SMOTHERED PORK CHOP CASSEROLE
When the days get colder, this easy casserole is the kind of cozy dinner that'll warm you right up any night of the week. It starts with a creamy mashed potato base that gets topped with tender, seasoned pork chops and finished with a hearty helping of savory caramelized onions and mushrooms.

Steps:
- Heat oven to 400°F. Spray bottom of 11x8-inch (2-quart) glass baking dish with cooking spray. Make mashed potatoes as directed on pouch; stir in cream cheese, 1 tablespoon of the parsley and 2 teaspoons of the thyme. Spoon mixture into bottom of baking dish; set aside.
- In 12-inch skillet, heat 1 tablespoon of the butter over medium-high heat. Season pork with 1/2 teaspoon of the salt and the pepper; add to skillet. Cook 1 to 2 minutes on each side or until browned on both sides; arrange pork on top of potatoes in baking dish.
- Add remaining 2 tablespoons butter, the onions, remaining 1 teaspoon thyme and 1/4 teaspoon salt to skillet. Cook 7 to 8 minutes over medium-high heat, stirring frequently, until onions are browned and tender. Stir in mushrooms; reduce heat to medium, and continue cooking 4 to 5 minutes or until tender.
- In 1-cup glass measuring cup, mix chicken broth, Worcestershire sauce and flour. Pour into skillet; heat to boiling. Cook and stir 3 to 5 minutes or until sauce is thickened. Spoon mixture on top of pork chops in baking dish.
- Bake 18 to 25 minutes or until pork registers 145°F with instant-read thermometer. Garnish with remaining 1 tablespoon parsley before serving.

Steps:
- Brown chops.
- Remove and add water to the frying pan.
- Place chops in a single layer in a baking dish.
- In a bowl,mix the vegetable packet from from the Stove Top mix with 1 cup very hot water and 1/2 stick melted butter.
- Then add contents of crumb packet.
- Mix well.
- For as many chops,make a ball of stuffing and place on top of each chop.
- Put soup into skillet containing the drippings,mix and pour over the chops and stuffing.
- Bake uncovered, 1 to 1 1/2 hours at 350 degrees.
QUICKIE PORK CHOP CASSEROLE
USES PORK CHOPS AND BOXED POTATOES AND MAKES FOR A FLAVORFUL ONE DISH MEAL. What's great about this recipe is that you can use it in the crock pot, make ahead and refrigerate till ready to use. IT's also full of variations. Use any flaovr potatoes, cheese, onion or not and other vegetables. Use more pork chops, larger box of potatoes, and a bigger baking pan.

Steps:
- Follow mixing and baking directions on potatoe box.
- Mix potatoes and add onion in large mixing bowl.
- Spray frying pan with cooking spray and brown pork chops until about 1/2 done.
- Drain chops.
- Coat a baking pan big enough for the chops and potatoes and lay chops flat on the bottom of pan.
- Pour potatoes and sauce over the top and do not cover.
- Bake according to package directions on potatoes.
- When chops are just a few minutes from being done sprinkle cheese over the top and let melt.
- Servers 4.

- Heat oven to 350°F. In large bowl, mix potatoes, soup, sour cream, milk, broccoli and onion. Spoon mixture into ungreased 13x9-inch (3-quart) glass baking dish. Cover with foil; bake 30 minutes.
- Meanwhile, in 12-inch skillet, heat oil over medium-high heat. Add 3 of the pork chops; sprinkle with half of the salt and pepper. Cook 3 to 5 minutes on each side or until pork is browned. Repeat with remaining pork chops, salt and pepper.
- Remove foil from baking dish. Place pork chops evenly on top of potatoes, overlapping slightly. Bake 25 to 35 minutes longer or until edges are bubbly and pork is no longer pink in center.

PORK CHOP CASSEROLE
I cut this out of a cooking magazine, probably Taste Of Home and changed it to suit or our tastes. It sounds like a very flavorful way to have pork chops and to keep them moist. I haven't made them yet but plan to make them and serve them over mashed potatoes, yummy!!!!! Note: This recipe also works great in a crock pot. My friend and I have decided that it is easier to just mix all the sour cream with the soup and broth in the beginning.

- In a shallow bowl, combine the flour, salt and pepper; dredge pork chops.
- Heat oil in a large skillet; cook pork chops for 4 to 5 minutes per side or until browned.
- Place pork chops in a single layer in an ungreased 13x9x2 inch baking dish.
- Combine cream of mushroom soup, chicken broth and 1/2 cup sour cream; pour over chops.
- Sprinkle with half of the French fried onions.

BETTY CROCKER AU GRATIN POTATO CASSEROLE
Lately I have been experimenting with many types of casseroles and have found that I can put way more vegetables and less meat in a casserole then my family would reguarily consume. I like to brown a bunch of meat at once so I can just pull it out of the fridge and throw it all together, its a great time and energy saver (I freeze it cooked too!). I also like to chop a week's worth of veggies at once.

- Brown ground turkey. Meanwhile, chop the vegetables. Drain fat off meat. Rinse very well. Break into small peices.
- Spray glass casserole dish with nonstick spray. Mix potato mix according to directions (milk, boiling water, margerine, potatoes and cheese mix). Add vegetables and ground turkey.
- Bake at 400 for 20 minutes. I covered mine for the first 15 minutes (but I had company so I was making a double batch). Add cheese in last 5 minutes, stir.
- Let sit before serving for 5 minutes so sauce will thicken.

MOM'S AMERICAN CHOP SUEY (1950'S BASIC)
A school lunchtime classic. Quick and easy to make. Very bland but has remarkable taste. My sister has tried it and say it's just as she remembers Mom's. All you need to finish this recipe is some Kraft shaker cheese to complete the memory. Mom probably got the recipe from a 1950 vintage Betty Crocker cookbook. Quantities are approximate. Mom seldom measured anything. We usually make a double batch. Enjoy. If you add a bit of garlic powder, chili powder and a can of kidney beans you would create Mom's Chili Mac Recipe.

- Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray. In 12-inch nonstick skillet, cook bacon until crisp; remove from skillet, and crumble into small bowl. I like to season the ground beef with a sprinkling of taco seasoning while it cooks, for more of a Tex-Mex flavor. Good for working Moms who are too tired to cook at the end of the day!
