Chicken Paillards With Herb-Tomato Salad image

Provided by Food Network Kitchen

Time 15m

Yield 4 servings

Number Of Ingredients 11

2 ripe medium tomatoes (1 red and 1 yellow), cored and roughly chopped (about 1 1/2 cups)
1 clove garlic, peeled and smashed
1 scallion (white and green parts), thinly sliced
3 tablespoons extra-virgin olive oil, plus additional for brushing
2 teaspoons red wine vinegar
2 teaspoons kosher salt, plus additional for seasoning
Freshly ground black pepper
1/3 cup torn fresh basil
3 tablespoons roughly chopped fresh tarragon
3 tablespoons roughly chopped fresh flat-leaf parsley
4 chicken paillards, about 6 ounces each (see chef's note, below)

Steps:

  • Prepare an outdoor grill with a hot fire.
  • Toss the tomatoes, garlic, scallion, the 3 tablespoons olive oil, vinegar, the 2 teaspoons salt, and black pepper to taste in a medium bowl. Add all the herbs to the bowl but don't toss.
  • Brush the chicken paillards lightly with olive oil and season with salt and black pepper to taste. Grill the chicken, turning once, until cooked through, about 2 minutes per side. Stir the herbs into the tomatoes. Put a paillard on each of 4 plates, spoon some herb-tomato salad on top (watch out for the smashed garlic-you might want to remove it), and serve.

Categories     main-dish

Time 8h40m

Yield 4 servings

Number Of Ingredients 15

1 cup fresh ricotta
1/2 cup grated Parmigiano-Reggiano
8 to 10 fresh sage leaves, very thinly sliced
Splash of milk or half-and-half
Kosher salt
4 boneless, skinless chicken breast halves
Freshly ground pepper
8 slices prosciutto di Parma
EVOO, for drizzling
3 tablespoons butter
3 cloves garlic, finely chopped
1 cup panko
1 tablespoon fresh thyme leaves, chopped
A few handfuls arugula (1 bunch), stemmed
4 plum tomatoes, thinly sliced lengthwise

Steps:

  • Combine the ricotta, 1/4 cup Parmigiano-Reggiano, sage and milk and season with salt.
  • Butterfly each chicken breast, cutting horizontally into the thickest part of the breast almost all the way through to the other side (keeping the breast attached on one side). Open each breast like a book and pound to 1/8 to 1/4-inch thick using the flat side of a meat mallet. Sprinkle the chicken with salt and pepper. Place a spoonful of the ricotta mixture in the center of each chicken breasts, then fold the chicken over to enclose the filling. • Unwrap the chicken breasts and place on a rimmed baking sheet or shallow baking dish. Drizzle with EVOO, then bake until the chicken is cooked through and the prosciutto is crisp, 20 to 25 minutes.
  • While the chicken bakes, heat the butter in a small skillet over medium heat. Add the garlic and cook, stirring, for 2 minutes. Add the panko and thyme and cook, stirring, until the panko is golden. Remove from the heat and stir in the remaining 1/4 cup Parmigiano-Reggiano.
  • Divide the chicken among plates. Arrange the arugula alongside the chicken and top the arugula with the tomatoes and garlic breadcrumbs.
  • Cook's Note: The stuffed chicken breasts can be refrigerated for up to 2 days before cooking.

PARMESAN CHICKEN BREAST WITH TOMATO AND HERB SALAD

Parmesan Chicken Breast With Tomato and Herb Salad image

For better weeknight chicken, dredge it in flour loaded with freshly grated Parmesan and shallow-fry it. The cheese works to create a sort of frico, so you don't need bread crumbs for a deeply flavorful crust. While you could make this entirely on the stovetop, you risk overcooking the Parmesan, and under- or overcooking the meat. Instead, finish it in the oven, which yields a juicy, tender breast and keeps the Parmesan from getting too dark. Serve with perfectly ripe beefsteak and cherry tomatoes, jumbled together with salt and herbs and a splash of vinegar to make the tomatoes pop.

Provided by Sarah Copeland

Categories     dinner, weekday, poultry, main course

Time 40m

Yield 4 servings

Number Of Ingredients 12

1 1/2 pounds ripe beefsteak or heirloom tomatoes, cut into wedges (or halved if small)
1 pint cherry tomatoes, halved
1 tablespoon sherry or cider vinegar
1 teaspoon kosher salt, plus for seasoning
1/4 teaspoon black pepper, plus more for seasoning
6 ounces Parmesan
1 cup flour
2 large eggs, well beaten
4 skinless, boneless chicken breast, halved (about 1/2-inch thick)
3 tablespoons canola or grapeseed oil
2 tablespoons thinly sliced basil
1/4 cup finely chopped parsley

Steps:

  • Toss together tomatoes, vinegar, salt and pepper in a bowl, and set aside. Heat the oven to 425 degrees with a rack in the lowest position.
  • Make the chicken: Line a baking sheet with parchment paper. Finely grate half the Parmesan on a box grater. Grate the remaining half on the larger side of the box grater. Add both to a shallow bowl along with 1/2 cup flour, and whisk together. Put the remaining 1/2 cup flour in another shallow bowl, and the beaten egg in another.
  • Season the chicken generously with salt and pepper. Dip the chicken breasts, one at a time, into the flour. Shake off any excess and dip into the eggs, turning to coat evenly. Shake off the excess and dip into the Parmesan mixture, pressing to adhere and holding the chicken gently by the ends to keep the coating intact. Transfer to the lined baking sheet.
  • Heat 2 tablespoons oil in your largest ovenproof skillet. When the oil is shimmering, lay the chicken breasts in the pan, in batches if needed. Cook without moving until the coating on the bottom is deeply golden brown and releases easily from the pan, 5 to 6 minutes. Carefully flip the breasts and cook until the other side is just golden on the outside, about 3 minutes more. Transfer the skillet to the oven (or transfer the chicken to a separate baking sheet if needed for space) and cook until the juices run clear and an instant-read thermometer inserted into the thickest part of the chicken registers 165 degrees, 4 to 6 minutes more, depending on the thickness of each breast.
  • Sprinkle the herbs over the tomatoes, and drizzle with the remaining 1 tablespoon oil; serve alongside the chicken.

Number Of Ingredients 14

4 whole chicken breasts
1 avocado, Sliced
8 sun-dried tomatoes (in olive oil)

8 slices prosciutto ham (These are to wrap around the breast. I always say 8 slices to allow for 2 per breast. Last night I c)
1 cup milk
1 teaspoon condensed chicken broth (powder, cube, paste etc.. My stock is quite dense, so you may have to adjust for taste depending on )

1/2 cup cream
1 tablespoon fresh parsley, chopped finely

(quarter of cheese per breast). Fold breast over to cover, Wrap two slices of Prosciutto around each breast.
