This easy hashbrown casserole recipe comes together quickly with help from frozen hashbrown potatoes and broccoli, plus cooked ham. Perfect for brunch or dinner!

3 cups frozen hashbrown potatoes
1 cup frozen chopped broccoli
8 ounces cooked ham (diced small)
14 ounces condensed cream of potato soup ( (low sodium if you can find it))
1 cup plain Greek yogurt (or sour cream)
8 ounces shredded sharp cheddar cheese
3/4 cup freshly grated Parmesan cheese ((grate your own for best flavor))
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon black pepper
1/4 teaspoon salt (optional, as condensed soups are usually very salty)

Steps:

  • Heat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish with olive oil or cooking spray.
  • In a large bowl, mix potatoes, ham, broccoli, cream of potato soup, yogurt, and cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese.
  • Bake 40-45 minutes, or until bubbly and lightly brown.

3 cups (about 10 ounces) frozen hash browns, thawed
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1/2 small zucchini, diced (about 1/2 cup)
1/2 small red bell pepper, diced (about 1/2 cup)
1 ounce (about 1 slice) ham, chopped
1/3 cup shredded sharp Cheddar
1/2 cup heavy cream
1 tablespoon finely chopped fresh chives
Large pinch cayenne
3 large eggs

Steps:

  • Preheat the oven to 450 degrees F.
  • Pat the hash browns dry and add to a large bowl. Melt 3 tablespoons of the butter in a medium skillet and add to the hash browns with salt and pepper and mix well. Press the hash browns on the bottom and up the sides of a 9-inch pie pan, pushing them gently into the corners. Bake until golden brown, 20 to 25 minutes. Remove the crust from the oven and reduce the oven temperature to 375 degrees F.
  • Meanwhile, melt the remaining tablespoon butter in the same skillet over medium-high heat. Add the zucchini and bell pepper and cook, stirring, occasionally, until slightly softened, about 3 minutes.
  • Spoon the vegetables into the crust and sprinkle with the ham and Cheddar.
  • Whisk the cream, chives, cayenne and eggs together in a bowl with 1/4 teaspoon salt. Pour the mixture into the crust. Bake the quiche until golden brown and just set in the center, 20 to 25 minutes.
  • Cool at least 10 minutes before serving. Serve warm or at room temperature.

1 package (16 ounces) frozen cauliflower
2 teaspoons plus 2 tablespoons butter, divided

30 ounces frozen hash browns
12 eggs
4 ounces sour cream
1/4 cup milk
1 teaspoon salt
1/2 teaspoon pepper
1 bell pepper
1 onion
1 cup cooked ham, diced
8 ounces shredded cheddar cheese

Steps:

  • Preheat the oven at 350.
  • Spray a 9x13 casserole with cooking spray. Spread out frozen hash browns and spray the top of the hash browns with cooking spray as well.
  • Bake for 25 minutes.
  • While the hash browns are baking, saute the pepper and onion in a little oil and season to taste. Add the ham during the last few minutes of cooking. Let cool.
  • Whisk the eggs with the sour cream, milk, salt and pepper.
  • Add the vegetables and ham mixture to the eggs with 1/3 of the cheese.
  • Spread a 1/3 of the cheese over the hash browns.
  • Pour the egg/vegetable/ham/cheese mixture on top.
  • Spread the rest of the cheese on top of the casserole.

2 tablespoons butter
3 cloves garlic, finely chopped
One 6-ounce slab country ham, diced
1 small onion, finely chopped
Kosher salt and freshly ground black pepper

1 1/2 cups milk
1/2 cup chicken stock
1 1/2 cups shredded sharp Cheddar
One 22-ounce package frozen shredded hash brown potatoes
3 green onions, thinly sliced

Steps:

  • Preheat the oven to 350 degrees F. Add the butter to a large heavy skillet. Once foaming and melted, add the garlic, ham, onions and some salt and pepper. Saute until the onions are tender and the ham is browned, about 4 minutes. Stir in the flour and cook until pasty, about 2 minutes. Add the milk and stock and stir until smooth. The mixture will begin to thicken as it comes to a simmer. Once thick, turn off the heat and add 1 cup of the shredded cheese. Stir until melted. Add the hash browns and green onions and stir until well mixed. Add to a 13-by-9-inch casserole dish and sprinkle with the remaining 1/2 cup cheese. Bake until the top is golden and the potatoes are tender, 45 minutes.

To leftover ham and a bit of cabbage, add some fridge and pantry staples and create a warm, comforting casserole for your family to enjoy. Toss a salad while the casserole is baking, add some biscuits or cornbread, and your meal is complete!

2 cups chopped cooked ham
1 ½ cups frozen Southern-style hash brown potatoes, thawed
5 tablespoons unsalted butter, divided
1 ½ cups chopped onions
5 cups chopped cabbage
½ cup shredded carrots
3 tablespoons all-purpose flour
½ teaspoon salt
¼ teaspoon dry mustard
¼ teaspoon white pepper
2 cups milk, or more as needed
1 cup grated sharp Cheddar cheese
3 slices bacon strips, cooked and crumbled
¾ cup buttery round crackers, crumbled

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
  • Spread out chopped ham on the bottom of the prepared dish.
  • Set hash browns on a microwave-safe plate and microwave on high power for 1 minute and 30 seconds. Potatoes should be thawed and feel slightly warm to the touch, but not be cooked. Set aside.
  • Melt 2 tablespoons butter in a large skillet over medium heat and cook onions until they are just starting to turn clear, 2 to 3 minutes. Add chopped cabbage and continue to cook, stirring often, until cabbage wilts down a little but is still crisp, 3 to 5 minutes. Stir in shredded raw carrots and microwaved hash browns, then add mixture to the baking dish.
  • Wipe out the skillet and melt the remaining 3 tablespoons butter over medium heat. Combine all-purpose flour, salt, dry mustard, and white pepper in a small bowl. Sprinkle flour and seasonings over the melted butter and stir, constantly, until flour and butter are well mixed and the mixture is bubbly, about 3 minutes. Allow to bubble for 1 minute, while stirring.
  • Gradually pour in milk, stirring constantly to avoid lumps. Cook, stirring, until the mixture boils and thickens, 3 to 5 minutes. If the mixture is too thick, stir in an additional 3 to 4 tablespoons milk. Remove from heat.
  • Add half of the grated Cheddar cheese and stir until it is melted, then add the remaining half and repeat.
  • Pour sauce over the casserole and top with crumbled bacon and cracker crumbs.
  • Bake in the preheated oven until the top is bubbly and brown, 30 to 35 minutes. Serve warm.

1 tablespoon canola oil
1 medium onion, chopped
3 stalks celery, chopped
2 cups left-over ham, chopped (I used my left-overs & I'm approximating the 2 cups, use more or less to your liking)
1 (16 ounce) bag frozen hash brown potatoes, partially thawed
1 (12 ounce) bag frozen mixed vegetables (I used carrots, corn, peas & green beans)
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of asparagus soup or 1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can cheddar cheese soup (Campbell's condensed)
1/2 cup medium cheddar, cubed
1 pinch salt
1 pinch black pepper
1 pinch garlic granules
paprika, to sprinkle on top (optional)
1/2 cup green onion, chopped (optional garnish)
1/2 cup fresh parsley, finely chopped (optional garnish)
nonstick cooking spray

Steps:

  • Preheat the oven to 350*F. Prepare a large casserole dish (mine is 12 X 9 X 4) by liberally spraying it with non-stick cooking spray. Set aside.
  • Heat canola oil in frying pan over medium-high heat. Add ham, onion, and celery. Cook until onions and celery are soft. (Approximately 5 minutes).
  • Combine the remaining in ingredients (except the paprika) in a large mixing bowl. Add the ham/onion/celery mixture to the mixing bowl. Stir well to incorporate.
  • Spread the entire mixture into prepared casserole dish; sprinkle with paprika for some color.
  • Bake 1 hour or until the casserole is heated all the way through and the vegetables are tender. Garnish with green onions and parsley, if desired.
