1/2 pound leftover cheese, (any variety, at room temperature)
1/8 cup dry white wine
2 tablespoons unsalted butter, (softened)
1 tablespoon fresh parsley, (basil, thyme, or rosemary)
1/2 teaspoon minced garlic

Steps:

  • Remove any rinds from hard cheeses. Cut cheeses into 1/2-inch cubes.
  • Place cheese, wine, butter, herbs, and garlic in a food processor and blend until smooth, 2 minutes.
  • Serve as-is or refrigerate for at least one hour for a firmer consistency. This can be stored in the refrigerator for up to one week.

8 ounces cream cheese, softened
2 tablespoons unsalted butter, softened
1 small garlic clove, quartered
1/4 teaspoon kosher salt
1/4 cup chopped parsley leaves
1 tablespoon chopped chives
Crackers or toasts (for serving)

Steps:

  • Combine cream cheese, butter, garlic, and salt in the bowl of a food processor. Pulse until smooth. Add parsley and chives and pulse a few times until well combined. Pack mixture into a small bowl, ramekin, or glass jar. Cover and chill at least 30 minutes. Serve with crackers or toasts.
  • Do Ahead
  • Cheese can be made 5 days ahead. Cover and chill.

16 ounces cream cheese, at room temperature

  • In a bowl add butter, sour cream, and cream cheese. Add the garlic and herbs and mix together well. Season, to taste, with salt and pepper. Place in refrigerator and allow to chill.

How to make delicious, soft homemade Cream Cheese using a super-simple method and 3 ingredients you probably already have in your kitchen

8 cups full-fat milk ((whole milk) - best raw or pasteurized, but not UHT)
5 Tbsp lemon juice (or 1 large lemon)
1/2 tsp salt (or more to taste)
pinch of dried herbs (garlic powder, dried chillies, etc)

Steps:

  • Begin by pouring the milk in a saucepan. Heat the milk and bring it to boil over medium-high heat.
  • As soon as it boils, add the lemon juice and then turn off the heat.
  • Set aside for a few minutes while the milk curdles. You'll notice curds forming and a yellow-ish liquid being left behind.
  • Within a few minutes, all of your curds should have formed. Pour the curdled milk through a cheesecloth and a sieve to strain all the liquid whey. Alternatively, you can use a slotted spoon to scoop out all the curdles, while leaving the liquid whey* in the pot.
  • Rinse the curds with cold water. This will help to get rid of any extra whey, clinging to the curds.
  • Squeeze the curdled milk as much as possible to drain any last drop of the liquid whey.
  • Put the strained milk into a food processor/blender and add the salt. Within 1-2 minutes ( this may vary depending on how powerful your machine is) you'll have a light and fluffy cream cheese.
  • If you want to add any additional herbs/flavourings then do that now too. Be warned though as certain additional ingredients will affect the shelf-life of the cheese. I like dried herbs and garlic powder as natural flavourings that don't affect the shelf life too much. Store the cream cheese in an air-tight container in the fridge for up to 7 days. You can freeze cream cheese, but the texture upon thawing is more crumbly and is best used where you're cooking it into something like a dip or sauce.

6 -8 tablespoons butter
8 ounces cheddar cheese, Sharp, Grated
4 ounces romano cheese, Grated
1 teaspoon Worcestershire sauce
1/4 teaspoon garlic powder
1/2 teaspoon paprika

Steps:

  • All the ingredients should be at room temperature before starting this recipe.
  • Whip slowly, in a medium mixing bowl, with the mixer until the mixture is fluffy. I also have mixed it well by hand, but room-temp ingredients are KEY to do that.
  • Spread on bread slices. (Rye, Sourdough or regular French Bread are great.) Toast under the broiler until hot.

If you're a fan of store bought Boursin cheese spread, then you'll love this homemade version. This recipe is for my favorite flavor: garlic and herb. Or switch it up to make combos like chives and basil or shallots and mint. Or take the short short cut: Use Simon & Garfunkel rub and blend it in with a little salt.

8 ounces cream cheese ((you can use low fat))
½ teaspoon garlic powder
⅛ teaspoon Morton Coarse Kosher Salt
¼ teaspoon finely ground black pepper
2 teaspoons fines herbes

Steps:

  • Prep. Let the cheese sit at room temp for about an hour to make it easy to mix. Low fat or spreadable cream cheese are easy to work in 15 minutes or less. Or microwave it for 10 seconds to soften it.
  • Blend in the seasonings with a fork. Let it age in the fridge for 4 hours or more if possible. This allows the oil-soluble flavors in the herbs to be extracted and marry with the cheese.
  • Serve. It is easier to spread on breads and crackers at room temperature. If there is any left over, plop it onto some plastic wrap and roll it into a ball or cylinder with the plastic tight against it and refrigerate. It'll last at least a week.
