Ree Drummond's Best Green Beans Ever recipe, from The Pioneer Woman on Food Network, starts with bacon grease and gains even more flavor from chicken stock.

1 pound green beans
2 tablespoons bacon grease (can substitute 2 tablespoons butter)
2 cloves garlic, minced
1 large onion, chopped
1 cup chicken broth, plus more if needed
1/2 cup chopped red bell pepper
1/2 to 1 teaspoon kosher salt (can substitute regular table salt, use 1/4 to 1/2 teaspoon)
Ground black pepper

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.

The picante sauce catches you by surprise, and has people guessing with it's "peculiar pink" color, but once it's tasted....it's a hit. I'm always asked, "What's in that?" Then I'm asked for the recipe. One time I was requested to fix this salad to serve about 150 people. I started with five #10 cans of green beans, 4 cups oil, 1 1/2 cups sugar, 6 cups picante sauce...well, you get the idea. The recipes requires 2 cups green beans, so use fresh green beans from the garden, or a drained 16 ounce can of green beans. I'm sure those of you that make your own picante sauce can use it in this dish to personalize it as your own. I gave up making a "single" recipe, and usually double or triple it. It's one of those salads that seems to be best when it's been in the frig for a couple days... if it lasts that long. (Prep time does not include time for cooking fresh green beans, or for time spent in the frig.)

2 cups green beans, cooked or 1 (16 ounce) can green beans, drained
2 tablespoons vegetable oil
2 teaspoons sugar
1/3 cup mild picante sauce (I use Chunky Pace)
2 teaspoons lemon juice, freshly squeezed
1/2 teaspoon salt
1/3 cup onion, diced
1/3 cup mayonnaise or 1/3 cup Miracle Whip
2 tablespoons mild picante sauce, reserved for garnish

Steps:

  • Drain cooked green beans and chill.
  • Mix oil, sugar, picante sauce, lemon juice, salt, onion and mayonnaise.
  • Fold chilled green beans and mayonnaise mixture.
  • Cover and chill overnight, stirring two or three times during that time.
  • When ready to serve, garnish with picante sauce on top.

When I ask my Husband or Daughter what special meal would they like me to make them for their Birthday often the response is TACOS!!! Even though to me they are so simple to make! I like Lawrys Taco seasoning the best.

1 1/2 lbs ground beef (LEAN)
2 (1 ounce) packages taco seasoning
2 (15 ounce) cans pinto beans
2 dozen corn tortillas
vegetable oil
shredded cheddar cheese
shredded lettuce
chopped onion
chopped tomato
your favorite salsa

Steps:

  • In a large skillet completely cook the ground beef, no need to drain. Add in the Taco Seasoning and the 2 cans of pinto beans with the juice.Mix and then let it simmer for about 10-15 minutes or until it is heated all the way through.
  • In a small or medium skillet add enough oil to fry the shells. Wait until oil is hot and start frying your tortillas to desired donness. Place tortillas on a paper towel to drain off excess oil.
  • To serve place everything on the family table and let everyone make their own tacos! HAVE FUN!

As a bona fide Yankee of mixed Northern European extraction living in Central Texas, I could not, in good conscience, call these "authentic" Refried Beans. What they are, however, is heart-stoppingly delicious. Cooked from scratch, so you can control the amount of sodium (within reason, of course! There's BACON in here!) these beans outstrip anything you'll find in a can. If you want to skip the pressure cooker business (my favorite bean-cooking method), Go ahead and soak your beans and cook for 3-5 hours in 6 or so cups of water, or whatever method you use (I've heard terrific things about overnight bean cooking). I use Recipe #211317 to mix up my own Dry Adobo Seasoning (Adobo Seco) Serve these beans with my "Better than America's Test Kitchen" Spanish Rice, and you'll think you've died and gone to heaven!

3 cups pinto beans (soaked overnight, if desired)
5 cups water
1 large onion, quartered
6 garlic cloves, minced
1 large bay leaf
1 tablespoon oregano
1 teaspoon pepper
1 teaspoon salt
1 tablespoon liquid smoke
6 pieces bacon
1 cup onion, diced
2 tablespoons garlic, minced
1 -2 jalapeno, minced (seeds removed if desired)
1/2 teaspoon dry adobo seasoning (Adobo Seco)
1 lime
salt, to taste
oil, if needed

Steps:

  • Cook your Pintos:.
  • Wash beans and remove all gravel and such.
  • Place beans, water, onions and garlic in pressure cooker.
  • Add spices.
  • Close lid and bring to pressure.
  • Cook on medium heat for 55-65 minutes. Release pressure and test for doneness. Cook an additional 10 minutes, only if needed. Remove the onion and drain the beans, saving ALL of the cooking liquid.
  • Get down to the tasty business:.
  • Saute the bacon until crispy, remove and devour at will (chef's prerogative!).
  • Add the onion to the rendered bacon fat and saute until caramelized (about 8 minutes). Add garlic, jalapeno, and Adobo Seco and saute a couple more minutes, adding some oil if necessary.
  • Put sauteed onion mixture in food processor along with about 2 cups of the cooked beans, puree.
  • Add the puree to the rest of the beans in the cooking pot- stir to mix.
  • Add the juice of one lime and season with salt, stir. Taste the beans. (It can take a lot of salt as this makes a large batch of beans.) Adjust salt to taste. If the mixture seems dry, add a bit of the left-over bean water until you reach the desired consistency.
  • Serve topped with cheese. Lots of cheese. :).
