2 cups 4% cottage cheese
1/4 cup lemon yogurt or flavor of your choice
3 to 4 tablespoons honey
1 teaspoon grated orange zest
2 tablespoons sweetened shredded coconut, toasted
Assorted fresh fruit

Steps:

  • Place the cottage cheese and yogurt in a blender; cover and process until smooth. Stir in honey and orange zest. Pour into a serving dish. Cover and refrigerate for at least 1 hour. Sprinkle with coconut. Serve with fruit.

¼ cup sugar
1 ½ teaspoons all-purpose flour
1 egg, beaten
¼ cup pineapple juice
2 tablespoons orange juice
2 ¼ teaspoons lemon juice
1 ½ cups whipped topping
1 cup Assorted fresh fruit

Steps:

  • In a small saucepan, combine the sugar and flour. Stir in egg and juices. Cook and stir over low heat until mixture is thickened and reaches 160 degrees F. Cover and refrigerate until chilled. Just before serving, fold in whipped topping. Serve with fruit.
