This is a rich dip, and easy to make! Serve with water crackers, as you want to taste all the goodies in the dip. A good variation from the same old artichoke dip.

1 (14.25 ounce) can hearts of palm, drained and chopped
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 cup chopped green onion
¼ cup sour cream
¾ cup mayonnaise

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a glass pie plate.
  • In a medium bowl, mix together the hearts of palm, mozzarella cheese, Parmesan cheese, green onion, sour cream and mayonnaise. Spread into the greased pie plate.
  • Bake uncovered for 20 minutes, or until light brown and bubbly. Serve with crackers or Melba rounds.

Our chopped challenge this week was hearts of palm. Instead of adding it to a salad, we paired it with a hearty, savory tomato sauce, where it took on pasta's best characteristics. Chopped Basket Ingredient: Hearts of Palm

Number Of Ingredients 12

Three 14-ounce cans whole hearts of palm, drained
Kosher salt
1/2 cup extra-virgin olive oil
1 large yellow onion, 1/4-inch dice
6 cloves garlic, minced
One 28-ounce can crushed tomatoes
One 14-ounce can diced tomatoes
Pinch crushed red pepper flakes
1 1/2 teaspoons fish sauce, optional
1 1/4 cups finely grated Parmesan (about 3 ounces)
Hand-torn fresh basil leaves, for garnish
1 1/2 cups quick-cooking polenta, cooked according to the package directions, warm

Steps:

  • Preheat the oven to 425 degrees F with a rack set on the middle shelf. Place the hearts of palm onto several layers of paper towels to absorb any excess liquid. Season lightly with salt.
  • Heat 2 tablespoons of the oil in a large high-sided skillet over medium to medium-high heat until it just starts to shimmer. Sear the hearts of palm until golden brown on both sides, 2 to 4 minutes total. You may need to do this in two batches to avoid crowding the skillet. Transfer to a baking sheet or large plate. Discard the used oil and wipe out the skillet.
  • Add the remaining oil to the same skillet over medium-high heat. Add the onions and 1/2 teaspoon salt and cook until softened and lightly browned, stirring occasionally, 6 to 8 minutes. Add the garlic and cook until just softened, stirring constantly, about 1 minute. Stir in the crushed tomatoes, diced tomatoes, red pepper flakes, 1/2 teaspoon salt and fish sauce if using. Bring to a boil, and then reduce to a simmer. Simmer, uncovered, for 15 minutes.
  • Season with additional salt if needed. Carefully pour the sauce into a 13- by 9-inch baking dish. Add the browned hearts of palm to the sauce in a single layer and sprinkle all over with the grated cheese. Bake until the cheese is lightly golden brown, about 10 minutes. Allow to sit at room temperature for 5 minutes before serving. Top with the basil.
  • To serve, divide the warm polenta among 6 bowls and top with the hearts of palm and tomato sauce.

HOT ARTICHOKE/HEARTS OF PALM DIP



Hot Artichoke/Hearts of Palm Dip image

This is my evolution of the basic Artichoke Dip recipe. Add to, or delete, as it suits your taste. The can sizes for the artichoke & hearts of palm are correct. As I don't have any green chiles or water chestnuts in my cabinet at the moment, I'm guessing on the size although I've never seen either in but the one small size.The amount of mayo & cheese is also a guess as I've never really measured. Just dumped it in and baked. I would start off with little, and add (equal measures of mayo & cheese) until it has a nice, creamy consistency. Add as much cheese on top as you like. Great for any type of get-together.

1 (4 ounce) can diced green chilies, drained
1 (6 ounce) can water chestnuts, drained, chopped

1 -2 garlic clove, roasted

Steps:

  • Mix roasted garlic with mayo. Finely chopped fresh garlic can be substituted.
  • Mix mayo with remaining ingredients (saving 1/4 cup of cheese) in baking dish.
  • Top with remaining cheese.
  • Bake at 375 for appx 20 - 30 minutes.
  • Serve with crackers, cracked black pepper crackers go really, really well with this.

1 (10 ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
1 (8 ounce) package fat free cream cheese, softened
1 (6 1/2 ounce) container light spreadable cheese with garlic and herbs (such as Alouette Light)
22 (6 inch) corn tortillas, each cut into 8 wedges
cooking spray
salt, to taste

Steps:

  • Preheat oven to 375°.
  • To prepare chips, arrange tortilla wedges in a single layer on baking sheets coated with cooking spray.
  • Lightly coat wedges with cooking spray; sprinkle evenly with salt (be generous).
  • Bake at 375° for 15 minutes or until wedges are crisp and lightly browned. I flip them about halfway through.
  • Sprinkle with salt again to taste after done.
  • Increase oven temperature to 350° (or just start here if you're not making chips).
  • To prepare dip, combine mozzarella, 1/4 cup Asiago, sour cream, and remaining ingredients, stirring until well blended.

1 (14 1/4 ounce) can hearts of palm, drained and chopped small
1 garlic clove, minced (I like to add a whole head of roasted garlic)
1 cup shredded lowfat mozzarella cheese
1/2 cup grated parmesan cheese
1/2 cup chopped green onion (more or less to taste)
1/4 cup light sour cream
3/4 cup mayonnaise (use light mayo if you like)

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a glass pie plate.
  • In a medium bowl, mix together the hearts of palm, garlic, mozzarella cheese, Parmesan cheese, green onion, sour cream and mayonnaise. If you prefer, this can be pureed in a food processor.
  • Spread into the greased pie plate.

2 (14 ounce) cans hearts of palm, in brine,drained
4 cloves garlic, smashed
1/3 cup extra virgin olive oil (or as needed)
1/2 cup chopped green onion, white parts only
salt and pepper

Steps:

  • Put your garlic in your food processor and process until smooth.
  • Add hearts of palm process until they are like a rough puree.
  • Slowly, in a thin drizzle, pour in oil (with the motor running) until the mixture has a fluffy, velvet consistency.
  • Season to taste.
  • Stir in the green onions just before serving.
  • Serv e within a few hours of processing.

  • Chop the heart of palm into large chunks. I like to make these chunks various different shapes to mimic the look of lobster pieces.
  • Add the vegan butter, garlic to a small bowl. Microwave in 20 second increments until melted. Pour half of the melted garlic butter into a large frying pan and add two tablespoons of water to the pan with the butter. Pour the remaining half of melted garlic butter into a small dish and mix in 1 tablespoon of lemon juice. Set this aside, this will be used for dipping.
  • Heat the pan with the butter and water and add the heart of palm chunks. Lightly simmer for about 5 minutes until the heart of palm is heated through. Sprinkle the paprika and salt over the heart of palm and gently stir to incorporate the paprika. I like to only partially mix in the paprika so that some pieces have more paprika than others to make it look more like lobster. Serve the heart of palm hot, with the lemon butter on the side, and garnished with parsley and lemon wedges.
