2 cups whole-wheat flour
1 cup all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
½ teaspoon freshly ground pepper
¼ teaspoon salt
2 eggs
1 ⅓ cups buttermilk
3 tablespoons extra-virgin olive oil
2 tablespoons butter, melted
1 cup thinly sliced scallions, (about 1 bunch)
3/4 cup diced Canadian bacon, (3 ounces)
½ cup grated Cheddar cheese
½ cup finely diced red bell pepper

Steps:

  • Preheat oven to 400 degrees F. Coat 12 muffin cups with cooking spray.
  • Combine whole-wheat flour, all-purpose flour, baking powder, baking soda, pepper and salt in a large bowl.
  • Whisk eggs, buttermilk, oil and butter in a medium bowl. Fold in scallions, bacon, cheese and bell pepper. Make a well in the center of the dry ingredients. Add the wet ingredients and mix with a rubber spatula until just moistened. Scoop the batter into the prepared pan (the cups will be very full).
  • Bake the muffins until the tops are golden brown, 20 to 22 minutes. Let cool in the pan for 5 minutes. Loosen the edges and turn the muffins out onto a wire rack to cool slightly before serving.

Loaded with bacon, spinach and cheese, these savoury breakfast muffins are a healthy handheld breakfast to help get you out the door on busy mornings.

Number Of Ingredients 13

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon black pepper
1 egg
1 1/2 cups milk
1/4 cup plain yogurt*
1/3 cup olive oil
1 cup cheddar cheese, grated
6 slices bacon, sliced or diced
4 cups spinach, roughly chopped
2 tablespoons chives, minced

Steps:

  • Preheat the oven to 375°F and grease a muffin tin with butter or oil.
  • In a cast-iron skillet or frying pan on medium-high heat, add bacon and cook for 8-10 minutes or until crisp. Once cooked, transfer to a plate lined with a paper towel to drain.
  • Remove any excess bacon grease from the pan, leaving just a touch, add the chopped spinach and cook for 2-3 minutes until wilted. Transfer the spinach to the plate with the cooked bacon and set aside.
  • In a medium bowl, combine all of the dry ingredients: flour, baking powder, baking soda, salt, and black pepper and stir until well incorporated.
  • In a separate large bowl, combine all of the wet ingredients; egg, milk, yogurt and olive oil and whisk to combine.
  • Transfer the dry ingredients to the wet ingredients and whisk well until the batter is smooth and there are no lumps.
  • Add cooked bacon, spinach, cheddar cheese and chives and gently fold into the batter until well incorporated.
  • Divide all of the batter evenly across the muffins tin wells.
  • Transfer the muffin tin to the oven and bake for 20-25 minutes until a toothpick inserted into a muffin comes out clean and muffins are slightly golden on top.
  • Once baked, allow to cool slightly, run a knife around each muffin to loosen, then transfer them to a rack and allow to cool slightly.
  • The muffins can be served immediately, stored at room temperature for 5 days, in the fridge for up to 7 days or frozen for up to 3 months.

1 tablespoon unsalted butter, plus more at room temperature for the muffin pan
4 slices thick-cut bacon, chopped
2 bunches scallions, sliced (about 1 1/2 cups)
1 large egg
1/2 cup low-sodium chicken broth
1/2 cup whole milk
1/4 cup extra-virgin olive oil
1/4 cup granulated sugar
1 teaspoon ground mustard powder or 1 tablespoon Dijon mustard
1 teaspoon kosher salt
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1 1/2 cups freshly grated Cheddar (if you can find a beer Cheddar, use that!)

Steps:

  • Preheat the oven to 350 degrees F. Generously grease a 12-cup muffin pan or a giant 6-cup muffin pan with butter.
  • Cook the bacon in a medium skillet over medium heat, stirring occasionally, until browned and crisp, about 10 minutes. Remove with a slotted spoon to a paper towel-lined plate.
  • Heat the 1 tablespoon butter in a large skillet over medium-high heat. Add the scallions and cook until slightly wilted, 2 to 3 minutes. Remove from heat and set aside.
  • Whisk the egg, broth, milk, olive oil, sugar, mustard and salt in a large bowl. Gently stir in the flour and baking powder until evenly combined.
  • Fold in the cheese, cooked scallions and cooked bacon.
  • Divide the mixture among the muffin cups and bake until the muffins puff up, are golden around the edges and a toothpick inserted into the center comes out clean, about 20 minutes for a 12-cup muffin pan or 25 to 27 minutes for a giant 6-cup muffin pan.
  • Let the muffins cool 5 minutes in the pan, then invert onto a wire a rack before serving.

Steps:

  • Cook bacon in a large skillet over medium-high heat until crisp, about 10 minutes. Drain the bacon slices on paper towels and crumble once cooled.
  • Preheat oven to 400 degrees F (200 degrees C). Coat 24 muffin cups with cooking spray.
  • Mix flour, Cheddar cheese, baking powder, garlic salt, and black pepper together in a large bowl.
  • Beat eggs, milk, and vegetable oil together in a small bowl; stir into flour mixture just until moistened. Gently fold bacon through the batter. Spoon batter into prepared muffin cups.

This one was given to me by a girlfriend and it was yummy (we had regular size). Still have to make it myself. I have included cooking the bacon in the cooking time. UPDATE quizzed the girlfriend, she gave the recipe as is not as she does - so o'kay the difference is she used 6 slices of short rindless bacon (which is basically just the bacon meat only - no fat), therefore yes you would need the oil, she felt that way was healthier than the bacon fat.

3 slices bacon (rind removed and chopped)
1 tablespoon olive oil
400 g button mushrooms (finely chopped)
1 1/2 cups plain flour
3 teaspoons baking powder
1/4 teaspoon salt (freshly ground)
1/4 teaspoon black pepper (freshly ground)
1 cup cheese (grated, tasty, cheddar is good)
2 tablespoons chives (finely chopped)
80 g butter (melted)
2 eggs (lightly whisked)
2/3 cup milk (skim milk was used)

Steps:

  • In a frying pan (skillet) fry bacon over a medium-high heat until light and golden stirring often, about 4 minutes.
  • Remove to a kitchen paper covered plate.
  • Increase heat to high, add oil and mushrooms to the frying pan and cook for 5 minutes till tender and then set aside to cool.
  • Preheat oven to 200 degree celsius.
  • Grease a 12 hole muffin tin (regular size) or a 6 texas size (3/4 cup) muffin tin.
  • Sift flour, baking powder and salt and pepper into a bowl and add cheese and chives and mix together.
  • Whisk butter, egg and milk in a jug and pour into dry ingredients, stirring gently until almost combined.
  • Fold through the bacon and mushrooms.
  • Spoon mixture into prepared pan.
  • Bake for about 15 to 18 minutes for regular size muffins and about 20 to 25 for texas size.

1/4 cup minced fresh chives
2 cups all-purpose flour

Steps:

  • Cook bacon until crisp.
  • Cool and crumble.
  • Set aside.
