Fried rice is a great family meal. Kids and adults seem to like the fact all the ingredients and flavour is packed into one simple dish.

2 eggs, lightly beaten
400-450g bag frozen raw prawn meat, thawed
1 Tbsp sesame oil
2 spring onions, sliced
1 clove garlic, crushed
½ cup Wattie's Creations Sweet Chilli Sauce
1 Tbsp dark soy sauce
1 Tbsp fish sauce (optional)
Juice of 1 lime (or lemon)
3 cups cold cooked rice
100g snow peas, trimmed and sliced thinly

Steps:

  • Pour the beaten eggs into a hot, lightly greased frying pan and cook for 1-2 minutes or until the eggs are set. Turn the omelette onto a chopping board, cool, roll up and slice thinly.
  • Pat the prawns dry with paper towels. Heat the sesame oil in a wok or wide deep frying pan. Add the prawns and cook over high heat until they turn pink. Set aside and keep warm.
  • Add the spring onions and garlic and stir-fry over medium heat for 1 minute. Add the Wattie's Creations Sweet Chilli Sauce, dark soy sauce, fish sauce if using and lime juice.
  • Return the prawns to the wok with the cooked rice and snow peas and toss together in the sauce. Continue stir-frying until the rice and prawns are hot. Carefully stir through the sliced omelette. Serve with steamed Asian greens.

3 cup Cooked rice (about 200g ( or one heap bowl cold rice ) see details in note)
200 g Tiger prawns (Or king prawns ( peeled and deveined ))
¼ tsp Salt
¼ tsp White pepper powder (or black pepper )
1 tsp Shao Xing Cooking Wine (see details in note)
2 Egg (whisked)
1 tbsp Garlic (Finely chopped)
½ Onion (Cut small dices ( about 50 g / ½ cup ))
1 Carrot (cut small dices ( about 50 g / ½ cup ))
½ cup Green Peas (Frozen green peas ( about 50 g ))
2 Spring Onions (( Scallions ) Cut thin slices)
2 tbsp Vegetable oil (Or neutral flavour oil)
2 tbsp Oyster Sauce
2 tbsp Light soy sauce (Or regular soy sauce/ all purpose soy sauce)
1 tsp Sesame oil
¼ tsp White pepper (or black pepper )

Steps:

  • First season the prawns with salt, white pepper and Chinese cooking wine and set it aside. Add a pinch of salt in the eggs, whisk and set it aside.
  • Heat the wok/pan into medium-high heat, add 1 tbsp of oil, stir fry the prawns for few seconds and follow with the chopped garlic. Cook for another 1-2 minutes and push it one side of wok.
  • Drizzle 1 tsp of oil and add the whisked eggs in. Once the egg is set in the bottom, scramble it into small pieces. Remove the prawns and egg from wok and set it aside.
  • In the remaining wok, add 1 tbsp of oil add chopped onions and stir for few seconds, then add the carrots and green peas and cook for 2 minutes or until cook through.
  • Next add the rice and pour the sauce over the rice and fry with high heat for 2-3 minutes or until the sauce dry out. Place the prawns and eggs back in the wok and toss well to combine everything evenly and continue stir fry for another 1 minute.
  • Turn off the heat and sprinkle the chopped spring onions. Transfer to serving to serving plate and serve immediately.

2 tablespoons vegetable oil
1 large egg, beaten
1/2 pound peeled, deveined medium shrimp
Kosher salt
1 cup chopped broccoli florets
1 teaspoon minced garlic
1 teaspoon finely grated fresh ginger
1 teaspoon finely chopped jalapeno
1 teaspoon Shaoxing wine or dry sherry
3 cups cold cooked long-grain white rice
1 1/2 teaspoons Asian chili oil, or to taste

Steps:

  • Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that's only half set, about 10 seconds; scoop onto a plate.
  • Add the shrimp to the skillet, season with 1/4 teaspoon salt and stir-fry until just cooked through, about 3 minutes. Transfer to a bowl. Add the remaining 1 tablespoon oil to the skillet, then add the broccoli, garlic, ginger, jalapeno, Shaoxing and 1/4 teaspoon salt and stir-fry until crisp-tender, 2 to 3 minutes.
  • Add the rice, stirring to break up any clumps, and spread it out in the skillet. Cook until heated through, about 3 minutes. Return the egg, shrimp and any juices to the skillet and cook, stirring to break up the egg and mix it in thoroughly, about 1 minute. Season with additional salt if needed. Stir in the chili oil and serve.

4 chinese sausages, chopped
4 rashers rindless bacon, chopped
1 tablespoon ginger, grated
2 clove garlic, crushed
1 cup frozen asian stir-fry vegetables
1 red capsicum, seeded, finely chopped
1 celery stalk, finely chopped
4 eggs, lightly beaten
150 gram green prawns, peeled , finely chopped
2 1/2 cup long grain white rice, cooked
1/4 cup chinese cooking wine
1/4 cup soy sauce
1 tablespoon sweet chilli sauce
1 tablespoon char siu sauce
shredded green onions, to serve

Steps:

  • Heat 1 tablespoon oil in a wok or large frying pan on high. Stir-fry sausage and bacon, 1-2 minutes, until lightly browned. Add ginger and garlic, stir-fry 30 seconds. Remove from wok.
  • Heat another tablespoon oil in wok. Stir-fry Asian vegetables, capsicum and celery, 1 minute. Remove from wok.
  • Heat remaining oil in wok, swirling to coat sides. Pour in egg, tilting wok to make a thin omelette. Cook, 1 minute, until almost set. Add prawns and stir-fry, 1 minute, breaking up omelette. Toss rice through and stir-fry, 1-2 minutes.
  • Return sausage, bacon and vegetables to wok with wine and sauces. Toss to combine and stir-fry, 1-2 minutes, to heat through. Serve topped with shredded green onion.

200g long grain rice
175g frozen peas
2 tbsp oil , plus a drop extra
1 onion , chopped
3 rashers streaky bacon , chopped
1 tbsp tikka masala curry paste
250g peeled cooked tiger prawn , thawed if frozen
1 egg , beaten
soy sauce , to serve

Steps:

  • Tip the rice into a pan of boiling, salted water and simmer for 10 minutes, adding the peas for the last 3 minutes. Drain well.
  • While the rice is cooking, heat the 2 tablespoons of oil in a large frying pan or wok. Add the onion and bacon and stir fry for 3-4 minutes, until the onion starts to turn golden and the bacon begins to cook. Stir in the curry paste and cook for a few seconds, then tip in the prawns and heat them through for a minute or so.
  • Push the prawn mixture to one side of the pan and add the drop of oil to the other side. Pour the egg into the oil, stir until cooked like scrambled eggs, then mix into the prawns. Add the rice and peas and mix well. Serve immediately, with soy sauce for sprinkling, if you like.

1 red pepper, diced
¼ lb chorizo
½ teaspoon turmeric
1 teaspoon salt

1 ¼ cups long grain rice
1 ¾ cups water
⅔ cup pea
⅓ lb prawn

Steps:

  • Fry the onions, garlic, chilli, and red pepper with a little olive oil.
  • Add the chorizo after a minute.
  • Stir in the turmeric, salt, pepper, and long grain rice.
  • Pour in the water and simmer for 20 minutes.
  • Stir in the peas and prawns until prawns are pink and no longer translucent, about 3-4 minutes.
  • Enjoy!

250g long-grain brown rice
150g frozen peas
100g mangetout
1½ tbsp rapeseed oil
1 onion , finely chopped
2 garlic cloves , crushed
thumb-sized piece of ginger , finely grated
150g raw king prawns
3 medium eggs , beaten
2 tsp sesame seeds
1 tbsp low-salt soy sauce
½ tbsp rice or white wine vinegar
4 spring onions , trimmed and sliced

Steps:

  • Cook the rice following pack instructions. Boil a separate pan of water and blanch the peas and mangetout for 1 min, then drain and set aside with the rice.
  • Meanwhile, heat the oil in a large non-stick frying pan or wok over a medium heat and fry the onion for 10 mins or until golden brown. Add the garlic and ginger and fry for a further minute. Tip in the blanched vegetables and fry for 5 mins, then the prawns and fry for a further 2 mins. Stir the rice into the pan then push everything to one side. Pour the beaten eggs into the empty side of the pan and stir to scramble them. Fold everything together with the sesame seeds, soy and vinegar, then finish with the spring onions scattered over.

This tasty fried rice dish with succulent prawns, Asian sauces and a chilli kick is a great place to start. Reheating cooked rice requires caution due to a bacterium that can cause food borne illness. When dealing with cooked rice you should refrigerate as soon as cooled and do not reheat more than once. Because this recipe uses cooked rice it should not be reheated again. Discard any leftovers.

1 tablespoon sesame oil
