1/4 cup HEINZ Yellow Mustard
1/4 cup maple-flavored or pancake syrup
1 Tbsp. HEINZ Apple Cider Vinegar
1 ham steak (1 lb.)

Steps:

  • Preheat grill to medium heat. Mix mustard, syrup and vinegar in small bowl; set aside.
  • Grill ham steak 3 min. on each side. Brush with 1/4 cup of the mustard mixture; cook 1 to 2 min. more on each side or until heated through.
  • Serve with the remaining mustard mixture.

2 teaspoons vegetable oil
Four 1-inch thick ham steaks, cut from a whole boneless ham
3 tablespoons unsalted butter
1 Granny Smith apple, chopped
1 small yellow onion, chopped
1/4 cup apple cider vinegar
1 tablespoon light brown sugar
1 tablespoon yellow mustard seeds
Kosher salt and freshly ground black pepper

Steps:

  • For the ham steaks: Heat the oil on a cast-iron griddle over medium-high heat. Add the ham steaks and cook until golden brown on both sides, about 4 minutes per side.
  • For the apple-mustard chutney: Melt the butter in a medium saucepan over medium-high heat. Add the apple and onion and cook until softened, about 3 minutes. Add the apple cider vinegar, brown sugar, mustard seeds and some salt and pepper. Cook until thickened, about 5 minutes. Serve the chutney over the ham steaks.

One 20-pound bone-in fully cooked ham
1 1/2 cups maple syrup
1 1/2 cups Dijon mustard
1/2 cup soy sauce
1/2 cup dark brown sugar
1/2 cup apple cider vinegar
1/2 cup Worcestershire sauce
Pinch cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the ham in a roasting dish with 1 cup water in the bottom of the dish. Roast for 1 hour and 15 minutes. (Check the ham after 45 minutes and add more water if necessary or tent with aluminum foil if it is getting past a dark golden brown.)
  • Meanwhile, combine the syrup, mustard, soy sauce, brown sugar, vinegar, Worcestershire and cayenne in a saucepan over medium-high heat. Cook, stirring frequently, until the mixture is thick and bubbly, 15 to 20 minutes.
  • If you used it, remove the foil from the ham and slather the ham with the glaze. Return the ham to the oven uncovered. Continue to roast, brushing the ham with the glaze every 15 minutes, until the internal temperature is between 140 and 150 degrees F, another 1 hour and 30 minutes. (If the ham starts to become too dark on the outside, tent it with aluminum foil. We are looking for a dark, sticky, flavorful glaze on the outside of the ham. Use all the glaze! Really slather it on!)
  • Remove the ham from the oven, remove the foil, brush with any remaining glaze and cook, uncovered for another 5 minutes. Let it rest for 20 to 30 minutes.
  • Serve hot or at room temperature.

As we approach autumn, I look forward to the fresh apple cider that is abundant at that time. And I look for many ways to incorporate it in my cooking. Sweet and salty, the ham is great served with roasted potatoes and applesauce for a fine fall meal.

2 bay leaves
2 (1 lb) ham steaks, patted dry (about 1/3 to 1/2 inch thick each)
2 1/2 cups fresh apple cider
3 tablespoons pure maple syrup
2 tablespoons Dijon mustard
pepper, to taste
1/2 cup madeira wine

Steps:

  • Preheat oven to 350 degrees. Place bay leaves in 15x10x2-inch glass baking dish. Place ham steaks side-by-side in dish, overlapping slightly, if necessary. Pur 1-1/2 cups cider over ham (more than likely, the cider will not cover the ham.).
  • Whisk 2 T. maple syrup and mustard in a small bowl to blend; spread over top of ham steaks. Sprinkle with pepper. Bake ham steaks for 40 minutes.
  • Meanwhile, combine 1 cup apple cider, 1 T. maple syrup, and the Madeira in a medium saucepan. Boil until reduced to 1/2 cup, about 15 minutes.
  • Spoon sauce over ham and serve.

2 tablespoons canola oil, divided
3 bone-in ham steaks (about 1 pound each), divided
¼ cup firmly packed dark brown sugar
¼ cup pure maple syrup
2 tablespoons spicy brown mustard

Steps:

  • Preheat oven to 350°. In a large skillet, heat 2 teaspoons oil over medium-high heat. Pat 1 ham steak dry with a paper towel. Place ham in skillet; cook 2 minutes per side or until lightly browned. Place ham on a large rimmed baking sheet. Repeat procedure twice with remaining oil and ham.
  • In a small saucepan, combine brown sugar, syrup, and mustard. Bring to a simmer over medium heat, stirring occasionally. Reduce heat to low; simmer 2 minutes. Spread 3 tablespoons maple syrup mixture over ham. Cover and set aside remaining maple syrup mixture. Bake ham steaks, uncovered, for 10 minutes.
  • Cut ham into serving pieces; place on a platter. Drizzle with remaining maple syrup mixture.
