This high-altitude lemon cake is delicious with fresh strawberry frosting. (I use Paula Deen's recipe for that!)

2 ¾ cups cake flour
1 tablespoon lemon zest
3 teaspoons baking powder
¾ teaspoon salt
4 egg whites
1 ⅓ cups white sugar, divided
¾ cup butter, at room temperature
1 ½ cups milk
¼ cup lemon juice
2 teaspoons lemon extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease and flour two 9-inch round cake pans.
  • Mix together cake flour, lemon zest, baking powder, and salt.
  • Beat egg whites in a glass, metal, or ceramic bowl until foamy. Gradually add 1/3 cup sugar, continuing to beat until soft peaks form.
  • Cream butter and 1 cup sugar in a large bowl with an electric mixer. Add the flour mixture in batches, alternating with milk and lemon juice, beating batter briefly after each addition. Add lemon extract and egg whites; beat to incorporate into batter. Pour into the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes. Let cool completely on wire racks before frosting.

CAKE:
1 cup cake flour (not self-rising), sifted
3/4 cup confectioners' sugar
14 egg whites, at room temperature
1 1/2 teaspoons cream of tartar
1/4 teaspoon salt
3/4 cup granulated sugar
2 teaspoons pure vanilla extract
1 teaspoon pure lemon oil
LEMON GLAZE:
1 cup confectioners' sugar
2 tablespoons fresh lemon juice
1 1/2 teaspoons grated lemon zest
pinch salt

Steps:

  • 1. Preheat the oven to 375°F. Place an oven rack in the center of the oven. Have ready an ungreased 10-inch tube pan.2. Sift the flour and the confectioners' sugar together into a medium bowl.3. Beat the egg whites with an electric mixer on medium speed in a large bowl until foamy. Increase the speed to medium-high, add the cream of tartar and salt, and beat just until the egg whites form soft peaks. Add the granulated sugar, about 1 tablespoon at a time, beating well after each addition, and beat just until the whites form stiff, glossy peaks. Add the vanilla and lemon oil and beat until well combined.4. Sift one-fourth of the flour mixture over the egg whites and fold in with a whisk or a rubber spatula. Continue gently folding, one quarter at a time, until all the flour mixture has been added, being careful not to overmix.5. Transfer the batter to the pan. Run a table knife through the batter to remove any large air pockets, and smooth the top with a rubber spatula. Bake for 35 to 40 minutes, until the top is golden brown and the cake pulls away from the side of the pan. Turn the pan upside down, and balance it on its elongated neck or pan legs (it if has them), or hang the tube upside down from the neck of a tall bottle. Let cool to room temperature.6. Turn the pan right side up. Run a knife around the outside edge of the cake and between the cake and the tube. Top the cake with a flat plate, invert it, give a sharp downward rap to the pan to dislodge the cake, and lift off the pan. If the pan bottom is removable, slide a knife between the pan bottom and the cake to release it.7. TO MAKE THE GLAZE: Stir the ingredients together in a small bowl. Let stand for 10 minutes before using. Pour it over the cake and let stand for at least 10 minutes, or until the glaze is set.8. Use a sharp serrated knife to cut the cake into wedges. TO MAKE AHEAD: Let cool completely, wrap tightly, and store at room temperature for up to 3 days, or freeze in a self-sealing freezer bag for up to 2 weeks.From From Our House To Yours. At higher altitudes, cakes are more sensitive to slight changes; therefore, it is important to carefully follow the directions given for each recipe. Be sure that measurements are exact and especially note the addition or subtraction of amounts by tablespoons from cups of flour or liquid. Always use measuring spoons or cups when definite amounts of ingredients are specified. When measuring flour and baking powder, do not pack them, but spoon lightly and level off. Always sift flour before measuring. Brown sugar and shortening should be packed into the cup or spoon to give accurate measurements. Shortening should be at room temperature for best results. This recipe is mainly for 5000 to 7500 feet in elevation. For higher elevations, make these adjustments: Plain Chiffon: Reduce baking powder to l tsp. Orange Chiffon: Reduce baking powder to 3/4 tsp. 2 1/2 cups sifted cake flour (all-purpose flour will not yield as fine or light a product)
1 1/2 cups sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup cooking oil (room temperature)
4 egg yolks, unbeaten (refrigerator temperature)
3/4 cup cold water
2 teaspoons vanilla extract
1 cup egg white (6-7 extra large)
1/2 teaspoon cream of tartar

Steps:

  • Preheat oven to 350F (these directions are for 5000 - 7500 feet elevation).
  • Mix and sift flour, sugar, baking powder, and salt into mixer bowl.
  • Make a well in center and add oil, egg yolks, water, and vanilla.
  • Mix 1 minute on low speed of upright mixer or medium speed of portable mixer, scraping frequently.
  • Place egg whites and cream of tartar in another mixer bowl.
  • Using clean beaters, beat to stiff peaks but not dry.
  • Add beaten eggs whites to batter by thirds.
  • With a rubber spatula, fold 15 strokes after the first and second addition and 25 strokes after the third.
  • Pour batter into an ungreased, 10-inch tube pan.
  • Bake at 350° for 55-65 minutes or until done.
  • Remove from oven and cool in inverted pan.
  • **Lemon Chiffon Cake: In place of the 3/4 cup cold water, substitute 1/2 cup plus 2 Tbsp cold water and 2 Tbsp strained lemon juice. Omit vanilla and add l Tbsp grated lemon rind.
  • **Orange Chiffon Cake: In place of the 3/4 cup cold water, substitute 1/2 cup cold water and 1/4 cup strained orange juice. Omit vanilla and add l Tbsp grated orange rind.
  • **Pineapple Chiffon Cake: In place of the 3/4 cup cold water, substitute 3/4 cup cold, unsweetened pineapple juice.

A high altitude version of a wonderful, rich flavored plum cake. Goes wonderfully with vanilla ice cream.

4 ounces butter, softened
1/3 cup caster sugar (ultrafine)
1 teaspoon vanilla
1 large egg, plus
2 tablespoons eggs
1 tablespoon sour cream
1 pinch salt
1/2 teaspoon grated lemon zest
1 3/4 cups plain flour, plus
2 tablespoons plain flour
1/2 teaspoon baking powder
2 cups plums, pitted and sliced into wedges
6 tablespoons cold butter, cut into bits
3/4 cup flour
1/3 cup caster sugar (ultrafine)
1/2 teaspoon cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon freshly ground nutmeg

Steps:

  • Put the plums on a bowl and sprinkle sugar on them. Leave them to sit while preparing the rest of the ingredients. Pre-heat the oven to 400 degrees. Lightly butter a 9 inch cake tin with a removeable bottom (I used a springform pan) Line with baking paper, butter the paper, and set aside.
  • Cream together the butter and sugar until light and fluffy. Beat in the egg, lemon zest, vanilla, and sour cream. Whisk the flour, salt and baking powder together in a separate bowl and then add it to the wet ingredients, mixing it in well. Spread this batter in the bottom of the cake tin. (This batter is pretty thick, and the paper will slide around, so I held it down on one edge and spread it out with my fingers.).
  • Spread the plums over top of the batter in a circular pattern to within 1/2 inch of the edges.
  • To make the streusel, whisk together the sugar, flour and spices. Cut into the butter until the mixture is crumbly. I use a pastry cutter but a fork will work. Sprinkle the crumbs evenly over top of the plums. Use all the streusel.
  • Bake on a middle rack for approximately 35-50 minutes until the streusel is golden brown. Remove from the oven and let sit for about 15 minutes on a wire rack, before you remove the sides of the pan and the paper. Serve warm, with whipped cream or ice cream.

1/2 cup vegetable oil
8 eggs, separated
1/4 cup plus 2 tablespoons fresh lemon juice
1/4 cup water
2 1/2 tablespoons grated lemon peel
1/2 teaspoon cream of tarter
Powdered sugar

Steps:

  • Preheat oven to 325°F. Sift flour, sugar, baking powder and salt into large bowl. Using electric mixer at low speed, beat in vegetable oil, egg yolks, lemon juice, water and lemon peel. Combine egg whites and cream of tartar in another large bowl. Using clean dry beaters, beat until stiff but not dry. Fold 1/4 of whites into batter to lighten. Gently fold in remaining whites.
  • Pour cake batter into ungreased 10-inch-diameter tube pan. Tap pan on counter or run rubber spatula through cake batter to release air pockets. Bake cake until springy to touch, about 1 1/4 hours. Immediately invert cake in pan over neck of bottle. Cool cake completely. Run knife around pan sides to loosen cake. Transfer cake to plate. Dust with powdered sugar.

1 ⅓ cups sifted cake flour
1 ⅛ cups white sugar
1 ½ cups egg whites
1 ¼ teaspoons cream of tartar
¾ teaspoon salt
1 teaspoon vanilla extract
½ teaspoon lemon extract

Steps:

  • Preheat the oven to 330 degrees F (165 degrees C).
  • In a large glass or metal bowl, whip egg whites with cream of tartar and salt until soft peaks form. Gradually sprinkle in the sugar while continuing to whip to medium peaks. Since this is a high-altitude recipe, whip them only until they form a peak that falls over. Stir in the vanilla and lemon extracts. Use a rubber spatula to fold in flour a fourth at a time. Spoon into a clean and dry 9 inch tube pan.
  • Bake for 25 minutes in the preheated oven, then increase the temperature to 375 degrees F (190 degrees C). Continue baking for another 3 minutes, or until the cake begins to shrink down a bit. Invert pan over a wire rack to cool. When cool, run a thin spatula or knife around the outer edge, and tap out firmly.
