- Preheat the oven to 400°F (200ºC).
- Slice the top and bottom off of the sweet potatoes, and slice potatoes in half crosswise. Rest each half on the broader end, then slice 3 times vertically and horizontally. Turn the potatoes on their side and make 4 or five more slices, to form cubes.
- Transfer the sweet potatoes to a baking sheet, then add the oil, rosemary, salt, and pepper. Toss to coat evenly.

- Line a cookie or baking sheet with foil. Using your hands rub the potatoes completely in olive oil. Rub the potatoes in salt.

- Preheat the oven to 350F or 180C. Grease the baking dish with cooking spray or vegetable oil or butter. Peel the Sweet Potatoes and chop them into 1/2 inch slices. Layer them in your Baking dish.

- With a sharp knife, slice the sweet potatoes into ¼ inch slices about ¾'s of the way through. Be careful not to cut all the way through.

- Preheat the oven to 350 degrees F and line a large baking tray with a lipped edge with parchment paper.
- Wash the potatoes and slice either in half or thirds depending on how long they are. Each one you bake should be about 2 inches high. You can peel them or just leave the skins on and eat around it.
- Lay the 12 sliced potatoes in a grid pattern on the baking tray.
- Melt the butter and generously brush each potato multiple times with the butter saving some for the next step.
- Press about 2 tablespoons of brown sugar onto the top of each potato and drizzle with more butter.

- Peel then slice the sweet potatoes into 1/2 inch thick slices. Place in a greased 9×13 inch or other 3 quart baking dish. Sprinkle salt on top and toss to coat. I just use nonstick spray to grease.
- Preheat oven to 375°F (191°C).
- Cut stick of butter in half. (Helps it melt easier.) Combine all the butter, water, maple syrup, brown sugar, cinnamon, nutmeg, and ginger into a medium saucepan over medium heat. Cook and stir until the butter has melted. Stop stirring and bring to a gentle boil. Boil for 2 minutes without stirring. Remove sauce from heat and stir in the vanilla extract. - Pour sauce over potatoes and toss to coat.

- Cover and store leftovers in the refrigerator for up to 1 week. Sauce will be thick after refrigeration, but thins out as you warm the leftovers up. Simply warm in the microwave.

SWEET POTATO DINNER ROLLS WITH FRESH ROSEMARY AND HONEY BUTTER

- Bring a medium pot of water to a boil. Skin the sweet potatoes. Cook the sweet potatoes until they are fork tender, about 15 minutes. Strain the water. Mash the sweet potato until no clumps remain. Set aside to cool.
- In a small bowl combine the milk and water. Heat in the microwave until the internal temperature reaches between 102-110 degrees. If the water is too hot it will kill the yeast. Stir in 1 teaspoon sugar and the yeast. Gently mix and allow to sit for 8 minutes to proof.
- In the bowl of a stand mixer with a dough hook attachment, add all the remaining ingredients (starting with 4 1/2 cups flour first, you can add more later if you need to), and slowly mix until combined. Slowly pour in the yeast mixture and mix until incorporated. Mix over medium speed, until the dough comes together and is smooth and pulls away from the bowl. If the dough is too sticky, add 1 tablespoon of flour at a time until the dough pulls away from the bowl but still sticks to the bottom.
- Knead the dough on a lightly floured surface and roll the dough into a ball. Place seam side down into a lightly greased bowl and cover with plastic wrap. Place the bowl in a warm spot until the dough doubles in size. Depending on how cold your house is, this can take longer than an hour.
- Once the dough has risen, punch the dough down. Roll dough out onto a lightly floured surface. Cut out 16-20 equal pieces and roll each piece into a uniform ball. Place seam side down onto a 13x9 inch parchment lined baking sheet. Cover with plastic wrap and allow to rise again for one hour.
- Preheat oven to 350 degrees. Bake the rolls for 20-25 minutes, until the rolls are lightly golden brown on top. In a small dish mix together the 1/4 cup room temperature butter and 2 tablespoons honey. Serve rolls with honey butter. Enjoy!

These easy mashed sweet potatoes are on the savory side, but you can add a few extra ingredients for a sweeter version. See our tips in the notes section below for our suggestions. - Peel and cut sweet potatoes into 1-inch cubes. Add to a large pot and add enough water so that they are covered by about one inch of water. Add the salt and bay leaf.
- Bring the water to a boil, reduce the heat to a simmer and cook until the potatoes are easily pierced with a fork, 10 to 12 minutes. Drain well, and then return the potatoes to the pot. Or if you plan to use a food processor, add them directly to the processor bowl. (A food processor makes extra silky mashed sweet potatoes.)
- Add the butter, cinnamon, black pepper, and a pinch of salt. Mash the sweet potatoes with a potato masher until your desired consistency. If using a food processor, pulse until your desired consistency.
- For extra creamy sweet potatoes, stir in sour cream or a splash of heavy cream, milk, or half-and-half. Serve with extra butter and chopped fresh herbs (optional) on top.

OVEN ROASTED SWEET POTATOES RECIPE (VIDEO)

- There are two different ways of preparing oven-roasted sweet potatoes. The first method is the one I used in my video recipe, which involves cooking the potatoes first, then seasoning them with butter and spices. This method works well if you need the sweet potatoes to be extra soft. Preheat oven to 350F. Place sweet potatoes into large pot filled with water. Bring to a simmer and cook for 8 to 10 minutes, just until the potatoes start to become tender. Drain water.
- Toss together potatoes with melted butter and oil, herbs, salt and black pepper. Bake in preheated oven until fork-tender and golden brown, about 15 to 18 minutes. Broil for a few minutes on high heat to make the potatoes extra golden. Remove and transfer into serving bowl.
- Method 2: The second method and the one I currently use requires less work. Just spread the raw sweet potatoes onto a baking sheet. Pour butter or olive oil over the potatoes, then add the seasonings, toss everything together and cover the pan with foil! Set your oven to 425F and roast the sweet potatoes covered for about 20 minutes, then remove the foil and bake for another 10 minutes. For more color, broil under high temperature for a few minutes.
