This is my variation of a recipe for TVP "Oatmeal" that I found on About.com. I've added a few things, and it contains a grand total of 10 net grams of carbohydrates, 12 grams of fiber. And it's really good stuff!

1/2 cup textured vegetable protein ((TVP))
1 cup unsweetened soymilk
2 teaspoons butter
1 tablespoon cream
3 packets Splenda sugar substitute
cinnamon (optional)
nutmeg (optional)
sugar-free maple syrup (optional)
1 whole vanilla beans (optional) or 1 whole ground vanilla bean (optional)

Steps:

  • Put TVP and soy milk in a 1 qt bowl, microwave on High for 3 minutes.
  • Cover with plastic wrap, let stand for 5-10 minutes.
  • Add water if needed.
  • Reheat with 1 minute in the microwave on High.
  • Add remaining ingredients and any optional additions that you'd like.
  • Stir until butter is melted.
  • Enjoy!

1 cup millet
2 cups low-fat milk
3/4 teaspoon cinnamon
1/4 teaspoon cardamom
Pinch of coarse salt
Honey, brown sugar, berries, or dried fruit, for serving (optional)

Steps:

  • Toast millet in a small skillet over medium-high heat until lightly toasted, 1 to 2 minutes. Remove from heat and set aside.
  • In a small saucepan, bring milk to a boil; add toasted millet, cinnamon, cardamom, and salt. Reduce heat to a simmer; cover and cook, stirring occasionally, until milk is absorbed, 25 to 30 minutes; add 1/4 cup additional water or milk if liquid is absorbed and millet is not tender. Serve immediately with desired toppings.

Steps:

  • In a 3-quart saucepan, bring water and salt to a boil.
  • Add the cinnamon red hots,stirring constantly until dissolved.
  • Stir in the 7-grain cereal.
  • Bring back to a boil,reduce heat to medium low.
  • Simmer until thick,stirring occasionally.
  • Stir in the sugar and apple pie filling.
  • Serve with brown sugar and fresh cream.
