1 pork tenderloin
4 Tbsp grainy mustard
2 Tbsp freshly minced sage
1 Tbsp freshly minced parsley
½ tsp salt
¼ tsp freshly ground pepper
1 cup breadcrumbs
2 Tbsp butter
2 Tbsp canola oil

Steps:

  • Preheat oven to 425F.
  • Combine mustard, sage, and parsley along with salt and pepper in a small bowl.
  • Cut pork tenderloin in half width-wise and rub mustard mixture all over the pork. (Cutting it in half will make it easier to manage while you fry it.)
  • Spread breadcrumbs onto a plate and gently press the pork into the breadcrumb mixture so all sides are covered.
  • Place a cooling rack on top of a cookie sheet. This is what you will roast the pork on.
  • Heat a large skillet over medium heat and add butter and oil. When the butter stops foaming add the pork tenderloin.
  • Cook the pork, turning it very gently to brown it on all sides without losing too much of the coating. Transfer to the rack on the cookie sheet and into the oven.
  • Bake until the pork is cooked to an internal temperature of at least 155F, this should take about 20 minutes. (The temperature will continue to increase while it rests.)
  • Allow to rest for 10 minutes lightly tented with aluminum foil.
  • Cut into 1 cm wide slices and serve.

1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon dried thyme

1 1/4 pounds pork tenderloin
1 tablespoon olive oil
1 teaspoon minced garlic

Steps:

  • Preheat the oven to 450 degrees F.
  • In separate bowl mix dry ingredients such as garlic powder, oregano, cumin, coriander, thyme and salt. Stir mixture with a fork until all the ingredients are well combined and they form a seasoning. This will be used as a rub to ensure the pork is well seasoned throughout. Sprinkle the rub over the tenderloin with a dry hand, then rub the pork with the seasoning over both sides of the meat, pressing gently so the seasoning adheres well to the tenderloin.
  • In a large skillet over medium-high heat, add the olive oil and heat. Add the minced garlic and saute, stirring, for 1 minute. Put tenderloin in the pan and cook for about 10 minutes, searing each side using tongs to turn the meat. Transfer meat to a roasting pan and bake for 20 minutes. Slice and serve.

2 ½ pounds pork tenderloin
⅛ teaspoon mustard powder to taste
⅛ teaspoon dried thyme
½ cup dry sherry
½ cup soy sauce
3 cloves garlic, minced
2 tablespoons fresh ginger root, minced
¾ cup apple jelly
2 tablespoons dry sherry
1 tablespoon soy sauce

Steps:

  • Rub meat with the mustard powder and thyme to taste. Place in a nonreactive dish and add 1/2 cup sherry, 1/2 cup soy sauce, the garlic and the ginger. Coat the loin well, cover and refrigerate overnight.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Bake in the preheated oven for 25 minutes per pound, or until the internal temperature reaches 145 degrees F (63 degrees C). Baste the pork occasionally while cooking.
  • Meanwhile, heat the apple jelly in a small saucepan over medium heat. Add 2 tablespoons sherry and 1 tablespoon soy sauce, stir well, reduce heat to low and let simmer. Pour over the tenderloin when it's done.

2 lbs pork tenderloin, trimmed
coarse salt
ground black pepper
1/4 cup grainy mustard
2 tablespoons Dijon mustard
2 tablespoons sour cream

Steps:

  • Heat the oil in a large skillet over high heat.
  • Season the pork with salt and pepper.
  • Transfer to the skillet and cook, turning, until browned all over, 5 to 10 minutes.
  • Reduce the heat to medium-low and cover the skillet.
  • Cook the pork, turning occasionally, until done, 20 to 25 minutes.
  • Remove the pork from the skillet, cover with aluminum foil and let rest for 10 minutes.
  • Reserve the pan juices.
  • To the juices in the skillet, add the mustards, sour cream and any accumulated juices from the resting pork.
  • Whisk over medium heat until heated through. Do not boil.
  • Add water if the sauce is too thick.

1 1/2 pounds pork tenderloins
3 tablespoons brown sugar
2 tablespoons grainy mustard
2 teaspoons chopped fresh or dried rosemary
2 tablespoons dry sherry

Steps:

  • Pat the tenderloins dry with paper towels.
  • Combine the remaining ingredients in a bowl and stir. Add pork tenderloins and turn to coat well with marinade. Marinate for 15 minutes or as long as overnight.
  • Heat a large cast iron skillet or grill pan over medium-high heat until smoking. (Alternately, heat a charcoal or gas grill to high; bank coals or turn off burner on one side.) Season tenderloins with salt and pepper. Brush pan with olive oil and add tenderloins; reduce heat to medium-low. Cook, turning tenderloins every 3 to 4 minutes, until deeply caramelized on all sides and until desired internal temperature, about 20 to 25 minutes. (You can also broil the tenderloins in the oven - about 10 minutes on one side, then turn and cook about 5 minutes on the other.)
  • Remove and lightly tent with foil; let rest about 10 minutes before cutting into 1/4- to 1/2-inch slices.

Here, we've quickly allowed lean pork tenderloin to mingle with a sweet mustardy marinade before getting roasted and sliced and served with a hearty fall salad loaded with sweet oranges and tart apples.

1 large or 2 small pork tenderloins (about 1 3/4 pounds total)
Kosher salt and freshly ground pepper
1/4 cup grainy mustard
2 tablespoons pure maple syrup
1 tablespoon finely chopped fresh sage
3 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
2 navel oranges
1 tart apple, thinly sliced
1/2 head radicchio, thinly sliced
1/2 cup chopped fresh parsley
1/3 cup toasted walnuts, roughly chopped

Steps:

  • Preheat the oven to 425˚ F. Season the pork all over with salt and pepper. Combine the mustard, maple syrup, sage, 2 tablespoons lemon juice and 1 tablespoon olive oil. Rub all over the pork and set aside to marinate while you prepare the salad.
  • Meanwhile, with a sharp paring knife, remove the peel and pith from the oranges. Working over a large bowl, cut along the membranes to remove the segments. Squeeze the membranes to release any remaining juice into the bowl. Add the apple, radicchio, parsley, walnuts and remaining 1 tablespoon each olive oil and lemon juice to the bowl. Season with salt and pepper and toss to combine.
  • Line a rimmed baking sheet with nonstick foil. Add the pork to the pan and drizzle with any remaining marinade. Roast until a thermometer inserted into the center of the pork registers 135˚ F, 15 to 20 minutes. Switch the oven to broil and broil until the marinade is browned, about 2 minutes. Transfer the pork to a cutting board and let rest 5 minutes.
  • Slice the pork and serve with the apple and orange salad.
