GROUND BEEF AND POTATO CASSEROLE
Easy Ground Beef and Potato Casserole recipe. Like a hamburger all in one dish. The ultimate quick weeknight comfort food.

Steps:
- Preheat the oven to 350°F. Spray a 9x13 inch pan with cooking spray. Set aside.
- In a medium skillet, brown the ground beef and the onion. Drain and set aside.
- Meanwhile, in a medium saucepan, melt the butter over medium low heat. Stir in the flour. Slowly add in the beef broth and milk, mixing until smooth. Bring to a gentle boil, cooking until thickened.
- Remove from heat and add in the cream of mushroom soup and water.
- Layer the bottom of the prepared dish with 1/2 of the potatoes, then 1/2 the soup mixture, then 1/2 the ground beef mixture. Repeat with the remaining potatoes, soup mixture and ground beef.
- Sprinkle the cheese over the mixture. Cover with aluminium foil and cook in the preheated oven for 75-90 minute. Remove and cook uncovered for an additional 5 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium skillet over medium heat, brown the ground beef; drain fat.
- In a medium mixing bowl, combine cream of mushroom soup, onion, milk, salt and pepper to taste.
- Alternately layer the potatoes, soup mixture and meat in a 11x7 inch (2 quart) baking dish. Bake in the preheated oven for 1 to 1 1/2 hours, or until potatoes are tender. Top with Cheddar cheese, and continue baking until cheese is melted.

This dish is best described as comfort food. With the cheesy ground beef layered atop a bed of buttery potatoes, you will keep coming back for more. I use a mandolin to thinly slice the potatoes.

- Preheat the oven to 400 degrees F (200 degrees C). Spray a baking dish with nonstick spray.
- Place sliced potatoes in a large bowl. Pour melted butter over top and sprinkle with salt; mix until potatoes are thoroughly coated. Line the bottom and sides of the prepared baking dish with potatoes, overlapping as needed.
- Bake in the preheated oven until potatoes are fork-tender, about 30 minutes.
- While the potatoes are baking, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Transfer beef to a large bowl and add condensed soup, 3/4 cup Cheddar cheese, and milk. Season with salt and pepper and mix until well combined.
- Remove potatoes from the oven. Pour beef mixture over top and return to the oven. Bake until heated through, about 15 minutes. Sprinkle remaining Cheddar over top and bake until melted, 4 to 5 more minutes.

Steps:
- Cook ground beef in skillet and drain.
- Pour vegetable oil into skillet heat on medium high.
- Add potatoes, peppers, onion, garlic powder, and crushed red pepper.
- Cook until potatoes are browned on the outside and soft on the inside, approximately 10-15 minutes.
- Drain oil from poatoes and place in large bowl.
- Add ground beef and salt and pepper to taste.
- Stir in ketchup until the beef and potato mixture is coated to your liking.
- Serve and enjoy!

- Wash the potatoes and prick with a toothpick or cake tester. Microwave on high until they are almost tender through. Let cool until they can be handled. Rub off the peel and cut into small pieces. (some people like the peels on fingerlings, so they can be left on). Heat the oil in a large skillet over medium-high heat. Add the onions once the skillet is hot. Saute for 3-5 minutes, until the onions have browned slightly and are translucent. Add the ground meat and begin to brown. After the meat has browned slightly, push the meat and onions to the side of the pan and add the remaining oil and let heat. When oil is hot, add the potatoes and garlic. Stir to evenly coat and reduce heat to medium. Cook, stirring infrequently, until potatoes are nicely browned, about 15-20 minutes. Serve with shredded cheddar cheese, if desired.

- In a large frying pan over medium-high heat, melt 1/2 tablespoon of the butter with 1/2 tablespoon of the olive oil.
- Add the onion and saute, stirring occasionally, until golden brown and just beginning to caramelize, 5-7 minutes.
- Do not allow the onion to scorch.
- Add the red and green peppers and saute until beginning to soften, 3-5 minutes longer.
- Transfer to a serving bowl and set aside.
- Add 1/2 tablespoon each of the remaining butter and olive oil to the same pan.
- Add half of the cubed potatoes and cook, turning to brown all sides, 5-7 minutes.
- If the potatoes are too dry, add a little more butter or oil.
- Transfer the browned potatoes to the bowl holding the pepper mixture.
- Repeat with the remaining butter, olive oil and potatoes.
- Return the mixture to the pan.
- Raise the heat to high so that it quickly warms through.
- Remove from the heat and season to taste with salt and pepper.
- Add the parsley and stir to combine.
- Return to the serving bowl and serve immediately.
