GREEK YOGURT FUDGE POPS
These homemade fudge pops are low in calories and fat. They're also super creamy and chocolately.

Steps:
- Put the chocolate chips into a medium glass mixing bowl. Set aside.
- Combine the milk, cocoa powder, sugar, vanilla and 1/4 teaspoon salt in a medium saucepan over medium heat. Whisk constantly until the cocoa is dissolved and the mixture comes to a simmer, 5 to 7 minutes. Remove from the heat and pour the milk mixture over the chocolate. Let stand for 5 minutes, then whisk gently until all the chocolate is melted. Whisk in the yogurt until smooth and blended, then cool completely.
- Divide the mixture evenly among eight popsicle molds (about 1/3 cup per pop) and freeze until solid, at least 5 hours. (They'll keep up to a month.) Just before serving, briefly run the molds under hot water to release the pops.

ACAI YOGURT POPS
Here's a fresh idea for this nutrient-filled fruit: Turn it into ice pops!

- Combine the acai, banana, mango, pineapple and coconut water in a blender. Puree until smooth.
- Layer the fruit puree and yogurt in 10 ice pop molds, starting and ending with the puree (2 or 3 layers of each). Swirl slightly with a skewer. Add sticks and freeze until solid, at least 6 hours.
- Line a baking sheet with parchment paper. Place the granola on a large plate. Fill a short wide glass with about 2 inches of yogurt (about 1/2 cup). Remove the pops from the molds and lay on the prepared pan (return to the freezer if they begin to soften). Working quickly, dip each pop in the yogurt at an angle, then dip in the granola and return to the pan. Freeze until the yogurt hardens, about 1 hour.

- Mix together the yogurt, granola and maple syrup in a large bowl. Pour the mixture into ice-pop molds and add a stick to each. Freeze until the pops are completely frozen, at least 5 hours.
FUDGE POPS

- In a blender combine the milk, chocolate milk powder, malt powder, and corn syrup and blend well. Pour into a popsicle mold with lids, insert wooden sticks, and then freeze.
- Notes about the recipe: Why buy these when they're so easy to make. And the kids can do it themselves, as long as you clean up the counter afterwards. Buy popsicle molds at specialty cookware shops or a large discount store like target in the summer. I used to ride my bike up town to the dairy store and buy these to keep me cool in the summer. We didn't have air conditioning so this was the alternative.

- Chop the chocolate into small pieces. Pulse in a food processor with the sugar until the mixture is grainy, with no large chunks of chocolate.

- Add in the milk and increase the heat to medium; bring to a gentle simmer, stirring constantly, then remove from heat.
- Cool for 5 minutes. Whisk in vanilla and Greek yogurt; mix well until completely smooth. Place a fine-mesh sieve over a large bowl (preferably one with a spout) and pour the chocolate mixture through the sieve.
- Pour the strained chocolate liquid into the Popsicle molds and place them in the freezer for 1 hour. At this point remove the pops from the freezer and insert the Popsicle sticks in. Freeze for 5 hours, or until hard.
