PORK-BELLIED POPPERS

Categories     appetizer

Time 1h

Yield 1 dozen

Number Of Ingredients 12

12 jalapeno peppers (about 3 inches each)
2 cups milk
1 cup grated sharp cheddar cheese
2 tablespoons cream cheese, softened
1/4 cup prepared pulled pork
11/2 teaspoons chili powder
1 cup all-purpose flour
4 large eggs
Kosher salt
2 cups breadcrumbs
Vegetable oil, for frying
Barbecue sauce, for dipping

Steps:

  • Slice each jalapeno open lengthwise, then make a small crosswise cut at the stem end to form a T. Gently open the jalapenos and scrape out the seeds and membranes with a knife. Put the jalapenos, milk and 2 cups water in a large bowl and soak 15 minutes, stirring once or twice.
  • Meanwhile, mix the cheddar, cream cheese, pulled pork and chili powder in a bowl with your hands until combined. Drain the jalapenos and pat them dry. Stuff 1 to 2 tablespoons cheese filling into each pepper.
  • Put the flour in a shallow dish. Whisk the eggs and 1/2 teaspoon salt in another dish. Put the breadcrumbs in a third dish. One at a time, hold the peppers by the stems and dredge in flour, then dip in the beaten eggs, letting the excess drip off, and roll in the breadcrumbs; dip in the eggs again and reroll in breadcrumbs. Transfer to a plate and refrigerate until the coating sets, about 20 minutes.
  • Heat about 1 inch of vegetable oil in a large saucepan over medium heat until a deep-fry thermometer registers 300 degrees F. Fry the jalapenos in batches, turning, until golden brown, 4 to 5 minutes per batch. Drain on paper towels. Sprinkle with salt and serve with barbecue sauce.

MUSHROOM POPPERS

Provided by Food Network

Categories     appetizer

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 13

10 ounces imitation crab meat, shredded
6 ounces cream cheese
1/2 cup plus 2 tablespoons sriracha sauce, such as Huy Fong
2 stalks green onion, diced
20 medium to large white mushrooms, stems removed
Vegetable oil, for frying
One 10-ounce box tempura batter mix
1/4 cup plus 2 tablespoons soy sauce
1 tablespoon oyster sauce
1 1/2 teaspoons onion powder
1 cup corn syrup
2 tablespoons black sesame seeds, toasted
2 tablespoons white sesame seeds, toasted

Steps:

  • For the stuffed mushrooms: Mix the imitation crab meat, cream cheese, sriracha sauce and three quarters of the diced green onions in a large bowl. Make sure the mixture is well combined to avoid pockets of cream cheese or sriracha sauce. Stuff the mushroom caps with the crab mixture making sure the mixture is packed together tightly. Do not be afraid to overstuff the mushrooms.
  • Fill a medium saucepan or wok 3 inches deep with oil and heat to 325 degrees F. Divide the tempura batter mix between 2 bowls. In one bowl, add cold water according to the manufacturer's instructions; the mixture should coat the back of a wooden spoon.
  • In batches, dredge the stuffed mushrooms in the dry tempura batter mix, and then coat in the wet tempura batter. Shake off any excess batter and then carefully place the mushrooms into the hot oil, taking care not to burn yourself or splatter any oil. Fry until crisp, 5 to 8 minutes, and transfer to a plate layered with paper towels. Cooking time can vary wildly depending on the size of the mushrooms, the thickness of the batter and the number of mushrooms placed into the pan at the same time. If in doubt, take out a sacrificial stuffed mushroom and cut it in half. If the center of the crab mixture is still cold to the touch, then the rest of the mushrooms should cook for a while longer. A warm center indicates that the mushrooms are ready.
  • For the mushroom sauce: Whisk together the soy sauce, oyster sauce and onion powder in a bowl. Add the corn syrup and mix until thoroughly combined.
  • For serving: Cut the cooked stuffed mushrooms in half, drizzle some of the mushroom sauce on top and sprinkle with the black and white sesame seeds and remaining diced green onions. Serve with the remaining mushroom sauce on the side for dipping.

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 9

Nonstick cooking spray, for the pan
1 pound mini sweet bell peppers
4 cloves garlic
8 ounces feta, crumbled
2 ounces cream cheese, at room temperature
2 tablespoons extra-virgin olive oil
2 pepperoncini peppers, stemmed, plus 1 tablespoon reserved juice
2 tablespoons fresh parsley, chopped, plus extra for garnish
1 teaspoon dried oregano

Steps:

  • Preheat the oven to 400 degrees F. Spray a Bundt pan with nonstick cooking spray. Wrap a 3-foot piece of foil around the center of the pan, scooting it down as best you can.
  • Cut the tops off the peppers and hollow out the centers to remove the membranes and seeds. Using a small spoon is easiest. Set aside.
  • Add the garlic to the bowl of a food processor and pulse until finely chopped. Add the feta, cream cheese, oil, pepperoncini and juice. Pulse until it is a smooth mixture. Sprinkle in the parsley and oregano, then pulse a few more times until blended. Spoon the cheese mixture into the hollowed peppers.
  • Arrange the peppers so that they are standing up nestled side-by-side in a single layer in the prepared Bundt pan. Bake until the cheese mixture is golden, about 30 minutes. Transfer to a serving platter and sprinkle with parsley. Let cool slightly before eating, or serve at room temperature.

LAMB POPPERS

Lamb Poppers image

Provided by Robert Irvine : Food Network

Categories     appetizer

Time 45m

Yield 24 poppers (6 servings)

Number Of Ingredients 18

2 tablespoons grapeseed oil
1/4 cup diced onions
1 pound ground lamb or pork
1 tablespoon salt
1 teaspoon ground pepper
1/4 cup tomato paste
1 tablespoon minced garlic
12 jalapenos
12 slices bacon
Spiced Aioli, for serving, recipe follows
1 cup mayonnaise
3 tablespoons roasted garlic
1 tablespoon minced fresh chives
1 tablespoon minced fresh parsley
1 tablespoon hot sauce, such as Tabasco
1 teaspoon white balsamic vinegar
1 teaspoon salt
1 teaspoon ground white pepper

Steps:

  • For the stuffing: In a saute pan over medium-high heat, add the grapeseed oil and allow to warm. Then add the onions and cook until softened, 3 to 4 minutes. Next add the lamb, reduce the heat to medium and sprinkle with the salt and pepper. Cook until the meat is browned, 4 to 5 minutes. Once cooked, add the tomato paste and garlic and finish cooking for 2 minutes, allowing all the flavors to blend. Remove from the pan and allow to cool for stuffing.
  • For the peppers: Preheat the oven to 350 degrees F. Preheat a deep-fryer to 400 degrees F. To stuff the peppers, split each pepper lengthwise, stem to tip, and remove all seeds. After removing the seeds, add the cooked lamb to the pepper cavity, about 1 tablespoon per pepper. Repeat the process, stuffing each pepper. To finish, lay the bacon flat on the counter or cutting board and "spread" the bacon with the flat side of a knife, pulling the flat side of the knife along the slice of bacon to thin it and double the length of the slice. Once the bacon has been thinned, slice the bacon in half lengthwise and wrap the peppers with bacon. Secure the ends with skewers.
  • After wrapping peppers, bake until the bacon has tightened slightly, 10 to 12 minutes. After cooking, remove from the oven and deep fry for 2 to 3 minutes, crisping the bacon on the exterior. Remove from the fryer and allow excess oil to drain. Serve with Spiced Aioli.
  • Puree the mayonnaise, roasted garlic, chives, parsley, hot sauce, vinegar, salt and pepper in a food processor.

AIR FRYER JALAPEñO POPPERS

Air Fryer Jalapeño Poppers image

We have a high bar for jalapeño poppers, and this easy air-fryer version surpasses it. In our books the jalapeño itself needs to be cooked through but still sturdy enough to support all the filling. This recipe calls for large jalapeños, which fit more filling than smaller ones and tend to be sturdier. The molten cheese will not spill out of these poppers thanks to the way they are filled and rested for a few minutes in the air fryer after cooking. Finally, the breadcrumb coating remains crispy for a very long time because of the addition of crushed kettle potato chips.

Provided by Food Network Kitchen

Categories     appetizer

Time 20m

Yield 8 servings (24 poppers)

Number Of Ingredients 7

12 large jalapeño peppers (at least 4 inches in length)
8 ounces cream cheese, at room temperature
5 ounces extra-sharp yellow Cheddar, grated
1/2 cup panko breadcrumbs seasoned with Pecorino Romano
1/2 cup finely crushed kettle potato chips
Nonstick cooking spray
2 tablespoons bacon bits or freshly cooked, crumbled bacon

Steps:

  • Working with disposable rubber gloves to protect your skin, halve each jalapeño lengthwise, slicing through the stem. Remove the seeds and white ribs with a spoon or small melon baller. Arrange the halves on a baking sheet rounded sides down. If any of the halves tilt sideways instead of standing straight up, slice a sliver of skin off the rounded side, making sure not to cut through to the cavity, so they sit level.
  • Add the cream cheese and Cheddar to a small bowl and mix together with a rubber spatula until combined. Stir together the breadcrumbs and potato chips in a medium bowl.
  • Divide the cream cheese mixture among the jalapeño halves, smoothing it down with your finger or the back of a butter knife so the filling is level with the top of the jalapeno, not mounded. (You may have extra filling depending on how large your jalapenos are.) Firmly press the breadcrumb mixture over the cream cheese to fully coat. Spray the breadcrumbs with nonstick spray.
  • Preheat the air fryer to 400 degrees F and set to cook for 4 minutes. Arrange the poppers in a single layer in the basket so they're not touching, working in batches if necessary. Air fry the poppers without opening the basket to check on them. When the air fryer turns off, let the poppers sit in the basket for another 4 minutes without opening the machine. (this will allow the poppers to cool slightly and the cheese to set so it doesn't slide out-don't worry, it'll still be gooey.)
  • Carefully open the air fryer basket and remove each popper with a spatula. Serve the poppers sprinkled with the bacon.

SHRIMP-STUFFED JALAPENO POPPERS

Shrimp-Stuffed Jalapeno Poppers image

Provided by Food Network Kitchen

Categories     appetizer

Time 45m

Yield 12 servings

Number Of Ingredients 9

12 medium jalapeno peppers
12 large shrimp, peeled and deveined, tails intact
Kosher salt
1 1/2 cups all-purpose flour
3/4 cup cornstarch
1 teaspoon Old Bay Seasoning
1 cup lager-style beer
Vegetable oil, for frying
Malt vinegar, for serving

Steps:

  • Cut off the tops of the jalapenos and scoop out the seeds. Pat the shrimp dry and generously season with salt. Insert 1 shrimp into each jalapeno, leaving the tail sticking out.
  • Whisk 3/4 cup flour, the cornstarch, Old Bay and beer in a medium bowl until smooth; set aside. Heat 2 inches of vegetable oil in a large pot or Dutch oven over medium heat until a deep-fry thermometer registers 350 degrees F. Whisk the remaining 3/4 cup flour and 1/2 teaspoon salt in a shallow bowl.
  • Working in batches, dredge the jalapenos in the flour, shaking off any excess, then dip in the beer batter, coating the shrimp and jalapeno completely. Fry, stirring occasionally, until the shrimp are cooked through and the jalapenos are golden and crisp, about 5 minutes. Remove with a slotted spoon and drain on paper towels; season with salt. Serve with malt vinegar.
