1 tablespoon olive oil
1 tablespoon brown sugar
1/2 teaspoon chili powder
1/2 teaspoon salt

Steps:

  • Preheat oven to 400°.
  • Peel potatoes and cut into 1" wedges.
  • In a large bowl, toss potatoes with oil.
  • Mix sugar and seasonings together and add to potatoes.
  • Toss until evenly coated.
  • Spread on a non stick baking sheet and roast for 30 minutes, turning every 10 minutes until browned and done.

  • If using fresh sweet potatoes, place in a large saucepan or Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook 25-40 minutes or until tender. 2 tablespoons oil

Steps:

  • Preheat the oven to 400°F (200ºC).
  • Slice the top and bottom off of the sweet potatoes, and slice potatoes in half crosswise. Rest each half on the broader end, then slice 3 times vertically and horizontally. Turn the potatoes on their side and make 4 or five more slices, to form cubes.
  • Transfer the sweet potatoes to a baking sheet, then add the oil, rosemary, salt, and pepper. Toss to coat evenly.
  • Bake for 35-40 minutes, until the sweet potatoes are tender and starting to brown around the edges.
  • Let cool for 5 minutes. Garnish with chopped parsley before serving.

2 Tbsp. Sea salt
1 tsp. pepper
2 Tbsp. fresh rosemary (finely chopped)

Steps:

  • Preheat oven to 400 degrees. Wash and scrub the potatoes and slice them in half.
  • Line a cookie or baking sheet with foil. Using your hands rub the potatoes completely in olive oil. Rub the potatoes in salt.
  • Lay the potato halves skin side down on the baking sheet. Sprinkle lightly with pepper.
  • Sprinkle lightly with finely chopped fresh rosemary.
  • Bake for 40-45 minutes, or until potatoes are tender.

  • Preheat oven to 400 degrees F.
  • Combine melted butter, oil and crushed rosemary in a small bowl. Pour 2 tablespoons of butter-oil mixture in the bottom of a 2-quart baking dish. Arrange potato slices vertically in the dish. Add a sliver of shallot between every few slices of potato. Brush top with remaining butter-oil mixture. Season generously with salt and pepper.

  • Take a saucepan, cut the Unsalted Butter into half and throw in the saucepan.   • Preheat oven to 400F.
  • With a sharp knife, slice the sweet potatoes into ¼ inch slices about ¾'s of the way through. Be careful not to cut all the way through.

  • Preheat the oven to 350 degrees F and line a large baking tray with a lipped edge with parchment paper.
  • Wash the potatoes and slice either in half or thirds depending on how long they are. Each one you bake should be about 2 inches high. You can peel them or just leave the skins on and eat around it.
  • Lay the 12 sliced potatoes in a grid pattern on the baking tray.
  • Melt the butter and generously brush each potato multiple times with the butter saving some for the next step.
  • Press about 2 tablespoons of brown sugar onto the top of each potato and drizzle with more butter.
  • Sprinkle the fresh herbs all over the potatoes followed by the salt and black pepper.
  • Sprinkle some cinnamon onto each potato.
  • Bake in the oven for 50 minutes and then turn down the oven to 325 degrees. Cover the potatoes loosely with foil and bake for a further 30 minutes or until the potatoes are very soft when pierced with a sharp pointed knife.
  • Serve at once brushing the potatoes gently with some of the herb butter from the pan if desired.

5-6 medium sweet potatoes (3-4 lbs)
1/2 teaspoon salt
1/2 cup (1 stick; 115g) unsalted butter
2 Tablespoons (30ml) water
1/4 cup (60ml) pure maple syrup
1 cup (200g) packed light or dark brown sugar
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1 teaspoon pure vanilla extract
optional: 2 teaspoons orange zest
optional for garnish: chopped fresh or dried rosemary, sea salt

Steps:

  • Peel then slice the sweet potatoes into 1/2 inch thick slices. Place in a greased 9×13 inch or other 3 quart baking dish. Sprinkle salt on top and toss to coat. I just use nonstick spray to grease.
  • Preheat oven to 375°F (191°C).
  • Cut stick of butter in half. (Helps it melt easier.) Combine all the butter, water, maple syrup, brown sugar, cinnamon, nutmeg, and ginger into a medium saucepan over medium heat. Cook and stir until the butter has melted. Stop stirring and bring to a gentle boil. Boil for 2 minutes without stirring. Remove sauce from heat and stir in the vanilla extract. (And orange zest, if using.)
  • Pour sauce over potatoes and toss to coat.
  • Bake for 1 hour, stopping and stirring the sweet potatoes every 20 minutes. After the first 20 minutes, I cover the dish with aluminum foil so the potatoes bake evenly.
  • Remove from the oven, sprinkle with rosemary and sea salt (if using), then cool uncovered for 10 minutes before serving. The sauce is thin right out of the oven but thickens as it cools.
  • Cover and store leftovers in the refrigerator for up to 1 week. Sauce will be thick after refrigeration, but thins out as you warm the leftovers up. Simply warm in the microwave.

1 cup mashed sweet potato (about two medium sweet potatoes)
1/2 cup warm water (between 102-110 degrees)
1/4 cup warm whole milk (between 102-110 degrees)
2 1/4 teaspoons active dry yeast
1 teaspoon plus 1/3 cup sugar, divided
6 tablespoons butter, melted and cooled
2 1/2 teaspoons fresh rosemary, minced
4 1/2-5 cups all purpose flour
1 teaspoon salt
1/4 cup salted butter at room temperature
2 tablespoons honey

Steps:

  • Bring a medium pot of water to a boil. Skin the sweet potatoes. Cook the sweet potatoes until they are fork tender, about 15 minutes. Strain the water. Mash the sweet potato until no clumps remain. Set aside to cool.
  • In a small bowl combine the milk and water. Heat in the microwave until the internal temperature reaches between 102-110 degrees. If the water is too hot it will kill the yeast. Stir in 1 teaspoon sugar and the yeast. Gently mix and allow to sit for 8 minutes to proof.
  • In the bowl of a stand mixer with a dough hook attachment, add all the remaining ingredients (starting with 4 1/2 cups flour first, you can add more later if you need to), and slowly mix until combined. Slowly pour in the yeast mixture and mix until incorporated. Mix over medium speed, until the dough comes together and is smooth and pulls away from the bowl. If the dough is too sticky, add 1 tablespoon of flour at a time until the dough pulls away from the bowl but still sticks to the bottom.
  • Knead the dough on a lightly floured surface and roll the dough into a ball. Place seam side down into a lightly greased bowl and cover with plastic wrap. Place the bowl in a warm spot until the dough doubles in size. Depending on how cold your house is, this can take longer than an hour.
  • Once the dough has risen, punch the dough down. Roll dough out onto a lightly floured surface. Cut out 16-20 equal pieces and roll each piece into a uniform ball. Place seam side down onto a 13x9 inch parchment lined baking sheet. Cover with plastic wrap and allow to rise again for one hour.
  • Preheat oven to 350 degrees. Bake the rolls for 20-25 minutes, until the rolls are lightly golden brown on top. In a small dish mix together the 1/4 cup room temperature butter and 2 tablespoons honey. Serve rolls with honey butter. Enjoy!

  • Preheat the oven to 375 degrees F.

Whisk together the flour, pecans, sugar and a pinch of salt in a medium bowl. Using your fingers, rub the butter and 2 tablespoons bacon fat into the flour mixture until coarse crumbs form. Add the bacon and toss to combine. Sprinkle the crumble over the sweet potato mixture.
  • Bake until lightly browned and hot throughout, about 30 minutes.

500 g sweet potatoes, peeled, quartered, and sliced into 1/4 inch slices
1 1/2 tablespoons vegan butter or high-heat oil
1/4 cup (50 g) brown sugar (or sub coconut sugar)
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg (optional)
1/4 teaspoon salt
1/2 cup (60 g) pecan pieces
Optional: flaky salt, for serving

Steps:

  • prepare a steam bath for the sweet potatoes; I filled a large pot with 1/2″ of water and placed a metal sieve over top of it. Once the water starts to steam, add in the sweet potatoes and cover. Steam for 10 to 12 minutes, until fork tender. Once tender, remove from the pot and set aside; save 2-3 tablespoons of the steaming water for step 3.
  • Melt the butter in a large saucepan or skillet over medium heat. Once melted, add in the brown sugar, cinnamon, ginger, and salt and whisk well, until a glossy syrup forms. Add 1 tablespoon of the steaming liquid to the pot and quickly whisk until the brown sugar has melted (add more water only if necessary).
  • Add the steamed sweet potatoes and pecans to the butter/sugar mixture, spreading them evenly across the pan. Use a spatula to flip or stir the mixture every 2 min, cooking for 10-12 minutes total. Potatoes are done when slightly browned and nuts are golden.
  • Transfer to a serving dish and top with flaky salt, if desired. Serve warm; leftovers will keep in the refrigerator for up to 5 days.

Pour butter or olive oil over the potatoes, then add the seasonings, toss everything together and cover the pan with foil! Set your oven to 425F and roast the sweet potatoes covered for about 20 minutes, then remove the foil and bake for another 10 minutes. For more color, broil under high temperature for a few minutes.
