CRANBERRY CORNBREAD BITES

2 cups fresh or frozen cranberries
1/3 cup sugar
1 orange, zested
Pinch kosher salt
Nonstick cooking spray
3/4 cup yellow cornmeal
3/4 cup all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon kosher salt
2/3 cup whole milk
1 large egg
6 tablespoons unsalted butter, melted
3 tablespoons unsalted butter, softened
1 tablespoon finely chopped fresh chives
4 ounces thinly sliced deli ham, each slice quartered

Steps:

  • Special equipment: a 24-cup mini-muffin tin
  • For the cranberry relish: Combine the cranberries, sugar, orange zest, salt and 1 cup water in a medium saucepan and bring to a simmer over medium-high heat. Simmer, stirring occasionally, until the cranberries break down and the relish has thickened, about 12 minutes. Let cool completely. The relish can be made up to 3 days ahead and kept refrigerated in an airtight container.
  • For the mini cornbread muffins: Preheat the oven to 350 degrees F. Spray a 24-cup mini-muffin tin with cooking spray.
  • Whisk together the cornmeal, flour, sugar, baking powder and salt in a large bowl. In another bowl, whisk together the milk, egg and butter until well combined. Pour the milk mixture into the cornmeal mixture and whisk until just incorporated. Spoon the batter evenly into the prepared muffin cups. Bake until a wooden pick inserted into the center of a muffin comes out clean, about 12 minutes. Let cool in the tin 5 minutes. Remove from the tin.
  • For the cranberry cornbread bites: Stir together the butter and chives in a small bowl. Cut the muffins in half crosswise with a serrated knife. Spread a little of the chive butter on both sides of a muffin. Top the bottom half with a piece of ham. Spoon a dollop of cranberry sauce on top. Sandwich with the muffin top and place on a platter. Repeat with the remaining muffins.

1 (8 ounce) round Brie cheese, rind removed
cooking spray
1 sheet frozen puff pastry, thawed
½ cup cranberry sauce
⅓ cup finely chopped walnuts
sea salt to taste

Steps:

  • Place Brie cheese in the freezer for 20 minutes. Oil a mini muffin pan with cooking spray.
  • Roll 1 puff pastry sheet out into a 10x14-inch rectangle. Cut the sheet lengthwise into 4 even strips and crosswise into 6 even strips; there should be 24 squares. Separate and press them gently into the muffin cups.
  • Cut chilled Brie cheese into 24 pieces approximately 3/4-inch in size. Add 1 teaspoon cranberry sauce to each pastry-lined muffin cup; press in 1 piece of Brie and top with 1 teaspoon of chopped walnuts. Sprinkle bites with sea salt. Chill for at least 30 minutes and up to 3 days.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake bites in the preheated oven until golden brown, 18 to 20 minutes.

1 cup fresh or frozen (thawed) cranberries
1 jar (10.5 oz) red pepper jelly
1/4 cup sugar
1/4 cup water
1/4 teaspoon crushed red pepper flakes
1 teaspoon chopped fresh rosemary leaves
30 pecan halves (about 1/2 cup)
2 packages (2.1 oz each) frozen mini phyllo shells, thawed
1 package (8 oz) Camembert cheese, cut into 1/2-inch cubes
Additional fresh rosemary leaves, if desired

Steps:

  • In large saucepan, heat cranberries, jelly, sugar, water and pepper flakes to boiling over medium-high heat, stirring often. Reduce heat; simmer 10 to 15 minutes, stirring often, until cranberry skins begin to split and mixture begins to thicken. Remove from heat; stir in chopped rosemary. Cool completely, about 45 minutes.
  • Heat oven to 350°F. Spread pecans in ungreased shallow pan. Bake uncovered 6 to 10 minutes, stirring occasionally, until light brown.
  • Increase oven temperature to 375°F. Spray cookie sheet with cooking spray. Place phyllo shells on cookie sheet; place 1 cheese cube in each shell. Bake 5 minutes or until cheese is melted. Top with 1/2 teaspoon cranberry mixture, 1 toasted pecan half and 1 rosemary leaf. Serve immediately.

A bit sweet and a bit savory...these tiny cheeseball bites are the perfect appetizer!

Number Of Ingredients 12

2 8 oz. cream cheese; softened
1 8 oz. can crushed pineapple; drained
1 tsp. fresh chives; chopped fine*see notes
Additional fresh chives for tying around the cheese bites
1/2 tsp. dried thyme
onion powder; just a dash accoring to taste
1 tsp. Kosher salt
3/4 cup dreid cranberries; chopped
3/4 cup dried cranberries; chopped
3/4 cup pecans; chopped
Crackers (I used Nabisco Good Thins Simply Salt Gluten Free crackers, but any type of cracker will work great!)
Additional fresh chives for tying around the cheese bites

Steps:

  • Place all cheese bite ingredients in a bowl and combine well. Form into 1"-1 1/2" balls. Place on a baking sheet and cover with plastic wrap. Refridgerate for at least 40 minutes. Place chopped pecans and chopped cranberries in a shallow dish, you can mix them or keep them separate...I like to roll some in each ingredient and them combine the two on some just for a bit of color and flavor variety! Remove cheese bites from fridge. Gently shape cheeseballs into square, tiny package like shapes and roll in cranberry/pecan mixture. "Tie" with a fresh chive and place on a cracker. Arrange on a platter. Enjoy!

1 8-oz wheel of soft ripened brie cheese, cut into 12 pieces
1/3 cup of cranberry sauce
12-24 pecan halves

Steps:

  • Preheat the oven to 375 degrees Fahrenheit and spray a 12-count muffin pan with non-stick cooking spray and set aside.
  • Roll the dough out and pinch the perforated edges together then cut the dough into 12 equal squares.
  • Gently press one square of the dough into each of the cups of the pan then place a piece of cheese in the middle.
  • Evenly spoon the cranberry sauce on top then bake for 12-15 minutes or until they start to turn a light golden color.
  • Press 1-2 pecan halves into the tops of each of the bites then let them cool for at least 10 minutes before serving with fresh rosemary sprigs for garnish if desired.
