1 cup uncooked quick-cooking oats
1/3 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
2 tart cooking apples, cored,peeled,and chopped

Steps:

  • Preheat oven to 400 degrees F.
  • Grease a 12 cup muffin tin.
  • In a mixing bowl, lightly beat eggs; add milk and oil, stirring until just blended.
  • Stir in flour, oats, sugar, baking powder, salt, nutmeg, and cinnamon, mixing until only just moistened (do not overmix).
  • Gently fold in the apples.
  • Spoon batter into the muffin tin, dividing evenly among the cups.
  • Bake in a preheated oven for 15-20 minutes or until a toothpick inserted comes out clean.
  • Cool in pan 5 minutes before removing to a wire rack to finish cooling.

Steps:

  • Heat the oven to 375 degrees. Spray 12 regular muffin cups with non-stick cooking spray.
  • In a large bowl, mix the flours, 1/2 cup oats, baking powder, cinnamon and salt. Set aside.
  • In a food processor or blender, process the cottage cheese for 20 to 30 seconds or until smooth.
  • Add the eggs and brown sugar. Cover and process for 20 seconds or until smooth. Add the oil and milk; process for 10 seconds or until mixed.
  • Pour the wet ingredients over the dry ingredients. Mix just until moistened. Fold in the apple.
  • Fill the muffin cups almost full. Sprinkle the tops with the remaining 2 tablespoons oats.
  • Bake for 25 to 30 minutes or until golden brown and a toothpick inserted in the center comes out clean. Cool in the pan for 5 minutes. Then remove the muffins from the pan. Cool for 5 more minutes before serving.

2 tablespoons all-purpose flour

½ cup buttermilk
½ cup oil
2 large eggs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin tin cups with cupcake papers.
  • Mix brown sugar, all-purpose flour, and cinnamon together in a small bowl for crumb topping. Add butter and press with the back of a spoon or your fingers to incorporate it into the sugar mixture. Mix until crumbly and set aside.

⅓ cup honey
2 teaspoons vanilla extract
2 ½ cups rolled oats
2 teaspoons baking powder
1 pinch salt
1 tablespoon ground cinnamon
1 cup almond milk
¼ cup blueberry, as desired
¾ cup dried cranberries, as desired
sliced almond, as desired
rasberry, as desired

Steps:

  • Peel the skin from the apples and grate on the coarse side of a cheese grater. Set aside. (To prevent browning, place grated apples in a bowl and cover with lemon juice and water. Drain before adding to the batter.)
  • Preheat oven to 350°F/180°C.
  • In a large bowl, beat the eggs with a whisk until foamy and pale.
  • Add the greek yogurt, honey, and vanilla, to the bowl and whisk until the mixture is thick and well combined.
  • Sprinkle on the rolled oats, baking powder, salt, cinnamon, and the grated apple.
  • Use a spatula to fold the wet and dry ingredients together.
  • Pour in the almond milk and continue mixing until everything is well incorporated.

3 apples (Cox or Pippin work well) peeled and cubed
50ml rapeseed oil
2 large eggs
150ml fat-free yogurt
3 tbsp light brown soft sugar
200g wholemeal self-raising flour
90g porridge oats
1½ tsp baking powder
1½ tsp bicarbonate of soda
1 tsp mixed spice
½ tsp cinnamon

Steps:

  • Put 2 of the chopped apples in a pan with 50ml water. Simmer over a low heat, covered, for 10-12 mins, until the apples are softened and collapsing. Set aside to cool a little, then tip into a small food processor and whizz to a purée.
  • Heat the oven to 180C/160C fan/gas 4. Line a muffin tray with 12 paper cases.
  • In a bowl whisk the oil, eggs, yogurt, sugar and apple purée. In a separate bowl, combine the flour, 70g of the oats, baking powder, bicarb, mixed spice, cinnamon and ¼ tsp salt. Make a well in the centre, then stir in the wet ingredients until you have a smooth batter, stir in the remaining chopped apple, then divide into the 12 cases. Sprinkle each one with the remaining oats. Bake for 25-30 mins until firm and springy. Leave to cool before serving.
