Steps:
- Preheat oven to 400 degrees F.
- Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2 inch apart.
- Bake for 3 to 5 minutes or until golden and crisp. Cool.

AMERICAN CHEESE CRISPS

Anything you can imagine. I was trying to figure out what to do with American cheese and this makes it actually palatable.

Steps:
- Sprinkle slice of cheese with pinch or whatever seasoning you want.
- Cut slice into 16 pieces.
- Arrange on the outer edges of a flat, non-stick surface such as a silicone bake sheet or parchment paper about 1.5-2 inches apart. If you use a plate, the slanted edges will cause the cheese to run towards the center. Too close and the pieces with melt together.
- Microwave for 1 minute, it will start to look slightly golden.
- Microwave for an additional 30 seconds, checking to make sure it doesn't burn.
- Remove from microwave and non-stick surface. Let cool. The final product isn't very pretty but for a total of two minutes, this recipe is amazing.

- Preheat oven to 400 degrees F. line a baking sheet with Silpat/silicone (recommended) or parchment paper sprayed with oil spray.
- Place a heaping tablespoon of parmesan onto baking sheet and lightly pat down. Repeat with remaining cheese, spacing approximately ½ inch apart.

- Cool and use a spatula to transfer from the baking sheet.

- Set your oven to 170 F and leave the cheese in the oven overnight (about eight hours). The cheese crisps can become greasy during the drying process. To help with this, use a paper towel to wipe the grease off of them halfway through the baking time and then flip them over.
- After eight hours, you'll see that the cheese has hardened and joined together into one giant cheese crisp.
- Wipe off any excess grease from both sides, break into cracker-sized pieces, and enjoy!

- Preheat Oven 400 F (204 C).
- In a small combine: parmesan cheese, chili powder, garlic powder, smoked paprika, sea salt, and tomato powder. Mix together to combine and set aside.
- Place about 2 tbsp of the shredded cheese into the bottom of each cup of the silicon muffin pan (can also use a lightly greased muffin tin).
- Bake for 8 to 10 minutes or until cheese is melted, bubbling and just starting to brown on the very edges.
- Remove pan from oven and while the crisps are cooling, sprinkle each with the spice mixture but don't remove crisps from muffin pan. Let cool until cheese crisps are solid and hardened (about 10 to 12 minutes).
- Remove crisps from silicon pan by pushing underneath the bottom of each cup up to release the crisp. If using a regular muffin tin use a butter knife to gently loosen and lift each crisp out of the cup. Serve.

ROASTED CHEESE CRISPS
These cheese crisps are very versatile....sprinkle them into a green salad, use with hors d'oeuvres, serve with cocktails, use as a garnish on macaroni and cheese, or just snack on them! Lots of different cheeses could be used, just make sure you use a hard cheese....if it's too soft it will just melt and spread to form a uniform sheet of cheese in your pan. Play around with the flavorings too...I've just added the red pepper but you can use sweet or hot chile powder or add some cumin, fennel or coriander seeds, lightly crushed. Herbs likie rosemary or thyme can be added as well.

- Heat the oven to 375°.
- Shred the block of cheese lengthwise (longer shreds work better) using a box grater with holes about 1/4-inch wide.
- Place in a medium bowl.
- Sprinkle with the flour; toss gently with a fork to coat the cheese.
- Sprinkle with the red pepper, toss again.
- Place a silicone baking mat or a sheet of parchment paper on a 16 1/2-by-11 1/2-inch sheet pan.

- Grate 2 ounces of the Parmesan using the side of the box grater that finely grinds the cheese and then grate 2 ounces of the Parmesan using the side of the box grater that makes long shreds of cheese, and then mix them together. Drop rounded tablespoons of the grated Parmesan on the parchment paper to make neat mounds. Bake in the oven for 6 minutes until golden.
- Cool slightly and loosen with a metal spatula. Serve at room temperature.
