1 tablespoon olive oil
1/2 cup chopped sweet onion
3 garlic cloves, sliced
Dash crushed red pepper flakes
2-1/2 cups cut fresh asparagus (about 1-1/2 pounds), trimmed
2 cups vegetable broth
1/3 cup whole hazelnuts, toasted
2 tablespoons chopped fresh basil
2 tablespoons lemon juice
1/2 cup unsweetened almond milk
2 teaspoons reduced-sodium tamari soy sauce
1/4 teaspoon salt
Shaved asparagus, optional

Steps:

  • In a large saucepan, heat oil over medium heat. Add onion, garlic and pepper flakes; cook and stir until onion is softened, 4-5 minutes. Add asparagus and broth; bring to a boil. Reduce heat; simmer, covered, until asparagus is tender, 6-8 minutes. Remove from heat; cool slightly., Place nuts, basil and lemon juice in a blender. Add asparagus mixture. Process until smooth and creamy. Return to saucepan. Stir in almond milk, tamari sauce and salt. Heat through, taking care not to boil soup. If desired, top with shaved asparagus.

1 tablespoon butter
1 tablespoon olive oil
2 pounds fresh asparagus, trimmed and cut into 1-inch pieces
1 medium onion, chopped
1 medium carrot, thinly sliced
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme
2/3 cup uncooked long grain brown rice
6 cups reduced-sodium chicken broth
Reduced-fat sour cream, optional
Salad croutons, optional

Steps:

  • In a 6-qt. stockpot, heat butter and oil over medium heat. Stir in vegetables and seasonings; cook until vegetables are tender, 8-10 minutes, stirring occasionally., Stir in rice and broth; bring to a boil. Reduce heat; simmer, covered, until rice is tender, 40-45 minutes, stirring occasionally., Puree soup using an immersion blender, or cool slightly and puree soup in batches in a blender. Return to pot and heat through. If desired, serve with sour cream and croutons. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight (soup may separate). In a saucepan, reheat to boiling, whisking until blended.

1 tablespoon whole-grain mustard
2 teaspoons apple cider vinegar
Kosher salt
1 pound asparagus, trimmed
1 cup mizuna lettuce or watercress
1/2 cup toasted peeled hazelnuts, chopped
2 ounces goat cheese crumbles

Steps:

  • In a medium bowl, whisk together the oil, mustard, vinegar and 1/4 teaspoon salt until smooth and emulsified.
  • Meanwhile, bring a large pot of water to a boil over high heat. Sprinkle generously with salt. Add the asparagus to the water and, depending on the size of the asparagus, blanch for 3 to 5 minutes. It should still have some bite left to it. Add the warm asparagus to the dressing and toss well to coat.
  • Fan the asparagus out on a platter and sprinkle with the mizuna. Scatter the hazelnuts and goat cheese on top and drizzle with any dressing that may remain in the bowl.

1 large shallot, minced
2 tablespoons Sherry vinegar or red-wine vinegar
1 tablespoon Dijon mustard
1/2 teaspoon sugar
1/3 cup extra-virgin olive oil
1/4 cup hazelnuts, toasted, skinned and chopped
1 hard-cooked large egg
2 pounds asparagus, trimmed and lower 2 inches of stalks peeled

Steps:

  • Make vinaigrette:
  • In a bowl whisk together shallot, vinegar, mustard, sugar and salt and pepper to taste. Add oil in a stream, whisking, and whisk until emulsified. Whisk in hazelnuts.
  • Finely chop egg. In a deep 10- to 12-inch skillet bring 1 1/2 inches salted water to a boil and cook asparagus over high heat until crisp-tender, about 2 to 4 minutes. Transfer asparagus with tongs to a colander and drain.
  • Transfer asparagus to a serving dish. Spoon vinaigrette over asparagus and sprinkle with egg. Serve asparagus warm or at room temperature.

2 onions , sliced
25g butter
650g asparagus (after snapping off woody ends)
1l vegetable stock
350g frozen peas
8 thin slices baguette or small loaf (white or seeded)
1 tbsp hazelnut oil , plus a drizzle to serve
150g pack soft goat's cheese
25g blanched hazelnuts , toasted and roughly chopped
handful pea shoots

Steps:

  • In a large saucepan, soften the onions in the butter. Meanwhile, trim about 5cm off the ends of 16 of your thinnest asparagus spears and set these aside. Roughly chop the remaining asparagus and stir into the onions. Cook for a few mins, then tip in the stock. Cover and boil for 10 mins, then uncover, stir in the peas and cook for 2 mins more.
  • Whizz the soup with a blender until smooth, then return to the pan. Season well and add a splash more water if it looks a little thick.
  • Meanwhile, cook the reserved asparagus tips in boiling water until just cooked, then drain and dry on kitchen paper.
  • When you're ready to serve, warm the soup gently. Brush the baguette slices with the hazelnut oil and toast, then spread with some goat's cheese and top with a couple of the asparagus tips, plus a sprinkling of hazelnuts. Ladle the soup into bowls, float a toast on each with a few pea shoots and drizzle with a little more hazelnut oil. Serve extra toasts on the side.

3 large leeks, sliced into 1/2-inch pieces
1 large onion, chopped
3 tablespoons butter
4 medium potatoes, peeled and diced
3 medium carrots, thinly sliced
1 teaspoon salt
2-1/2 quarts chicken broth
1/2 cup uncooked long grain rice
1 pound fresh asparagus, but into 1-inch pieces
1/2 pound fresh spinach, chopped into 1/2-inch pieces
1/4 teaspoon pepper
1 cup heavy whipping cream

Steps:

  • In a Dutch oven, saute leeks and onion in butter until tender. Add the potatoes, carrots, salt, broth and rice. Cover and bring to a boil; reduce heat and simmer for 25-30 minutes. Stir in asparagus. , Cover and simmer for 10-15 minutes or until vegetables are tender. Add the spinach, pepper and cream; heat through.

1 small onion, chopped
1 garlic clove, minced

1 jar (4 ounces) sliced mushrooms, drained
1 tablespoon diced pimientos
4 cups vegetable broth or chicken broth
1 can (12 ounces) evaporated milk
1/2 pound process cheese (Velveeta), cubed

  • In a large saucepan, saute the asparagus, onion and garlic in butter for 8-10 minutes or until tender. Add curry powder; simmer 5 more minutes. Add mushrooms and pimientos. Stir in broth and milk. Heat, but do not boil. Add cheese cubes and stir until melted.

1/4 cup shredded Parmesan cheese

  • In 12-inch skillet, heat water to boiling. Add asparagus. Heat to boiling; reduce heat to medium. Cover and cook 4 to 6 minutes or until crisp-tender. Drain; set aside.

1 lb cooked asparagus
1 ounce finely ground hazelnuts
2 tablespoons butter
2 teaspoons cider vinegar
salt and pepper, to taste

Steps:

  • Wash asparagus under cold running water.
  • Snap off lower end of each stalk with your fingers.
  • Let the stalk break where it wants to, this will leave only the tender portion of the stalk.
  • Young tender asparagus can be cooked in a steamer for 5-7 minutes, the more mature stalks for 7-10 minutes.
  • Do not over cook asparagus, it will lose flavor and nutrients if over cooked.
  • At the same time, place the hazelnuts and butter in a small heavy skillet.
  • Heat until the butter melts and mix thoroughly.
  • Remove from heat and stir in vinegar.
  • Season with salt and pepper to taste.
  • Pour hazelnut butter over hot asparagus.
  • Serve at once.

Well, I had asparagus and hazelnuts, so I decided to throw this together and am I glad that I did! It has quickly become one of our favorite ways to eat asparagus. The recipe came from my Mayo Clinic Cookbook.

1 lb asparagus, tough ends removed, then peeled if skin is thick
1 garlic clove, minced
1 tablespoon hazelnuts, toasted and finely chopped
1 tablespoon chopped fresh flat-leaf Italian parsley, plus sprigs for garnish
1/4 teaspoon finely grated lemon zest, plus extra for garnish
2 teaspoons fresh lemon juice
1 teaspoon extra virgin olive oil
1/4 teaspoon salt

  • In a large pot fitted with a steamer basket, bring about 1 inch water to a boil. Add the asparagus, cover, and steam until tender-crisp, about 4 minutes. Remove from the pot.

HAZELNUT-CRUSTED SALMON WITH CRUSHED POTATOES

Try something different with salmon fillets by adding a hazelnut, lemon zest and thyme crust. Serve with garlic parsley potatoes and asparagus

4 garlic cloves, unpeeled
1 tbsp olive oil, plus 1 tsp
800g new potatoes, halved or quartered if large
320g asparagus, woody ends trimmed
60g hazelnuts
6 thyme sprigs, leaves picked
1 lemon, zested
4 x 140g skinless salmon fillets
2 tsp Dijon mustard
10g parsley, roughly chopped

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Put the garlic cloves on a sheet of foil and drizzle with 1 tsp olive oil. Bring the edges of the foil together to enclose the garlic and put on a baking tray. Bake for 10 mins.
  • Meanwhile, bring a large pan of salted water to the boil. Carefully lower in the potatoes, then cover, reduce the heat to a simmer and cook for 10-15 mins until the potatoes are tender. Add the asparagus during the last 2 mins of cooking time. Drain and separate the potatoes and asparagus.
  • While the potatoes are cooking, tip the hazelnuts, thyme leaves and lemon zest into a mini food processor and briefly blitz until the mixture resembles breadcrumbs - a few chunkier bits of hazelnut is fine. Season lightly.
  • Remove the parcel of garlic from the oven and set aside. Line the tray with baking parchment and arrange the salmon fillets on top. Spread the fillets with the Dijon mustard, then gently pack on the hazelnut crumb, pressing it down lightly with your palm to help it stick. Cook in the oven for 10 mins until the salmon is just cooked through.
  • Squeeze the roasted garlic into a small bowl, discarding the skins. Whisk in the remaining olive oil. Tip the potatoes into a large bowl and roughly crush with a potato masher. Drizzle over the garlic oil, add the parsley, season and toss together. Serve the salmon with the garlic parsley potatoes and the asparagus.

3/4 cup celery, finely chopped

1/4 cup sherry wine
1 dash hot pepper sauce
1 dash Worcestershire sauce
1 pinch dry mustard

1 lb small asparagus, trimmed and cut into 1/2 inch slices
10 ounces mild cheddar cheese, shredded
1 1/2 teaspoons fresh parsley, chopped

Steps:

  • Melt butter in large skillet over medium heat.
  • Add onion and celery and cook, stirring, until tender but not browned, about 8 minutes.
  • Reduce heat to low, add flour and cook, stirring frequently, until frothy, about 5 to 10 minutes.
  • Blend in chicken stock and bay leaf; reduce heat to medium-low.
  • Add Sherry,hot pepper sauce, Worcestershire, dry mustard, and freshly ground pepper to taste and simmer 20 minutes.
  • Add asparagus and continue cooking until tender, about 10 minutes.
  • Stir in cheese and parsley and cook until cheese is melted, 5 to 10 more minutes.
  • Ladle soup into heated bowls and serve immediately.
