FEEL BETTER CHICKEN NOODLE SOUP
I whipped this up last week when I was under the weather with a sinus infection/upper respiratory/fever thing. I had no appetite, but needed something warm and comforting, and this did the trick. (Oh, and my family didn't leave me any leftovers, either! Thanks a lot, guys!) I used frozen home-made chicken stock with chicken harvested from a small fryer, but in a pinch, canned broth and chicken might work, too. Any short pasta would be fine.

SIMPLE CHICKEN NOODLE SOUP
Steps:
- Place the chicken in a large stockpot or Dutch oven and cover with the chicken stock and 2 quarts water. Add the onion quarters, roughly chopped carrots and celery, thyme, parsley stems, and the bay leaf. Bring mixture to a boil, partially cover and reduce heat to a simmer. Simmer for 1 hour. The chicken should easily pull away from the bones.
- Using tongs, remove the chicken from the broth and set aside until cool enough to handle. Strain the cooking liquid through a fine-meshed sieve, lined with cheesecloth, discarding the vegetables and reserving the stock. Pull the chicken meat off the bones, discarding the bones, skin, and any fat. Shred and reserve meat.
- Melt the butter in a large stockpot over medium-high heat. Add mushrooms and cook until browned, about 3 minutes. Add the diced onions, carrots, and celery and cook until the vegetables are softened, about 2 minutes. Stir in reserved cooked chicken. Add reserved chicken stock and bring to a boil over high heat.
- Season the soup with salt and pepper. Add vermicelli and simmer until noodles are cooked through, 10 to 12 minutes. Remove from the heat and stir in parsley. Serve hot.

- Heat the oil and melt the butter in the pan. Add the chicken, onion, garlic and remaining vegetables. Add the stock and bring to the boil over a low heat, skimming off any scum that rises to the surface.
- Lift out the chicken pieces with a slotted spoon. When it’s cool enough, pick the meat off the bones and throw away the skin and bones. Leave some shredded chicken on the side to add to the soup when it is done. Place the meat in a food processor or blender. Add the soup and process until smooth (this may be done in batches).
- Return the soup to the pan. If it is too thick, thin is down with a little more stock and water. If you are using cream, stir it in and heat through, but do not let the soup boil.

- Eggs. Eggs pack a ton of protein and contain zinc, which can boost your immune system and eliminate some of those nasty symptoms. Try them any which way you want, but we think in an avocado is a good way to go.
- Broccoli. Broccoli contains glutathione, which helps your body fight infections. Not really a fan of the veggie? Try them in these recipes and you won’t know they’re in there.
- Bananas. You lose quite a bit of electrolytes and potassium when you’re sick, but you can work your way towards replenishing those levels with some bananas.
- Ginger. Ginger has strong anti-nausea properties that’ll keep you from heading face first to the toilet bowl as often. Make this simple ginger dressing to toss alongside some greens for a quick meal.
- Honey. Tackle that hella annoying sore throat with some honey, which can kill the bacteria lingering in the back of your mouth. It may not help with your seasonal allergies, but it’ll pull you out of the misery of being sick.
- Crackers/Toast. It may not be the funnest thing to eat, but since crackers and toast are bland, your stomach won’t have to overwork itself to digest them.
- Garlic. Don’t worry about the garlic stinking up your breath, cause you probably aren’t going to be kissing anyone anytime soon while you’re sick (and if you are, well, props to you).
- Salmon. This mighty fish has a ton of omega-3 fatty acids, which reduce inflammation in your body, making your immune system run more efficiently and effectively.
- Turmeric. This spice is commonly found in Indian cooking and works as an anti-inflammatory, ridding your body of nasty toxins that may be circulating throughout it.
- Yogurt. Go greek and get some extra protein in your morning cup. The beneficial bacteria will help fight invading germs in your body, making you feel good as new.
