The spices may seem like a strange combination, but this is a wonderful, delicate traditional Turkish dish with a twist. Serve chilled, as is traditional, or warm, as desired. Squeeze fresh lemon juice over dolmas before serving.

1 tablespoon olive oil
2 onions, minced
1 ½ cups uncooked white rice
2 tablespoons tomato paste
2 tablespoons dried currants
2 tablespoons pine nuts
1 tablespoon ground cinnamon
1 tablespoon dried mint
1 tablespoon dried dill weed
1 teaspoon ground allspice
1 teaspoon ground cumin
1 (8 ounce) jar grape leaves, drained and rinsed

Steps:

  • Heat oil in a medium saucepan over medium heat. Saute onions until tender. Stir in rice and hot water to cover. Cover and simmer until rice is half cooked, about 10 minutes.
  • Remove from heat and stir in tomato paste, currants, pine nuts, cinnamon, mint leaves, dill weed, allspice and cumin. Let mixture cool.
  • Prepare a large pot by placing an inverted plate on the bottom; this protects the dolmas from direct heat when steaming.
  • Rinse grape leaves in warm water; drain and cut off any stems. Place about 1 teaspoon of the cooled rice mixture in the center of a leaf. Fold in the sides and then roll into a cigar shape. Place in prepared pot. Repeat with remaining ingredients.
  • Pour in just enough warm water to reach the bottom of the first layer of dolmas. Cover and simmer over low heat for 30 to 45 minutes, or until rice is totally cooked. Check the water level often and add more as necessary.

There are many variations of recipes for dolmathakia me kima (small dolmades). This favorite stuffed grape leaf has dill, mint, ground beef, and rice.

For the Grape Leaves:
8 cups water
1/2 lemon, juiced
1 teaspoon sea salt
1 (16-ounce) jar grape leaves in brine (about 70 leaves)
For the Filling:
1 cup short-grain rice, uncooked
2 medium-large onions, finely chopped
5 tablespoons olive oil, divided
2 pounds lean ground beef , or lamb, or a mixture of both
1 bunch fresh dill, chopped
1 tablespoon mint leaves, chopped
2 1/2 lemons, juiced, divided
1 teaspoon sea salt, or more to taste
1/4 teaspoon freshly ground black pepper
2 cups water

Steps:

  • Gather the ingredients.
  • Bring 8 cups of water to a boil in a large pot, and add the juice of 1/2 lemon and the salt. Carefully unroll the leaves (do not separate them). Turn off the heat and place the leaves in the hot water for 3 minutes.
  • Remove the leaves and place them in a bowl and cover with cold water. When cooled, drain in a colander. It is not unusual for many of the outer leaves in the jar to be damaged or to tear while using. Set these aside to use later in the recipe.
  • To prepare the filling, start by soaking the rice for 10 minutes in hot water and drain. (Alternatively, sauté the rice with the onion.)
  • Sauté the onions in 1 tablespoon of olive oil until translucent, not browned.
  • In a bowl, combine the onion, ground beef, rice, remaining olive oil, dill, mint, juice of 1 lemon, salt, and pepper. Mix well by hand.
  • To fill and roll the leaves, gently separate one leaf and place it shiny-side down on a work surface. Place a heaping teaspoon (or more depending on the size of the leaf) of the filling on the leaf at the point where the stem joins the leaf.
  • Fold up the bottom of the leaf over the filling, then each side inward in parallel folds, and roll up the leaf. The roll should be firm, not tight, as the filling will expand during cooking. Repeat until all the filling has been used.
  • Because the leaves on the bottom can burn while the filling cooks, put a plate or wooden souvlaki skewers in the bottom of a heavy-bottomed pot (see tip below). The plate should fit snugly in the pot.
  • If there are unused leaves or leaves that were torn and not used during the filling process, put them on the plate or on top of the skewers. Place the dolmathakia on top, packing them closely together (not squashed), seam side down, so they don't unroll during cooking. Layer them until all are in the pot (two to three layers are best, but no more than four layers). Place several unused leaves over the top.
  • Take another plate and place it upside down on top of the dolmathakia, using something to weigh it down (a second plate works well). Add the 2 cups of water to the pot and cover. Bring the water to a gentle boil, add the remaining juice from the 1 1/2 lemons, reduce heat to low, and simmer for approximately 50 to 70 minutes. Check to see if done-if the rice has cooked, they are done. If not, continue cooking for another 10 minutes and check again. Cooking time depends both on the type of pot used and the particular stovetop heating element.
  • If preferred, you can use a pressure cooker. No plates are needed but do use the skewers in the bottom. Pack the dolmathakia into the pressure cooker, add the 2 cups of water, close and cook for 15 to 20 minutes at the first pressure mark.

1/3 cup olive oil
1/2 cup onion, finely chopped
1/2 cup green onion, chopped
1 lb lean ground lamb or 1 lb ground beef
1/2 cup raw rice
2 tablespoons pine nuts or 2 tablespoons chopped almonds
1 teaspoon dried dill weed
1/2 teaspoon salt
1/8 teaspoon pepper
water
1 (16 ounce) jar grape leaves, drained
3 tablespoons lemon juice
2 tablespoons olive oil
2 tablespoons butter
3 tablespoons flour
1 1/4 teaspoons salt
1 (10 3/4 ounce) can chicken broth
3 tablespoons lemon juice
4 egg yolks

Steps:

  • In 1/3 cup hot oil in 12-inch skillet, saute onion and green onion, stirring until golden - 5 minutes. Add lamb; cook, stirring until lamb is no longer pink - 10 minutes. Add rice, nuts, dill salt, pepper and 3/4 cup water. Simmer, covered, 10 minutes, until water is absorbed.
  • Remove from heat. Turn into bowl to cool 30 minutes before stuffing grape leaves. Meanwhile, separate grape leaves. Rinse well in cold water to wash away any brine. Dry well on paper towels. Use imperfect leaves for layering evenly in the bottom of the skillet.
  • Lay leaves, shiny side down, on flat surface.Put 1 tablespoon lamb mixture in center of each leaf; fold sides over filling; roll up, starting from narrow end. Do not roll too tightly; rice needs room to expand. Fill skillet with closely fitted layers of stuffed leaves.
  • Pour lemon juice, 2 tablespoons olive oil and 1 cup cold water over them. Put heavy plat, upside down, on top to prevent leaves from unrolling. Bring to boiling; simmer, covered, until liquid is absorbed - 30 minutes. Cool in skillet, if serving cold as an appetizer.
  • With slotted utensil, lift out of liquid onto serving plate.
  • If serving warm with egg-and-lemon sauce: In small saucepan over direct heat, melt 2 tablespoons butter. Remove from heat; stir in 3 tablespoons flour and 1/2 teaspoon salt; mix until smooth.
  • Stir in 1 can chicken broth and 3 tablespoons lemon juice. Cook over low heat, stirring, until boiling. In small bowl, beat 4 egg yolks slightly; beat in small amount of hot mixture. Slowly return to pan, stirring until thick. Remove from heat. Makes 2 cups.

50 to 60 fresh grape leaves (or 1 (16-ounce) jar brined grape leaves)
1 cup olive oil (divided)
6 large onions (minced)
1 1/2 cups long-grain rice (uncooked)
1 cup fresh parsley (chopped)
1/2 cup fresh dill (chopped)
1/2 cup pine nuts
2 tablespoons dried mint
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
2 lemons (juiced)

Steps:

  • Gather the ingredients.
  • Rinse the leaves well to remove brine.
  • Place the leaves in boiling water and boil for 3 to 5 minutes to soften them and make them more pliable. Remove from water and set aside.
  • In a large skillet, over medium-high heat, heat 1/2 cup olive oil. Sauté the onions until translucent, about 5 minutes.
  • Stir in the rice, parsley, dill, pine nuts, mint, salt, and pepper. Taste test and adjust the seasoning as desired.
  • Remove from heat and stir in the lemon juice. Allow the filling to cool about 10 minutes.​
  • Line the bottom of a heavy saucepan with 2 or 3 grape leaves (use the broken or torn ones for this).
  • Roll the dolmathakia by placing a leaf with the stem toward you on a flat surface. The underside of the leaf should be face up. (The veins of the leaf are raised on the underside.) Using the point of a sharp paring knife, cut out the stem of the leaf. Overlap the bottom two sections of the leaf toward the center.
  • Place a tablespoon of filling in the bottom center of the leaf, just above the stem.
  • Fold the bottom section up to cover the filling.
  • Fold the sides in toward the center.
  • Continue rolling the packet up toward the top point of the leaf.
  • Place the rolls in layers, seam-side down, in the saucepan.
  • Pour remaining 1/2 cup olive oil over the dolmathakia and enough water to cover them by about 1 inch.
  • Place an inverted heatproof plate on top of the rolls to keep them submerged in the water.
  • Cover the saucepan and bring to a boil. Lower the heat and simmer over low heat for 45 minutes to 1 hour or until the leaves are tender and the rice filling is cooked through.
  • Serve and enjoy!

Little bites of heaven! This Greek dolmades recipe (stuffed vine/ grape leaves with rice) is the ultimate vegetarian appetizer! Dolmathes or dolmadakia are made from tender vine leaves wrapped into little rolls and stuffed with rice and fresh herbs.

60 vine leaves, drained and rinsed
250g rice (1 cup)
1 cup olive oil
2 onions, finely chopped
2 cups warm water
juice of 2 lemons
2 tbsps dill, chopped
1/2 a cup parsley, chopped
salt and pepper

Steps:

  • To make this traditional Greek dolmades recipe (stuffed vine/ grape leaves), start by preparing the vine leaves. For this dolmades recipe, you can either use vine leaves sold in jars or fresh (if you are lucky enough to find them). If you use the ones in jar, rinse the vine leaves, remove the stems and leave them in a colander to drain. If using fresh vine leaves, wash them thoroughly, remove the stems and blanch them in boiling hot water. Remove the leaves with a slotted spoon and place them in a colander to cool down completely.
  • Prepare the filling for the stuffed vine/ grape leaves (dolmades). Place the rice in a colander and rinse with running water. Heat a large saucepan over medium heat, add 1/3 of the olive oil and the chopped onions. Sauté the onions, until translucent (but not coloured). Add the rice and sauté for 1 more minute. Pour in 2 cups of warm water and half lemon juice and simmer for about 7 minutes, until the rice absorbs all the water and is parboiled. Season with salt and pepper, stir in the herbs, remove from the stove and set aside to cool down for a while. This will be the filling for the dolmades.
  • Layer the bottom of a large pot with some vine leaves (use the ones that are little bit torn) and start rolling the dolmadakia. (This is probably the most difficult part of the traditional dolmades recipe). Place one vine leaf (shiny side down) on a flat surface and add 1 tsp of the filling at the bottom end (stem). Be careful not to overfill the dolmades, as the rice will expand during cooking. Fold the lower section of the leaf over the filling towards the center; bring the two sides in towards the center and roll them up tightly. Place the stuffed vine leaves (fold side down) on the bottom of the pot and top in snugly layers. Be careful not to leave any gaps between the dolmades to prevent them from cracking open when cooking.
  • Drizzle the stuffed vine leaves (dolmathes) with the rest of the olive oil and lemon juice and season with salt and pepper. Place an inverted plate on top to hold them down when cooking and pour in enough water just to cover them. Place the lid on and simmer the dolmades for about 30-40 minutes, until the water has been absorbed and the dolmades remain only with the oil.
  • Remove the pot from the heat, remove the lid and plate and let the dolmades cool for at least 30 minutes.

Probably, the Greek dolmades are the most worldwide famous stuffed grape leaves rolls! These delicious roulades filled with a traditionally vegan mix of rice, onions, and herbs, are popular, with some variations, not only in Greece, but also in several other regions of the Middle Eastern, Turkic, and Balkans areas. 1 Lb (450 g) grape leaves
13 oz (370 g) long grain rice
12 spring onions
1 red onion
2 cloves garlic
2 lemons
1 cup (240 ml) extra-virgin olive oil
4 tbsp minced fresh herbs (dill, parsley, mint, coriander)
1 dash black pepper
to taste table salt

Steps:

  • First, peel and mince the red onion and the garlic.
  • Then, reduce the spring onions into thin rounds.
  • At this point, pour the vegetables into a saucepan along with 3 tbsp of olive oil and sauté 20 minutes over medium heat until the onion becomes soft and translucent.
  • Now, add the rice into the pan, and sauté a couple of minutes along with the onions.
  • Then, add 1 cup of boiling water and simmer the rice half of the time suggested onto the box, stirring as needed.
  • If the water evaporates too early, add a little more: at the end, you want the rice half cooked, and the water completely evaporated.
  • Finally, add salt and pepper to taste, cover the pan with a lid and let it rest far from the heat.
  • At this point, rinse, dry and mince the herbs, and combine with the rice and onions.
  • Eventually, pour the rice stuffing into a plate and let it reach room temperature.
  • First, bring to boil a pot full of water. Then, place the pot far from the heat and poach immediately the leaves a couple of minutes.
  • Finally, rinse the leaves with cold water.
  • Now, line the bottom of a pot with a layer of grape leaves: these to protect the dolmades.
  • At this point let's prepare the dolmades! Spread out one or two grape leaves, depending on their size.
  • Then, place a tbsp of rice stuffing over the leaf, and roll the dolma folding the borders.
  • Finally, place the dolma into the pot. Repeat this step to finish the leaves and stuffing, assembling more layers of dolmades.
  • Now, pour the juice of the lemons, and the rest of the olive oil over dolmades.
  • Then, place a plate over the dolmades. You want the plate to adhere to the rolls, and be a little smaller than the inner of the pot: otherwise, the dolmades will float during the cooking.
  • Finally, submerge the plate and the rolls with water, cover the pot with a lid, and simmer gently about 45 minutes. Monitor the water during the cooking: if it starts to run out, add some more hot water.
  • Once ready, let the dolmades cool down, then serve warm or at room temperature along with tzatziki or your preferred sauces.

This recipe for stuffed grape leaves is easy and requires very few ingredients. This is a simpler method with beef, rice, parsley, and spices.

1 cup white rice (uncooked)
1/2 cup tomato sauce
1/2 cup fresh parsley (finely chopped)

Steps:

  • Soak grape leaves in cold water for 2 to 3 hours. Jarred grape leaves are very salty from the brine solution.
  • Rinse and drain in a colander. Set aside.
  • In a mixing bowl , combine remaining ingredients. Mix well with hands.
  • Place a grape leaf stem-side down. Place about 1 to 2 tablespoons of mixture in the middle.
  • Fold in the sides and roll upward. Think of rolling a burrito, only smaller.
  • When you have rolled the last leaf, place a heavy plate on top of the stuffed grape leaves in your pan. We use a ceramic plate. This helps keep the grape leaves in place during cooking so they don't shift around.
  • Fill pan with water and bring to a boil. Reduce heat to low and simmer for about 30 to 45 minutes until rice and meat are done.

This is a delicious variation of a common Middle Eastern dish using grape leaves stuffed with lamb and a variety of seasonings.

2 medium onions, finely chopped
⅔ cup long grain white rice
⅔ cup pine nuts
1 teaspoon salt
¼ teaspoon pepper
1 teaspoon chopped fresh mint
1 (8 ounce) jar grape leaves, drained and rinsed
1 ½ cups water

Steps:

  • Mix the lamb, onions, rice, pine nuts, salt, pepper, and mint into a bowl until evenly combined. Gently open up a grape leaf, and place rib-side down onto your work surface. Place a rounded tablespoon of the meat mixture into the center of the grape leaf. Fold the bottom of the leaf over the meat, fold in the sides, and roll into a tight cylinder. Place the rolled grape leaf into a large skillet, seam-side down. Repeat with remaining grape leaves, packing them in a tight, single layer.
  • Pour the water into the skillet, and bring to a simmer. Reduce heat to medium-low, cover, and simmer until the rice is tender, 50 to 55 minutes. Check occasionally and add more water if needed. Pour off water before serving.

2 1/2 cups al dente white rice, cooked and cooled
1 large bunch medium washed and finely chopped parsley
2 large white onions finely chopped
2/3 cup lemon juice, freshly squeezed
1/3 cup olive oil
Medium jar grape leaves
1/4 olive oil
3/4 cup lemon juice

Steps:

  • Add to the cooked and cooled white rice the parsley, white onions, lemon juice and olive oil and then blend. After blending these ingredients estimate adding a large tablespoon for each leaf.
  • Lay the de-stemmed and rinsed grape leaf shiny side down, place portion of rice mixture in the center near the stem end and roll keeping stuffing close to end of leaf. Start folding in the sides and continue to roll keeping ends closed and stuffing secure inside.
  • Lay "stem" down (the end of the roll) in a flat pan and continue doing so until each one is side by side close together, keeping them from opening when cooking. You can often place at least 2 layers if making large amounts, but more layering is not recommended. Pour over leaves enough water to reach top layer only and bring to a boil and cook for about 10 to 15 minutes. Add more water only if necessary, so as not to burn the leaves. Water should all be evaporated in this period of time if not, drain remaining water.
  • Remove from burner and let cool for about 1/2 hour.
  • Then transfer in single layers into flat pans and pour over a mixture of lemon and olive oil and place in refrigerator cool and marinate overnight or at least several hours before serving. Can be stored for at least 2 to 3 days in refrigerator.

40 -50 fresh grape leaves or 1 lb preserved grape leaves
3/4 cup long grain rice
2 -3 tomatoes, skinned and chopped
1 large onions or 5 tablespoons scallions, finely chopped
2 1/2 tablespoons parsley, finely chopped
2 1/2 tablespoons mint, dried and crushed
1/4 teaspoon ground cinnamon, see note
1/4 teaspoon ground allspice, see note
salt and black pepper
2 tomatoes, sliced (optional)
3 -4 garlic cloves (optional)
1/2 cup olive oil
1/4 teaspoon powdered saffron (optional)
1 teaspoon sugar
1 lemon, juice of

Steps:

  • Notes you may add more lemon juice, the cinnamon and the allspice must be a level teaspoon.
  • If using vine leaves in brine, first drain them then put them in a large bowl and pour boiling water over them. Make sure the water penetrates well between the layers and let the leaves soak for 20 minutes. Drain. Soak in fresh cold water then drain again and repeat the process once more. This will remove the excess salt.
  • Soak and stir the rice in boiling water, and then rinse it under cold tap. Drain thoroughly. In a bowl mix the rice with the tomatoes, onion, parsley, mint, cinnamon, allspice, and salt and pepper to taste.
  • Stuff the leaves with this mixture:.
  • Place 1 leaf vein side up. Place a heaping tablespoon of filling on the center near the stem edge. Fold the stem up over the filling, then fold both sides toward the middle and roll up like a small cigar. Squeeze lightly in the palm of your hand. This process will become easier after you have rolled a few. Fill the rest. Continue until the filling is used up.
  • Pack them tightly in a pan lined with tomato slices or leftover grape leaves and occasionally slip in a whole clove of garlic if you choose.
  • Mix the olive oil with 1/2 cup water and the saffron if used. Add the sugar and the lemon juice, pour the mix over the stuffed leaves. 50 to 60 grape leaves (fresh or jarred)
6 cups chicken (or vegetable) broth
1.5 lbs ground beef
1 cup white basmati rice
1 onion, finely chopped
1 large onion, cut into large rings
4 cloves of garlic, minced
1/3 cup chopped parsley
1/4 cup olive oil, divided
1/2 tsp all spice
1/2 tsp cumin
a pinch of nutmeg
salt and pepper to taste

Steps:

  • In a skillet, heat 2Tbsp of the olive oil over medium high heat and sauté the chopped onion and garlic until translucent, about 2 minutes. Add the spices and let them sweat for a couple more minutes.
  • In a large bowl, combine the meat, the rice, the onion mixture and the parsley. Mix everything together with your hands until everything is incorporated. Reserve.
  • Drain and rinse the grape leaves.
  • Take the stems of every grape leaf and blanch them in boiling water for 10 minutes. Drain and reserve.
  • To roll the grape leaves, place a leaf with the vein side up on your work surface. Add one tablespoon of the filling mixture to the center of the leaf. Fold the edges in and up and roll the grape leaf until it looks like a cigar, tucking the edges under the roll. Proceed with the other leaves until you've run out of filling or leaves.   • Line a heavy bottomed pot with (unrolled) grape leaves. On top of that, add the onion rings.
  • Proceed to arrange the stuffed grape leaves in rows, alternating the direction of each layer of rows.
  • Fill the pot with the chicken broth (enough to cover the rolls) and the remaining olive oil.
  • Place a plate on the top to prevent the rolls from floating.
  • Cover the pot and bring to a boil.
  • When it boils, lower the heat to low and cook for 40 minutes, until meat is cooked and rice is tender.
  • Remove the rolls from the broth and serve warm or at room temperature.

My Own Famous Stuffed Grape Leaves image

These are grape leaves, stuffed with a tantalizing mixture of rice, fresh dill, mint and lemon. 'Yum' is the only one word to describe these. These can either be a main dish or an appetizer, depending on your appetite. Serve with good crusty bread and a Greek salad, if desired.

2 cups uncooked long-grain white rice
1 large onion, chopped
½ cup chopped fresh dill
½ cup chopped fresh mint leaves
2 quarts chicken broth
¾ cup fresh lemon juice, divided
60 grape leaves, drained and rinsed

1 cup olive oil

Steps:

  • In a large saucepan over medium-high heat, saute the rice, onion, dill, and mint for about 5 minutes, or until onion is soft. Pour in 1 quart of broth, reduce heat to low and simmer for another 10 to 15 minutes, or until rice is almost cooked. Stir in 1/2 of lemon juice and remove from heat.
  • Take one leaf, shiny side down, and place 1 teaspoon of the rice mixture at the bottom (stem) end of the leaf. Fold both sides of the leaf towards the center, roll up from the broad bottom to the top, and place into a 4-quart pot. Repeat with all leaves, leaving no gaps as leaves are placed in pot (to prevent from opening while cooking). Sprinkle with remaining lemon juice and with olive oil.
  • Pour chicken broth over all to cover grape leaves. Cover pot and simmer for about 1 hour (do not boil, because this will make the stuffing burst out of the leaves). Remove from heat, remove cover and let cool for 1/2 hour. Transfer to serving dish and serve.

1 tablespoon tomato paste

Steps:

  • Put the onions and oil in a skillet and cook over medium heat until the onions are soft and translucent, about 10 minutes. While the onions cook, peel the garlic cloves and mash them to a paste in a mortar and pestle. Add this to the pan along with the tomato, lemon juice, tomato paste, and salt and pepper to taste. Cook for another 5 minutes. Stir in the rice. Remove the pan from the heat and stir in the dill. Set aside to cool to room temperature, then refrigerate.
  • While this is cooling, drain the grape leaves and carefully pull them apart. Put them into a bowl and cover them with cold water. Let them soak until you are ready to roll.
  • Heat the oven to 350 degrees F.
  • Place a grape leaf on your work surface, shiny side down. Add 1 tablespoon of the rice mixture to the middle of the grape leaf. Fold the sides over the rice and roll the leaf into a small log shape, about the size of George's thumb. Repeat with the remaining rice, placing the stuffed leaves into a 9 by 9-inch baking dish. When the dish is full, cover the stuffed leaves with several layers of flat grape leaves and pour in 1 cup of water. Cover and bake for 1 hour. Let cool to room temperature and refrigerate. Serve cool.

I researched different recipes and combined them to come up with this very yummy, very authentic, surprise for him. 1/2 cup extra-virgin olive oil
1 large yellow onion, finely chopped
1 small fennel bulb, halved, cored and diced
1 teaspoon grated lemon zest
1/2 cup pine nuts
1 cup long-grain rice
1 1/2 cups chicken stock
2 tablespoons finely chopped dill leaves
1/4 cup finely chopped flat-leaf parsley
Kosher salt and freshly ground black pepper
1 (8-ounce) jar grape leaves, rinsed and drained
2 lemons, juiced

Steps:

  • To make the filling, coat a large saute pan with 1/4 cup of the oil and place over medium heat. Add the onion, fennel and lemon zest and stir until soft, about 10 minutes. Add the pine nuts and rice, saute for 2 minutes, stirring to coat. Pour in just 1/2 cup of the chicken stock and lower the heat. Simmer until the liquid is absorbed and the rice is al dente, about 10 minutes. Scrape the parboiled rice mixture into a bowl and add the dill and parsley; season with salt and pepper. Allow to cool. Now on to the grape leaves.
  • Bring a big pot of water to a simmer. Blanch the grape leaves in the hot water for 5 minutes until pliable. Drain then trim the stems and any hard veins from the leaves. Pat dry with paper towels.
  • To assemble the dolmades, lay a grape leaf on a work surface, shiny-side down. Put 2 tablespoons of the rice filling near the stem end of the leaf. Fold the stem end over the filling, then fold both sides toward the middle, and roll up into a cigar ¿ it should be snug but not overly tight because the rice will swell once it is fully cooked. Squeeze lightly in the palm of your hand to secure the roll. Repeat with remaining grape leaves and filling.
  • Place the dolmades in a large Dutch oven or wide deep skillet, seam-side down in a single layer. Pour the remaining cup of broth, remaining olive oil, and the lemon juice over the dolmades, the liquid should reach halfway up the rolls, add some water if necessary. Cover the pan and simmer over low heat for 30 to 40 minutes, until the dolmades are tender when pierced with a fork. Serve warm, at room temperature or cool.

40 garlic cloves
1 pound ground beef
3/4 cup uncooked white rice
1 teaspoon garlic powder
2 teaspoons allspice
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground cinnamon
1 jar grape leaves, or about 50 fresh grape leaves
1/4 cup olive oil
1 pound pork or lamb chops
1 tomato, sliced
1/2 cup lemon juice

Steps:

  • In a large mixing bowl, mix together the ground beef, rice, garlic powder, allspice, salt, pepper, and cinnamon, and set aside.
  • Rinse grape leaves several times. If the leaves are small, leave them intact, but cut out the large center vein. If the leaves are large, cut them in half vertically, cutting out the large vein in the process. Place a small amount of the ground meat mixture at the end of each leaf. Roll up egg-roll style.
  • Pour the oil into the bottom of a large Dutch oven. Lay the chops over the oil. Lay the tomato slices over the chops.
  • Place the stuffed grape leaves seam-side down on top of the chops. Pack the leaves tightly and begin a second layer when necessary. Place whole garlic cloves randomly between the rolled leaves; plenty of garlic on each layer.
  • When you are done stacking, pour the lemon juice over the leaves, and add water to the pot to about 2-inches above the rolled leaves. To prevent the leaves from unrolling during cooking, place a plate on top of the stack of leaves and place a heavy object on top of the plate.
  • Simmer the leaves over low heat for about 2 hours.
  • Invert the entire Dutch oven into a large platter with high sides (i.e. a 12-inch round cake pan). Or, remove the leaves from the pot with tongs. Serve rustic style, with plenty of Arabic bread on which to spread the garlic!

1 lb very-lean ground lamb
1 (16 ounce) can tomatoes
1 cup long-grain rice

3 cups loosely packed mint leaves, chopped

Steps:

  • To prepare the grape leaves: Drain the jar and carefully remove the roll of leaves. Separate the leaves, rinsing them and stacking them (be careful not to tear them). Set aside.
  • Chop the canned tomatoes finely (I process in a food processor). Combine the lamb, tomatoes and their liquid, rice, olive oil, scallions, and mint.
  • Lay a grape leaf, vein side up with stem pointing toward you, on your work surface. Place a tablespoon of filling at the base of the leaf and roll up, tucking in at the sides to make a little bundle. (You want to roll it up tight enough so that it stays together but leave a little room for the rice to expand as it cooks). Repeat until all filling and/or grape leaves are used up, placing each bundle seam side down into a cooking pot.
  • Squeeze lemon juice over the bundles, then add water nearly to cover. Place a small plate over the bundles to weigh them down (so they won't fall apart during cooking). Cover and bring to a boil; reduce heat and simmer for 1 hour.
  • Serve hot or cold.

I don't remember when I first eat a dolma, but have had a passion for these little treats for years. I usually buy a few in a specialty deli, but finally found a recipe I really enjoy and make them periodically for appetizer parties. I don't recall which site this came from, but I think they're delicious.

8 ounces grape leaves, in brine (~40-45)
1/2 cup olive oil, divided
2 cups cooked long-grain rice
4 green onions or 4 scallions, finely chopped
1 small red onion, finely chopped
1 tablespoon lemon zest
1/4 cup chopped of fresh mint
1/2 cup pine nuts, finely chopped
salt
1 lemon, juice of

Steps:

  • This recipe is not difficult but takes some time to make.
  • Drain the grape leaves and put them in a large heat-proof bowl.
  • Pour just enough boiling water over the leaves to cover and let them soak for about 20 minutes.
  • Drain and rinse under cold water.
  • In the meantime, heat 1/4 cup of olive oil in a medium skillet.
  • Add onions and cook until tender, about 5 minutes.
  • Remove the skillet from heat and add rice, mint, lemon zest, salt to taste and pine nuts.
  • Mix thoroughly; making sure the rice is well-coated with oil.
  • To fill the leaves, spread out one grape leaf in front of you, vein side up and stem end toward you. Place ~2 teaspoons of the rice mixture in the center, fold stem end over the filling, bring the sides of the leaf towards the center and roll tightly, forming a cylinder.
  • Repeat until all the filling in the dolmas recipe is used.
  • Place dolmas close together and seam side down in a large skillet, in a single layer, if possible. If not, separate the layers with extra grape leaves.
  • Drizzle the lemon juice and the remaining olive oil over the dolmas and add boiling water to cover.
  • Cover the pan tightly and simmer for 1 hour.
  • Let the parcels cool in the liquid, then transfer to a serving platter. Serve at room temperature.

35 or so fresh or bottled grape leaves (about 1 jar, usually)
1 recipe stuffing (pages 448-449)
1 cup chicken stock, preferably homemade (page 160), or water
Juice of 1 lemon
3/4 cup extra virgin olive oil
Chopped fresh mint or parsley leaves for garnish
Lemon wedges for serving

Steps:

  • Bring a large pot of water to a boil; salt it only if you're using fresh leaves. Blanch the leaves, a few at a time, for about a minute-or until they're tender-if they're fresh, just 15 seconds or so if they're bottled. Rinse under cool water. Remove any thick stems.
  • To stuff, put a leaf, vein (bottom, or dull) side up, on a counter or cutting board. Put a tablespoon or so of filling in the center of the leaf, near the stem. Fold over the sides, then roll up from the stem end, making a little package; you'll quickly get the hang of it. Don't roll too tightly-the mixture will expand as it cooks. Put each finished package on a plate, seam side down.
  • If you have any unused leaves, put them in the bottom of a wide deep skillet or flameproof casserole with a lid. Add the stock to the pot, along with a large pinch of salt and the lemon juice. Arrange the stuffed leaves in the pot, seam sides down, packing them as tightly together as is necessary; if you have to layer them, that's fine too. Drizzle about half the olive oil over all, then cover with a plate (this helps the rolls maintain their shape). Bring to a boil, then lower the heat and cover. Cook for about 30 minutes, checking once or twice just to make sure there is still liquid in the pan (if it is running low, add a little boiling water).
  • Turn off the heat. (If you wish to serve the grape leaves hot, see the headnote.) Let cool to room temperature, then remove the rolls, put them on a plate, cover, and chill. (They may remain in the refrigerator for up to 2 days.) Drizzle with the remaining olive oil, sprinkle with a bit of pepper and mint, and serve with lemon wedges.
