Steps:
- In a large skillet over medium-high heat, brown the sausage. If desired, drain the fat.
- Add the onions and mushrooms and cook until tender, then set aside in a separate bowl.
- In the same skillet, add the oil and hash browns over medium-high heat and cook until golden brown on 1 side. Once golden brown, add the eggs, sausage and the mushroom mixture. Scramble together until desired consistency and top with the Cheddar.
- Cover with a lid until the cheese melts and serve.
HOBO HASH (OAMC)
This is a quick and easy dish to prepare and is one of the great comfort foods. I've had the recipe so long I don't remember where I got it. I freeze the leftovers one cup at a time in sandwich size zip lock bags and then collect the small bags into a dated and labeled gallon zip lock bag. Thaw, heat, and serve with a garden salad, a baguette, and a nice chianti.

HOBO CASSEROLE
I adopted this recipe and found it to be the perfect comfort food on a "I really don't want to bother cooking" kind of day. It used basic ingredients that are always in my pantry and freezer, and couldn't be more simple to prepare. It isn't a pretty dish, but it is hearty and filling.

Steps:
- Preheat oven to 350°F.
- Pat ground beef into 8x8 pan and sprinkle with salt and pepper.
- If using, slice onion on top of beef.
- Slice potatoes onto onion layer, salt and pepper.
- Layer with cheese slices.
- Mix soup and milk together and spread over cheese.
- Cover with aluminum foil and bake for 1-1 1/5 or until potatoes are tender.
- Remove foil and top with french fried onions and brown for about 5 minutes.
- Enjoy!

HOBO'S
These were a regular in our rotation when I was growing up. The first time we made these, my grandpa commented that he didn't know of any hobo that would eat so well.

Steps:
- Make 4 patties out of ground chuck.
- Place patty in the middle of a piece of aluminum foil. (make foil big enough to come back up to the middle of the patty and to go around the veggies).
- Sprinkle with garlic salt or garlic powder and pepper.
- Stack veggies on top of burger patty, starting with potatoes.
- Follow by onion slices.
- Follow with carrots and green beans.
- Pull foil up to middle and gather at the top and twist closed. (try to make sure no areas are open on the side for easier clean-up).
- Place in 375°F oven on cookie sheet or directly on oven racks if you are certain, all areas are closed up for 1 hour or until patties are cooked through.
- Once cooked, open foil packet and sprinkle cheese on top.
- Leaving foil packet open, place back in oven long enough to just melt the cheese.
- No need for sides, the whole meal is in the packet!
- Can be cooked on the BBQ grill or campfire also.
HOBO BREAKFAST CASSEROLE
I love making this when there is a large family gathering. Instead of many pots & pans it only takes 2. Possibly 3 if you want to smother it in peppered cream gravy! You can make this in a large skillet but I prefer a griddle, easier to turn when it's time. As far as meats or vegetables go its made with what you like & the amount is up to you! - oil griddle & get hot,.
- put enough hash browns down to cover griddle. As hash browns are getting golden crisp I then place on top of browns my cooked meat & vegetables then my beaten eggs, place a lid over it until egg is set.
- cut into serving size squares and flip, place lid back on & cook until egg is cooked all the way through.
- Top with cheese until melted. We enjoy this served up with peppered cream gravy.
- variation= with vegetables add green chili's & when done serve it with your favorite salsa.

BREAKFAST FOIL PACKS WITH HASH BROWN POTATOES, SAUSAGE, AND SCALLIONS
These make-ahead packet meals are perfect for camping trips as well as quick and easy breakfasts on the go. Shredded potatoes and flavorful sausage are topped with baked eggs and spinach for a hearty morning meal.

- Cut 12 (12x16") pieces of heavy-duty foil. Layer 2 pieces of foil on top of each other to create 6 stacks. Line top pieces of foil with parchment paper cut to the same size.
- Toss scallions, potatoes, sausage, oil, salt, and pepper in a large bowl. Divide mixture among prepared packs, arranging in the center of each piece of parchment. Bring edges of foil together to enclose each pack, covering completely, then crimp to seal packs closed.
- Prepare a campfire or grill for medium, indirect heat, preferably with hardwood or hardwood charcoal. Let coals burn until covered with ash and glowing red with no black remaining.
- Place packs side by side directly onto hot coals or grill and cook, rotating with tongs occasionally, about 5 minutes. Carefully remove 1 pack from heat and check if ingredients are steaming hot. If necessary, return pack to coals and continue to cook, 5-10 minutes more.
- Transfer packs with tongs to a flat surface and carefully open them (they will be full of hot steam). Top each pack with spinach, then crack 1 egg into the center of each and season with salt and pepper. Reseal, return to coals, and cook until egg whites are opaque but yolks are still runny, 4-5 minutes.
- Carefully remove packs from coals, open, and sprinkle with cheddar, if using. Serve immediately.

- Packs can be assembled and chilled for up to 2 days or frozen for up to 1 month.
- Cooks' Note
- Packs can be prepared in an oven. Preheat to 450°F and place packs on rimmed baking sheets. Bake until steaming hot, about 15 minutes if packs were refrigerated and about 30 minutes if baking frozen packs (no need to defrost). Carefully open packs (they will be full of hot steam), top each pack with spinach, crack 1 egg into the center of each, season with salt and pepper, and reseal. Return to oven and cook until egg whites are opaque but yolks are still runny, 4-5 minutes more. Top with cheddar, if using. Serve immediately.
