SCHINKENNUDELN (GERMAN HAM AND NOODLES CASSEROLE)
Schinkennudeln is an easy German recipe for ham and noodles. This version, which includes Swiss cheese and is baked in the oven until bubbly, is inspired by the one served at the Germany booth at the Epcot Food & Wine Festival at Walt Disney World.

Steps:
- Preheat the oven to 375ºF (190°C). Spray a 9×13-inch baking dish with cooking spray and set aside.
- Boil the egg noodles in salted water until al dente. Drain, return noodles to the empty pot and set aside off the heat.
- Meanwhile, in a medium skillet over medium-high heat melt the butter and add the chopped ham and onion. Cook, stirring frequently, until the onion has softened, about 4 to 5 minutes. Remove from the heat and set aside.
- To the pot of drained cooked egg noodles stir in the onion and ham, cream or milk, eggs, seasonings, and half the grated cheese. Pour the mixture into the prepared baking dish, cover with foil and bake for 30 minutes.
- Remove from the oven, top with the remaining grated cheese and return to the oven, uncovered, for another 15 minutes until melted and bubbly.
- Allow the casserole to set and cool for about 10 to 15 minutes before cutting into it to serve.

SCHINKENFLECKERLN (HAM-NOODLE CASSEROLE)
This casserole is of Austrian origin and was brought over by immigants before the turn of the last century. My mother made a simplified version of this recipe for the family (recipe#512343); but, for a special occasion, this recipe is an authentic version.

Steps:
- Butter a 2-quart casserole. Preheat oven to 350 degrees F.
- Cook the onion in the butter to soften. Add the cooked, drained noodles to the pan and stir to coat well. Add the sour cream and beaten eggs, stirring to mix. Mix in the ham, caraway seeds, mace and pepper. Add the milk to lighten the mixture, if needed.
- Turn into prepared casserole. Top with bread crumbs, if desired, and paprika for color.
- Bake 40-45 minutes. Do not freeze this casserole.

Steps:
- 1. Preheat oven to 350F. Grease a 9x13 baking dish.
- 2. In a large saucepan, melt butter and whisk in flour until smooth. Take off heat and cool slightly.
- 3. In a medium bowl, beat egg whites until stiff peaks form.
- 4. Add the egg yolks to the cooled butter and flour mixture. Stir in sour cream, salt, pepper and nutmeg. Combine the cooked and drained noodles and sour cream mixture. Stir in ham. Gently fold in the beaten egg whites.
- 5. Put into prepared baking dish and cover with foil. Bake, covered, for 20 minutes. Remove foil, sprinkle cheese over top and cook an additional 25 minutes or until cheese starts to brown.

Steps:
- Drop noodles into boiling salted water.
- Cook three minutes.
- Remove from heat, and cover let stand, 7 minutes-- Drain-- Stir butter and onion into noodles.
- Stir eggs into sour cream.
- Then stir the sour cream mixture into ham and caraway and pepper into the nooddles.
- Sprinkle bread crumbs evenly into a greased 2 quart casserole dish.
- Pour noodles mixture on top.
- Sprinkle with paprika.
- Cook uncovered at 350 degrees until set, about 40 minutes.
- Serve from casserole, or unmold onto platter--.

The Austrians use noodles in the shape of little squares for this dish. If you wish to be completely authentic, you can break your raw noodles into 3/4-inch pieces, then cook them until tender.
