopped fresh parsley, if desired

Steps:

  • Combine eggs and milk in bowl; beat with fork or whisk until well mixed. Season with salt and pepper, if desired.
  • Melt butter in 8-inch nonstick skillet over medium-high heat until sizzling; pour egg mixture into hot skillet. Cook 30 seconds or until bottom is set. Run heat proof spatula around edge of pan, lifting edges of eggs and allowing uncooked portions to flow underneath. Tilt pan, if necessary. Continue cooking, lifting eggs as needed, 1-2 minutes or until almost set.
  • Remove from heat. Sprinkle cheese over half of omelet. Carefully fold other side of omelet over cheese. Carefully slide omelet onto serving plate. Sprinkle with parsley, if desired.

1/4 small onion, finely diced

Steps:

  • In a small skillet over medium heat, warm 1 teaspoon olive oil. Cook onion and green bell pepper, until onion is translucent, 2 to 3 minutes. Add ham; cook until browned, 3 to 5 minutes.
  • In a small bowl, whisk together eggs and salt until frothy. Make omelet, adding remaining olive oil to heated pan; fill with ham mixture.

2 large eggs, beaten
1 Tbsp low-fat milk
1 pinch salt
1 pinch black pepper
1 slice bacon, cooked and crumbled into pieces
2 button mushrooms, sliced
1 1/2 oz grated pepper jack cheese
1 Tbsp black olives, sliced (i try to use spanish black olives when i can get them)
1/2 green onion, sliced

Steps:

  • 1. Lightly spray 8-inch skillet with no-stick spray. Heat skillet over medium heat.
  • 2. In a bowl beat together eggs, milk, salt and pepper until frothy. Pour into heated skillet. Cook, uncovered, without stirring for about 4 minutes and eggs start to set. As eggs start to set, run a spatula around the edge of the skillet and lift eggs slightly so the uncooked portion can flow underneath.
  • 3. When eggs are almost set, sprinkle the crumbled bacon pieces, sliced mushrooms and Pepper Jack cheese down the center of the omelet; let cook another 1 to 2 minutes, or until eggs are set throughout and the cheese is just starting to melt.
  • 4. Fold the omelet in thirds by folding one side of the omelet over the filling, and then folding the other side over the first side.
  • 5. Transfer the omelet to a plate. Garnish the top of the omelet with sliced black olives and green onion slices.

This is my version of the BMP Omelet that is served at our local Shari's Restaurant. I tapered it down to just 2 eggs for an individual serving, since their 3-egg omelet is a little too filling for me. And sometimes I omit the bacon pieces, and it's just as good. I don't really measure the filling ingredients, but rather just toss in whatever amount I want at the time. But I had to list specific quantities to post this recipe, which are rough estimates. So feel free to adjust the quantities of each ingredient to suit your taste preferences. The system would not accept "Pepper Jack Cheese" as an ingredient (no matter what I did, it changed that ingredient to Monterey Jack cheese). But Pepper Jack really is the variety of Monterey cheese you will want to use in order to get that peppery zing that is the focal point of this omelet. So I had to write that ingredient as cheese, then specify it to be grated Pepper Jack.

Steps:

  • Gather the ingredients.
  • Crack eggs into a medium bowl. Add salt, pepper, and garlic powder, if using. Vigorously beat together with a fork, incorporating as much air as possible. Reserve.

2 ounces (55g) grated cheddar, pepper Jack, or Swiss cheese

One quarter of one medium yellow onion (2 oz; 55g), cut into 1/2-inch dice

Steps:

  • In a medium mixing bowl, season eggs with salt and pepper, then whisk until homogeneous and frothy. Set aside.
  • Meanwhile, add cheese to a medium heatproof mixing bowl. In a 10-inch nonstick skillet, melt 1 tablespoon butter over medium-high heat, swirling, until lightly browned. Add bell pepper and onion, season with salt, and cook, stirring occasionally, until softened and beginning to brown, about 6 minutes. Add ham and cook, stirring occasionally, until vegetables and ham are browned in spots and smell pleasantly smoky, about 5 minutes longer. Stir in smoked paprika and freshly ground black pepper.   • Wipe out skillet and set over medium heat. Add remaining 1 tablespoon butter and cook until melted and lightly browned. Continue pushing in the edges of the eggs and tilting the skillet, working all around the pan, until omelette is almost set, about 45 seconds.
  • Sprinkle ham, vegetables, and cheese over half of omelette, remove from heat, cover, and let omelette sit until mostly or fully cooked through on top (depending on your preferred consistency), about 1 minute.
  • Using silicone spatula, loosen the edges of the omelette from skillet and shake skillet to ensure that it's not stuck. Carefully fold omelette in half to enclose the filling, then slide it onto a serving plate and serve immediately.
