SHEET PAN HOLIDAY HAM DINNER

No stove-top cooking is required for this beautiful holiday dinner, complete with glossy marmalade-glazed ham, herby stuffed mushrooms, roasted garlic green beans and buttery rolls. We used bone-in ham steaks, but you could easily swap in boneless. In just one hour, you can have a full and satisfying dinner spread that's easy, elegant and stress-free--perfect for those smaller festive gatherings.

Number Of Ingredients 20

12 ounces green beans, trimmed
3 tablespoons olive oil
3 cloves garlic, grated
Kosher salt and freshly ground black pepper
One 14-ounce package stuffing mushrooms (14 to 16)
1/2 cup Italian-style breadcrumbs
1/4 cup finely grated Parmesan (about 1/2 ounce)
1/4 cup cream cheese (2 ounces), at room temperature
2 tablespoons fresh flat-leaf parsley, chopped
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
Nonstick cooking spray, for the foil
1/3 cup orange marmalade
2 tablespoons fresh orange juice
2 teaspoons cornstarch
1 teaspoon finely chopped fresh rosemary
Freshly ground black pepper
Two 1-pound ham steaks, patted dry
4 frozen dinner rolls
1 tablespoon unsalted butter, melted

Steps:

  • Arrange 2 oven racks in the middle part of the oven and preheat to 375 degrees F.
  • For the green beans: Add the green beans, olive oil, garlic, 1/4 teaspoon salt and a few grinds of pepper to a sheet pan. Toss to coat and spread out evenly. Bake on the upper rack until starting to get tender, about 15 minutes.
  • For the stuffed mushrooms: Meanwhile, pop the stems from the mushrooms and use a measuring spoon to scoop out any remaining stem. Reserve the stems and bits for another use.
  • Combine the breadcrumbs, Parmesan, cream cheese and parsley in a medium bowl. Season with salt and pepper. Divide the filling evenly among the caps.
  • For the ham: Line another sheet pan with foil and spray with nonstick spray.
  • Microwave the marmalade in a microwave-safe bowl until melted, about 45 seconds. Add the orange juice, cornstarch, rosemary, 1/4 teaspoon pepper and 2 tablespoons water and whisk to combine.
  • Arrange the ham on the prepared sheet pan and brush the glaze on both sides of each ham steak.
  • After the green beans have cooked for 15 minutes, remove them from the oven and push them over to the right side of the sheet pan. Add the mushrooms to the left side and drizzle the filling evenly with the olive oil.
  • Place the ham on the upper rack and the green beans and mushrooms on the lower rack. Bake, frequently brushing the ham with the glaze, until the glaze starts to thicken up, about 25 minutes.
  • For the rolls: Remove the green beans and mushrooms from the oven. Push the green beans to the middle of the sheet pan and arrange the dinner rolls on the right side. Brush the rolls with the melted butter.
  • Bake until the dinner rolls are softened, the ham glaze is thickened and glossy, the green beans are tender and the mushroom filling is golden, about another 10 minutes.

This is a recipe I got from my good friend Mabel many years ago. It is lovely served with crisp crackers. I usually make it at least once during the holiday season. It's also a good way to get rid of some of that leftover ham. Plan ahead as it needs to chill overnight. (times do not reflect this)

1 cup minced ham
2 tablespoons prepared mustard
1/4 cup mayonnaise
2 tablespoons Worcestershire sauce
1 tablespoon green relish
2 tablespoons butter

Steps:

  • Mix all ingredients together, except for the butter.
  • Pack into a serving dish, pressing down quite firmly.
  • Melt butter and pour a thin layer over the ham mixture.
  • Refrigerate overnight.
  • Serve with crackers.

Here's a foolproof base recipe and three delicious ways to dress up your holiday ham. Don't forget to save the bone for a fabulous soup! And remember, if you're not feeding a huge crowd, you can easily halve this recipe for a smaller ham.

For the ham:
One 12-14-pound cured and smoked bone-in ham, preferably with a layer of fat
Choose Tangy Peach Mustard:
1 1/2 cups peach preserves
1 cup Dijon mustard (preferably country Dijon)
1/2 cup cider vinegar
1 tablespoon fresh thyme leaves
4 medium shallots, finely chopped (about 1 1/3 cups)
Or choose Sweet and Spicy Jerk:
1 1/2 cups hot pepper jelly
3/4 cup orange juice
3 tablespoons finely grated garlic
3 tablespoons finely grated ginger
3 tablespoons whole allspice, crushed
1 tablespoon cayenne pepper
Or choose Smoky BBQ Maple:
1 cup pure maple syrup
1/4 cup smoked paprika
2 tablespoons ground cinnamon
2 tablespoons ground cumin
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons coarsely ground black pepper
For serving:
Biscuits or soft dinner rolls
Spicy Honey Mustard
Pickles
Special Equipment:
A roasting pan with rack

Steps:

  • Preheat oven to 350°F, with the rack in the lower third of oven. If your ham has a layer of fat, use a sharp paring knife to score the fat in a diamond crosshatch pattern, about 1 inch wide and 1/2 inch deep.
  • For Tangy Peach Mustard Ham or Sweet and Spicy Jerk Ham:
  • In a medium bowl, mix together the glaze ingredients of your choice. Brush all over ham (reserving some glaze for basting while cooking).
  • For Smoky BBQ Ham:
  • Brush the ham with maple syrup (reserving some syrup for basting while cooking). Combine the rest of the ingredients in a medium bowl, then rub all over ham, pressing into syrup to adhere.
  • Position roasting rack in roasting pan; pour 2 cups water into pan and place prepared ham on rack. Cover pan with foil and bake 1 hour. Remove pan from oven, remove foil, and brush ham with reserved glaze or maple syrup. Increase the oven temperature to 400°F.
  • Return ham to oven uncovered. Bake until glaze has caramelized and the ham's internal temp reads 135°F when an instant-read thermometer is inserted in the middle of the ham (avoiding bone), brushing with more glaze or syrup if desired, 40 minutes to 1 hour more.
  • Let rest 10 minutes before carving. Serve with biscuits or rolls, mustard, and pickles.
  • Do Ahead
  • Glazes can be made up to 3 days in advance and refrigerated. Rub (without maple syrup) can be made up to 1 month in advance and kept at room temperature.

1 can (20 ounces) sliced pineapple
1/2 spiral-sliced fully cooked bone-in ham (8 to 10 pounds)
2/3 cup maraschino cherries
1-1/2 cups packed brown sugar
1/2 teaspoon seasoned salt

Steps:

  • Drain pineapple, reserving juice. Place ham on a rack in a shallow roasting pan. Secure pineapple and cherries to ham with toothpicks. Combine brown sugar and seasoned salt; rub over ham. Gently pour pineapple juice over ham., Bake, uncovered, at 325° for 1-1/2 to 2 hours or until a thermometer reads 140° and ham is heated through. Baste frequently with brown sugar mixture.
