1-1/2 cups water
1-1/2 cups chunky salsa
2 cups uncooked instant rice
1 to 1-1/2 cups shredded Colby-Monterey Jack cheese

Steps:

  • In a saucepan, bring water and salsa to a boil. Stir in rice. Remove from the heat; cover and let stand for 5 minutes. Stir in cheese; cover and let stand for 30 seconds or until cheese is melted.

Tasty salsa is easy using Ball® Fiesta Salsa Mix and either fresh or canned tomatoes.

4 ½ cups finely diced fresh tomatoes
3 tablespoons white vinegar (5% acidity)
¼ cup Ball® Fiesta Salsa Mix - MIX WELL BEFORE MEASURING
2 each Ball® or Kerr® Pint (16 oz) Jars with lids and bands

Steps:

  • Prepare canner, jars, and lids according to manufacturer's instructions.
  • Combine tomatoes, vinegar, and Ball® Fiesta Salsa Mix in large saucepan.
  • Heat to a boil. Reduce heat and simmer 5 minutes.
  • Ladle hot salsa into jars leaving 1/2 inch headspace. Remove air bubbles. Wipe rims. Center lids on jars. Apply bands and adjust to fingertip tight.
  • Process in boiling water canner for 35 minutes, adjusting for altitude.

1 lb boneless chicken breast, cubed
1 can cheddar cheese soup
1/2 cup chunky salsa or 1/2 cup picante sauce
10 8-inch flour tortillas
1 can Campbell's condensed chicken broth
1/2 cup water
1/2 cup chunky salsa
2 cups MINUTE White Rice, uncooked

Steps:

  • Preheat oven to 425°F.
  • In medium nonstick skillet over medium-heat, cook chicken 5 minutes or until no longer pink and juices evaporate, stirring often.
  • Add soup and salsa.
  • Heat to a boil, stirring occasionally.
  • Place tortillas on 2 baking sheets.
  • Top half of each tortilla with about 1/3 cup soup mixture.
  • Spread to within 1/2 inch of edge.
  • Moisten edges of tortilla with water.
  • Fold over and press edges together.
  • Bake 5 min.
  • or until hot.
  • Serve with Fiesta Rice.
  • Fiesta Rice: In saucepan heat broth, water and salsa to a boil.
  • Stir in rice.
  • Cover and remove from heat.
  • Let stand 5 min.
  • Fluff with fork.

Make this tasty Mexican rice to serve a crowd. Our recipe is vegan but if everyone you're cooking for eats meat, some chopped bacon in with the onions works well

Number Of Ingredients 10

2 tbsp olive oil
1 onion , finely chopped
2 peppers (choose your favourite colours), finely chopped
4 garlic cloves , very finely chopped or crushed
1 tsp cumin seeds or ½ tsp ground cumin
1 tbsp tomato purée
small pinch of sweet smoked paprika
250g basmati rice
450ml hot vegetable stock (make sure it's vegan-friendly)
finely chopped coriander and sliced spring onions, to serve

Steps:

  • Heat the oil in a large saucepan with a lid, then add the onion, pepper, garlic and cumin and sizzle gently for 8-10 mins until the vegetables are soft and golden. Stir in the tomato purée and smoked paprika and cook for 1 min, then stir in the rice.
  • Pour over the stock, then cover and bring to the boil. Stir quickly, then cover again and place on the lowest heat possible. Simmer for 10 mins. Turn off the heat and leave, covered, for a further 10 mins. If serving straightaway, stir through the coriander and spring onions; alternatively, leave the rice to cool, chill, then re-fry before serving and stir the coriander and spring onions through at the end.

  • After adding olive oil to the pan, add the frozen corn, peas and bell pepper with salt, pepper, cumin and chili powder. Cook for 10 minutes over medium heat. Then add the can of beans and cooked rice to the pan. Squeeze half a lime over the pan, then mix everything together. Taste and adjust flavors (maybe add more salt, more chili etc).
  • Divide the mixture between three meal prep containers. Garnish with extra lime wedges from the remaining half of a lime and cilantro if desired. That's it!
