3/4 cup olive oil
1/4 cup fresh lemon juice
6 garlic cloves, chopped
3 tablespoons chopped fresh parsley
2 tablespoons fresh thyme leaves
6 large skinless boneless chicken breast halves
3 ounces cream cheese, room temperature
2 tablespoons guava paste* (about 1 1/2 ounces)
2 1/2 ounces fresh spinach leaves, chopped (2 cups loosely packed)
2 tablespoons canola oil
1/2 cup dry white wine
1/2 cup low-salt chicken broth
4 tablespoons (1/2 stick) butter
1 large mango, halved, pitted, peeled, cut into 1/2-inch-thick slices

Steps:

  • Whisk first 5 ingredients in large bowl. Add chicken breasts; turn to coat. Cover chicken breasts and chill 3 to 4 hours, turning occasionally.
  • Whisk cream cheese and guava paste in medium bowl to blend. Stir in spinach. Cover and chill to firm slightly, at least 2 hours. Transfer to pastry bag.
  • Remove 1 chicken breast from marinade, scraping excess marinade back into bowl. Insert small sharp knife into 1 side of chicken breast; move knife in arc to create large pocket, keeping opening about 1 1/2 inches long. Repeat with remaining chicken. Pipe filling through openings in chicken breasts to fill pockets. Close openings with metal turkey pins or toothpicks. (Can be made 4 hours ahead. Cover and chill.)
  • Heat 1 tablespoon canola oil in each of 2 heavy large skillets over medium heat. Add 3 chicken breasts to each skillet. Cook chicken until brown, about 3 minutes per side. Transfer to plate. Transfer any juices from 1 skillet into second skillet. Add wine and broth to second skillet. Bring to boil. Add chicken breasts to wine mixture in skillet. Cover skillet; reduce heat to medium and simmer until chicken is cooked through, basting occasionally, about 10 minutes. Transfer chicken to work surface; let stand 10 minutes.
  • Meanwhile, melt butter in another heavy large skillet over medium-high heat. Add mango slices and sauté until brown, about 2 minutes per side.
  • Slice chicken diagonally into 1/2-inch-thick slices. Arrange chicken on platter. Boil juices in skillet until slightly thickened and sauce is reduced to 3/4 cup, about 3 minutes. Drizzle sauce over chicken and surround with mango.

Steps:

  • Place guava paste, water and red pepper in medium microwaveable bowl. Microwave on HIGH 1 min.; stir until paste is dissolved and mixture is well blended. Stir in ham; set aside.
  • Heat 1/4 cup of the dressing in large nonstick skillet on medium heat. Add 6 of the chicken thighs; cook 2 to 3 min. on each side or until browned on both sides. Remove chicken from skillet; cover to keep warm. Repeat with remaining 1/4 cup dressing and remaining 6 thighs. Place all thighs in skillet; top with guava mixture. Bring to boil. Reduce heat to medium-low; cover. Simmer 20 min. or until chicken is cooked through (165ºF).
  • Remove chicken and sauce from skillet; place in serving dish. Cover to keep warm. Add spinach to same skillet; cook 5 min. or until wilted, stirring occasionally. Spoon spinach onto serving plate; top with the chicken.

1 cup guava juice, plus 1 cup (found in international aisle of your local supermarket)
1/2 cup white wine, plus 1/2 cup
1 pint black mission figs
Turbinado sugar (brown granulated sugar)
2 cups baby spinach, cleaned
1/4 cup olive oil
Salt and pepper

Steps:

  • Marinate the chicken breasts in 1 cup of the guava juice and 1/2 cup of white wine for approximately 15 to 30 minutes.
  • In a saucepan over medium heat, combine the remaining 1 cup guava and 1/2 cup wine. Bring to a boil, reduce to a simmer, and cook until the mixture is reduced to a glaze consistency, the time will vary. You want the glaze to have a thick, but not jelly-like consistency.
  • Cut the figs in half lengthwise, and coat the flesh with turbinado sugar. Brush with oil and then sear in a hot skillet, sugar side down, for approximately 1 to 2 minutes, until the sugar melts but does not burn.

2 cloves garlic, minced
1/2 red onion, chopped fine
1 tablespoon ancho puree
1 tablespoon honey

2 pounds boneless chicken thighs

Steps:

  • Combine guava, vinegar, garlic, onion, ancho and honey in a small saucepan and reduce to 1/2 cup. Place 2 skewers through each thigh and season with salt and pepper. Brush with glaze and grill 4 minutes per side. Brush with glaze several times while on grill. Cut each thigh in half and serve.

1/4 cup sugar
1 medium shallot, finely chopped
1 garlic clove, smashed and peeled
Leaves from 1 sprig fresh rosemary, finely chopped (about 1 1/2 teaspoons)
Kosher salt and freshly ground black pepper
8 pieces mixed chicken thighs and drumsticks, about 2 1/2 pounds
1/2 cup seedless black grapes, halved
1/2 cup seedless red grapes, halved

Steps:

  • Bring wine, sugar, shallot, garlic, rosemary, 1 1/2 teaspoons kosher salt and 1/2 teaspoon pepper to a boil in medium saucepan. Simmer over medium-low heat until thickened and reduced to about 3/4 cup, about 12 minutes. Let wine mixture cool completely.
  • Pour wine mixture into a medium bowl. Add the chicken pieces, cover and marinate mixture for 1 hour.
  • Preheat oven to 400 degrees F. Cover the top insert of a 2 piece broiler pan with foil, place on bottom pan. Evenly space the chicken on the pan skin-side up, reserving marinade. Roast the chicken until cooked through about 40 minutes.
  • Meanwhile, pour the reserved marinade into a small skillet and add the grapes. Bring mixture to a rolling boil, and cook until the grapes are tender, about 5 minutes. Baste the chicken with the grape mixture, including both the grapes and the liquid every 15 minutes until the chicken and grapes are glazed and the chicken is cooked through, about 40 minutes. Serve.

1 lime, juiced
2 sprigs fresh rosemary
1 teaspoon crushed garlic
2 tablespoons extra-virgin olive oil
1 1/2 pounds boneless, skinless chicken breast
Salt and freshly ground black pepper
1/3 cup all-purpose flour, for dredging

Steps:

  • Turn on broiler. Line a baking sheet with aluminum foil and set aside.
  • In a small saucepan, over medium-low heat, combine guava jelly, juice from lime, rosemary sprigs, and crushed garlic. Heat through.
  • In large frying pan, over medium-high heat, heat oil. Season chicken breasts with salt and pepper. Dredge seasoned chicken in flour and place in hot pan. Cook chicken 3 to 4 minutes per side or until cooked through.
  • Transfer to baking sheet. Strain guava mixture into a small bowl. Generously brush guava mixture over chicken breasts. Place under broiler 4 to 6 inches from heat source for 1 minute. Turn chicken over and repeat 2 times. Remove from broiler, brush once more with guava mixture. Serve hot.

1 cup oyster sauce
1 cup sugar
1 cup catsup
1 cup soy sauce
1/2 teaspoon Chinese five spice powder

  • Combine all ingredients except chicken in a 2 gallon zip loc bag and mix well.
  • Add chicken and seal bag.
  • Rub bag to evenly coat chicken pieces.

1/4 cup olive oil
1 tablespoon ground cumin
1/2 teaspoon salt

  • Mix lime juice, olive oil, cumin, salt, pepper and garlic together. Pour over chicken in a ziploc freezer bag. Force out the excess air and message to coat chicken pieces. Refrigerate for at least 3 hours, preferably overnight.
  • Discard marinade. Pat chicken dry with a paper towel. Season the chicken with additional salt, pepper and a little extra cumin.
  • Heat up the burners on a gas grill or light charcoal briquettes to preheat the grilling surface. Grill the chicken over medium heat using an indirect heating method to avoid flare-ups. Cook for approximately 30 minutes, turning occasionally until chicken begins to brown.
  • For the glaze, mix guava jelly, apple juice, lemon juice and brown sugar in a 1-quart saucepan and bring to a boil. Reduce heat to low and simmer, uncovered, stirring frequently until glaze thickens and reduces somewhat, about 5 to 10 minutes; remove from heat.

1 yellow onion, diced
4 ounces guava paste, cut into chunks
2 tablespoons ketchup
1 tablespoon apple cider vinegar
1 tablespoon sugar

1/4 teaspoon ground allspice
1/4 teaspoon curry powder
1/4 teaspoon cumin
1/4 teaspoon fresh cracked pepper
2 tablespoons lime juice
1 tablespoon dark rum
1 1/2 lbs salmon fillets (enough for two)
1 mango, diced
1 avocado, diced
1 small yellow onion, diced
1/4 cup fresh cilantro, chopped
3 dashes cumin
3 dashes dried chipotle powder (or regular)
1 lime, juice of

Steps:

  • Sauté only one half of the onion in oil over medium heat for 7-10 minutes until they become kind of brown.
  • Add in everything except the rum, lime and salmon. Stir together, breaking up the guava paste. Once smooth, stir in the rum and lime juice then remove from heat. Allow to cool while cutting up the salad.
  • Cube the mango, avocado, and onion. Toss with the spices and lime juice.
  • Take the remaining half of the diced onion and cover top of salmon, placed skin side down in a foil covered pan. Pour the slightly cooled glaze over the top and broil for 8 - 12 minutes depending on how you like your salmon cooked.
  • Split in half and serve on top of the salad. Squeeze half a lemon over top of entire dish.

Jerk is a powerfully complex blend of spices and aromatics redolent with cinnamon, allspice, cumin and chiles. Historically, it's tied to Maroons fleeing enslavement in the Jamaican foothills, and is among the most iconic flavors of the Caribbean. True jerk is grilled over an open fire, and is as much a seasoning as it is an action, because you can "jerk" pork, goat, chicken and even fruits and vegetables. It's often applied to dark, often gamey or gristly cuts of meat that stand up to complex flavors. While not traditional, this leaner, lighter pork is an excellent vessel for jerk. It's especially good when marinated overnight and grilled, but is so simple to prepare it can easily be made for a weeknight celebration. A simple jelly glaze at the end adds sweetness and tang, caramelizing under a quick broil. Pair with rice and peas, maduros or a bright, fresh garden salad.

1 (2-inch) piece fresh ginger, scrubbed and finely chopped
3 scallions, coarsely chopped
6 garlic cloves, finely chopped
1 tablespoon kosher salt (such as Diamond Crystal)
1 to 2 Scotch bonnet or habanero chiles (optional)
2 tablespoons fresh thyme leaves, finely chopped
2 tablespoons dark brown sugar
3 1/2 teaspoons ground allspice
1 teaspoon ground nutmeg
1/2 teaspoon ground cayenne
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 cup fresh lime juice
1 tablespoon vegetable oil
1 1/2 pounds pork tenderloin (see Tip)
1/4 cup guava jelly or preserves (or other tangy fruit jam, such as mango, peach or apricot)
1/2 teaspoon fresh lemon juice

Steps:

  • Combine the ginger, scallions, garlic, salt and chiles (if using) in a food processor or blender and pulse until finely minced. Add the thyme, sugar, allspice, nutmeg, cayenne, cumin, coriander, lime juice and oil, then blend until the mixture becomes a fine paste.
  • Using a clean towel or paper towels, pat the pork tenderloin dry. Using a sharp paring knife, cut a series of deep holes into the meat.
  • Transfer the pork to a zip-top bag or container with a tight lid, and pour over the marinade. Let sit for at least 10 minutes on the countertop, or refrigerate overnight if possible. Bring to room temperature before continuing.
  • When ready to cook, heat the oven to 400 degrees, adjusting your rack to the top third of the oven. Line a rimmed baking sheet with foil, then set a little water in a small pot and bring to a boil.
  • Place the tenderloin in the center of the pan and put the pan on the center rack of the oven. Roast until the internal temperature is 145 degrees in the thickest part, flipping every 10 minutes, for about 25 minutes to evenly brown the outside.
  • Mix the guava jelly and lemon juice with 1 tablespoon of the boiling water, and use a fork to break up then stir to form a glaze.
  • Increase the oven heat to a high broil. Carefully pull the pan out of the oven, and brush the tenderloin with the glaze. Broil in the upper third of the oven 5 to 7 minutes, until it's a toasty dark brown with some charred spots, brushing once more with any remaining glaze if desired.
  • Remove the pan from the oven and set the tenderloin on a carving board to rest for about 5 minutes. Cut into slices and pour over any juices that remain.

1 lb chicken tenderloins
1/2 cup flour
salt
pepper (black, ancho or chipotle)
1 egg white
1/2 cup guava jelly
3 tablespoons vinegar
2 tablespoons soy sauce
1/4 cup brown sugar
1/2 cup water
2 tablespoons cornstarch
2 tablespoons water
1 tablespoon finely chopped ginger
4 -6 tablespoons vegetable oil, divided
jasmine rice or white rice

Steps:

  • Place the flour in a shallow bowl and season with salt and pepper. Place the egg white in a separate bowl and whisk gently.
  • Dip the chicken pieces in the flour, then in the egg white, then in the flour again.
  • Heat 4 tablespoons oil in a wok or large skillet on medium high heat. When the oil is hot add the chicken pieces and cook briefly, turning once, until they are golden brown on both sides and just cooked through. Set aside.
  • In a small bowl, stir 2 tablespoons water into the cornstarch and whisk until smooth. Set aside.
  • In a saucepan, mix the jelly, soy sauce, brown sugar, vinegar and water and bring to a boil. Simmer gently, stirring, for 1-2 minutes.
  • Stir in cornstarch mixture and continue to simmer, stirring, until mixture starts to thicken.
