Summer Berry Cobbler image

Provided by Tyler Florence

Categories     dessert

Time 1h10m

Yield 6 to 8 servings

Number Of Ingredients 18

1 pint blueberries
1 pint raspberries
1 pint blackberries
1 pint strawberries, hulled and sliced in half
1/2 cup granulated sugar, plus more, for dusting
Pinch cinnamon
2 tablespoons cornstarch
1/2 lemon, juiced
1 recipe Blueberry Scone Dough, recipe follows
Melted butter
2 cups unbleached flour, plus more for rolling berries
1 tablespoon baking powder
1 teaspoon salt
1/3 cup sugar
1/4 cup unsalted butter, chilled and cut in chunks
3/4 cup buttermilk or cream
1 egg
1 pint fresh blueberries

Steps:

  • Preheat oven to 400 degrees F. In a mixing bowl, combine berries with sugar, cinnamon, cornstarch and lemon juice. Stir gently to combine. Spread berry mixture out on a 10-inch tart or gratin dish. Dollop spoonfuls of scone dough evenly over the top of the fruit; leave a border around the edge of the dish for spreading. Drizzle the surface with melted butter and dust with sugar. Set on a cookie sheet and bake for 25 to 35 minutes until the top is golden brown and the fruit juices bubbling.
  • Cool for 15 minutes before serving. Serve with heavy cream, whipped cream or vanilla ice cream.
  • In a large bowl, sift together flour, baking powder, salt and sugar; mix thoroughly. Cut in butter using 2 forks or a pastry blender. The butter pieces should be coated with flour and resemble crumbs.
  • In another bowl, mix buttermilk and egg together, and then add to the flour mixture. Mix just to incorporate, do no overwork the dough.
  • Roll blueberries in flour to coat, this will help prevent the fruit from sinking to the bottom of the scone when baked. Fold the blueberries into batter, being careful not to bruise.

Grate about 2 teaspoons lemon zest into the dish, then squeeze in about 2 tablespoons lemon juice. Toss again. Sprinkle on the black pepper, nutmeg, and cardamom. Toss again. Set aside while you make the topping.
  • Combine the flour, sugar, baking powder, baking soda, and salt in a medium bowl. Cut in the butter in small chunks. Use a fork, pastry cutter, 2 knives, or your fingers to work the butter into the flour until it looks like cornmeal with a chunk or two in it. Stir in the buttermilk. The batter should be loose enough to drop, stir in more buttermilk, 1 tablespoon at a time, if needed.
  • Stir the fruit mixture one more time, then drop the batter in spoonfuls over the top. Sprinkle with the coarse/extra sugar, if using. Set the baking dish on a rimmed baking sheet (to catch drips!). Bake until the biscuit topping is browned and the fruit is bubbling in the center, 50 to 60 minutes.

From ca.news.yahoo.com

  • Cherry Biscuit Cobbler. As far as cherry recipes go, this one isn't exactly a cherry cobbler or a cherry crumble, but once you try the buttery, lemony biscuit topping, there's no going back.
  • Southern "One-Cup" Peach Cobbler. One cup of sugar, one cup of flour, one cup of milk—do the math and you'll find that it adds up to a Southern classic that's gooey on the bottom and cakey on top.
  • Baked Plum Pudding. Bake Italian plums in an eggy, anise-tinged, pancake-like batter for a simple summer dessert. See recipe.
  • Cinnamon-Oat Peach Crisp. With a cinnamon-oat layer that will remind you of the best oatmeal cookies, this easy dessert makes fine use of ripe summer peaches—but you can return to it all year long with pears, apples, or whatever happens to be in season.
  • Mixed Berry Cobbler. This cobbler starts with a mix of fresh berries, so gather every sweet, ripe blueberry, blackberry, raspberry, and strawberry you can find.
  • Skillet Peach Cobbler. This cakelike dessert uses both fresh peaches and peach preserves for unparalleled fruit flavor. See recipe.
  • Plum-Cardamom Crumble with Pistachios. Cardamom, pistachios, and lemon add a vibrant twist to this seasonal, jewel-toned dessert. Crumbles are a great excuse to use up any summer fruits that might be quickly ripening on the counter.
  • Blueberry-Drop Biscuit Cobbler. When blueberries are at their best (and most abundant), let their flavor shine in simple recipes. This blueberry cobbler can be assembled in minutes, and its ragged topping is both tender and crunchy.
  • Cherry Buttermilk Clafoutis. Everyone who eats fruit should know how to make clafoutis. The degree of difficulty is low and the versatility (it works with almost any fruit) is high.
  • Spiced Blueberry Grunt. Grunts get their name from the fact that the fruit, which is topped with dumplings and cooked on the stove in a covered skillet, can make a grunting sound as the dessert steams.
