HEALTHY SOUL FOOD GREENS GET BIG FLAVOR FROM JUST A BIT OF BACON

- In a nonstick skillet, cook bacon over medium-high heat
- Once the fat begins to render, lower the heat to medium and add the garlic and onion
- Cook, stirring, until the onion turns brown and is somewhat translucent
- Add the collard greens and chard, stirring so they wilt
- After about 3 minutes, make a well in the skillet and add the cabbage, stirring to combine
- Season with salt and pepper, then add the chicken broth
- Lower the heat to a simmer, then cover and cook for at least 25 to 30 minutes
- Season to taste with more salt and pepper

Steps:
- Place the bacon ends in a pot, and place the pot over medium heat.
- Brown the bacon then add in the diced onions, and cook until the onions start to sweat.
- Add in the minced garlic,then cook for 1 minutes.
- Pour in the chicken broth, and turn the heat up to high and let boil for 20 minutes.
- Pour in the 2 cups of water, and turn the heat down to medium.
- Start adding in the collard greens into the pot.
- Once all of the greens are in the pot, sprinkle in the seasoning salt and ground black pepper.
- Add in the sliced jalapeno, and the vinegar and stir the ingredients.
- Cover the pot, and let simmer for 1 hour and 10 minutes over medium heat. Be sure to peak in and stir periodically.
- Enjoy!
COLLARD GREENS WITH BACON
Good ole country collard greens with bacon and onion. These are so hearty and satisfying, even those who say "I don't like greens" will eat these up! You might even get a "Wow!" after the first bite and a "not at all like I remember them tasting". You can eat them alone but they're best with hot buttered cornbread. Mustard and turnip greens are great this way too. Enjoy!

- Place bacon in a heavy pot and cook over medium-high heat, turning occasionally, until fat begins to render, about 5 minutes. Drain off 1/2 of the bacon grease.
- Reduce heat to medium and add onion. Cook, stirring often, for about 5 minutes. Add garlic, red pepper flakes, salt, and pepper; cook and stir for 2 minutes.
- Increase heat to high and immediately pour in 3 cups water. Bring to a boil, stirring to scrape up browned bits from the bottom of the pot. Add chopped collard greens and 1 more cup of water. Bring back to a boil. Reduce heat and simmer until greens are tender, about 1 hour.
