1 tablespoon minced garlic (from 2 cloves)
1 large onion, halved and thinly sliced (3 cups)
2 tablespoons Worcestershire sauce
2 teaspoons Dijon mustard
Coarse salt and freshly ground pepper
6 ounces cheddar, shredded (2 cups)
1 sheet (12 ounces) frozen puff pastry, thawed
All-purpose flour, for dusting
1 large egg, lightly beaten
Roasted broccoli rabe or other green vegetable, for serving

Steps:

  • Heat a large nonstick skillet over high. Add beef, garlic, and onion; cook, stirring occasionally, until starting to brown, about 7 minutes. Stir in Worcestershire and Dijon; season with salt and pepper. Remove from heat and let cool completely. Stir in cheese.

1 pound ground beef
1 medium onion, finely chopped
1 garlic clove, minced
1/4 cup all-purpose flour

1/3 cup dill pickle juice
1/3 cup 2% milk

Steps:

Steps:

  • Divide the mince into 4. Shape into burger patties, season each side and quickly seal in a frying pan with oil on both sides (Do not cook through). Remove & allow to cool
  • Grill bacon to liking and place 1 rasher on top of burger (place toppings between bacon and patty). Add cheese then a second rasher. Leave in fridge until needed.
  • Lay the pastry out & cut 2 discs for each burger, 1 about double the size of your patty and 1 disc the same size as the patty.
  • Wrap larger disc over each patty and smooth around the edges. Brush the smaller disc with egg yolk and place over the base of the burger sealing the two pastry discs together.
  • Rest in fridge for 15 mins until firm and cool. Brush with egg yolk and sprinkle with sesame seeds.
  • Bake for 20-25mins on 190c until golden brown.

  • In a medium 8-inch (20-cm) cast-iron skillet, press down half of the ground beef with a spatula to mold into a patty. Season with salt and pepper.
  • Place the cast-iron skillet over medium-high heat and sear the patty until browned, about 4 minutes on each side.
  • Remove the patty from the skillet and set aside. Repeat with remaining beef.
  • Return the pan to low heat and add the onion. Cook, stirring occasionally, until the onion is caramelized, about 20 minutes.
