Grilled Swiss-Chard Stems With Roasted Garlic Oil image

Don't throw all those Swiss-chard stems away. Not everyone is a fan of including them with sautéed greens, but here's a plan for the rest of us who love their texture and flavor. Prepare to blanch, blister and then dress these stems in an intense garlic oil. With a little lemon and salt to perk the taste buds, you've got a new favorite side dish.

Number Of Ingredients 5

3 bunches of Swiss chard, any variety
Kosher salt
Roasted garlic oil (see recipe)
Lemon
Maldon salt

Steps:

  • Bring a large pot of water to a boil.
  • Strip the chard leaves from the stems using a knife, scissors or simply your hands. Reserve the leaves for another use.
  • Trim the bottom 1/8 inch of the chard stem, to remove the dry, discolored bit. Clean the stems by submerging in cold water and rinsing thoroughly.
  • Aggressively season your boiling water with kosher salt.
  • Working in batches, blanch the chard stems until tender, about 5 minutes. Drain well, and let cool on a baker's rack or in a colander to continue draining.
  • Grill blanched, dry chard stems evenly on both sides until charred and blistered here and there, like perfect pizza crust looks from a wood oven.
  • Cut the stems into batons, and thoroughly dress the stems with roasted garlic oil (see recipe), a few drops of lemon juice and a few flakes of Maldon salt.

10 stalks celery (about 1 bunch), cut into 1-inch pieces
4 teaspoons extra-virgin olive oil
Kosher salt and freshly ground pepper
2 tablespoons light mayonnaise
Juice of 2 limes
2 tablespoons honey
1 tablespoon green hot sauce
1 small head iceberg lettuce, shredded
1 bunch watercress, torn (3 to 4 cups)
1 1/4 pounds blade steak, about 3/4 inch thick (4 to 6 steaks)
2 bunches scallions, cut into 2-inch pieces
1 cup grape or cherry tomatoes, halved

Steps:

  • Preheat the oven to 450 degrees F. Toss the celery, 1 teaspoon olive oil, and salt and pepper to taste on a foil-lined rimmed baking sheet; roast until tender, about 20 minutes.
  • Whisk the mayonnaise, 2 teaspoons olive oil, the lime juice, honey, hot sauce and 1 tablespoon water in a large bowl. Add the roasted celery and toss. Add the lettuce and watercress but don't toss.
  • Heat a large grill pan or cast-iron skillet over high heat. Rub the steak with the remaining 1 teaspoon olive oil and season with salt and pepper. When the pan is very hot, add the steak and cook, undisturbed, about 3 to 4 minutes per side for medium rare. Transfer to a cutting board. Add the scallions to the pan and cook until charred, about 2 minutes per side.
  • Slice the steak against the grain, discarding the tough membrane that runs through the center. Add the steak and tomatoes to the bowl with the salad and toss to coat. Divide among plates.

1 tablespoon olive oil
2 cups uncooked multigrain bow tie pasta
2 large tomatoes
DRESSING:
1/4 cup lime juice
1 tablespoon olive oil

  • Rub steak with salt, cumin and pepper. Brush poblano peppers, corn and onion with oil. Grill steak, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Grill vegetables, covered, 8-10 minutes or until crisp-tender, turning occasionally., Cook pasta according to package directions. Meanwhile, cut corn from cob; coarsely chop peppers, onion and tomatoes. Transfer vegetables to a large bowl. In a small bowl, whisk lime juice, oil, salt, cumin and pepper until blended; stir in cilantro., Drain pasta; add to vegetable mixture. Drizzle with dressing; toss to coat. Swiss chard is much like spinach but with larger and sturdier leaves. It provides a neat package for the tomato and melted mozzarella inside.

1-2 heads ruby Swiss chard
2 large ripe tomatoes
1 pound fresh mozzarella
Salt and freshly ground pepper
Extra-virgin olive oil, for drizzling and brushing

Steps:

  • Remove 20 of the largest Swiss-chard leaves from the heads without tearing and set aside. Reserve remaining chard for another use.
  • Bring a large pot of lightly salted water to a boil. Have a bowl of ice water ready nearby. Plunge one or two leaves into boiling water for about 10 seconds, just until wilted. Place in ice water until cool, then drain on paper towels. Repeat with remaining leaves.
  • Cut tomatoes into 1/4-inch slices. Cut cheese into 1/4-inch slices and trim to approximate size of tomato slices.
  • Start a medium-size charcoal fire; when coals are hot, place grill as close to them as possible.
  • To assemble Swiss-chard packets, first place a Swiss-chard leaf facedown on a work surface. Cut out thickest part of stalk to about halfway up the leaf. Place a tomato slice in center of Swiss-chard leaf, top with slice of cheese, sprinkle with salt and pepper, and drizzle with olive oil. Fold bottom part of leaf over contents, then fold in sides; fold down top to enclose contents completely. Brush both sides lightly with olive oil, and place on grill. Grill for about 1 to 2 minutes on each side, until lightly charred and heated through. Serve immediately.

Seared Steak With Chard Salad image

1 bunch Swiss chard, stems removed, leaves thinly sliced
4 tablespoons extra-virgin olive oil
2 cups large crusty bread cubes
Kosher salt and freshly ground pepper
3 to 4 anchovies
1 clove garlic, smashed
1 cup grape tomatoes, halved
Juice of 1 lemon
1 1/2 pounds boneless beef sirloin steak
1 teaspoon dried mint
1/2 cup crumbled feta cheese

Steps:

  • Put the chard in a bowl. Heat a large skillet over medium-high heat.
  • Add 1 tablespoon olive oil and the bread cubes and season with salt and pepper. Cook, tossing, until toasted, 4 to 5 minutes. Add to the chard.
  • Add the anchovies to the skillet, mashing them with a whisk. Add the garlic and 2 tablespoons olive oil and cook until the garlic is golden, about 45 seconds. Add the tomatoes and warm slightly, then whisk in the lemon juice and season with salt and pepper. Pour the warm dressing over the chard, toss and set aside to wilt.
  • Wipe out the skillet and place over high heat. Sprinkle the steak on both sides with the mint, and salt and pepper to taste. Add the remaining 1 tablespoon olive oil to the skillet. Sear the steak until browned on the bottom, about 5 minutes. Turn and cook until browned on the other side, 3 to 4 more minutes for medium-rare. Transfer to a cutting board and let rest 5 minutes.
  • Add the feta to the chard salad and toss. Thinly slice the steak and serve with the chard salad.

I made this recipe up on the fly when I wanted to use up my cucumbers and swiss chard from the local farmer's market. This made a perfect side and the bite from the balsamic vinegar and lemon juice was perfect. It was especially good combined with my cubed ham and steak in an apple butter marinade and mashed potatoes with swiss chard leaves. NOTE: any extra swiss chard leaves (from using the stems) can be added to potatoes while still being cooked as this makes amazing mashed potatoes.

4 medium cucumbers (sliced, or whichever form is best for you)
1 -2 bunch swiss chard, stems chopped
1/4-1/2 bunch swiss chard leaf, torn up (optional)
1 cup water (can be taken from potato water, see note)
3 tablespoons balsamic vinegar (or to taste)
1 tablespoon lemon juice (or to taste)
1 teaspoon salt (or to taste)
2 teaspoons pepper (or to taste)

Steps:

  • Add the balsamic vinegar, cucumber, and swiss chard stems to a pot or frying pan with lid. Cook, while stirring, until all the vegetables are coated with the balsamic vinegar and are heated through.
  • Add the water and lemon juice, bring to a boil and simmer until the stems are halfway done.
  • Add the swiss chard leaves.
  • Add the salt and peper, to taste, and continue simmering until done.
  • NOTE: If you need more or less time just turn the heat up or down. Simmer at a low heat to keep it warm until the rest of the meal is done if needed. Just make sure to keep stirring it and if needed add more liquid.

1 bunch Swiss chard, stems and leaves separated
3 tablespoons extra-virgin olive oil, divided
½ teaspoon kosher salt
½ lime

Steps:

  • Chop the chard stems into 1/2-inch pieces. Stack the chard leaves, roll them tightly into a cylinder, and chop into 1/2-inch strips; chop the strips into halves.
  • Heat about half the olive oil in a large non-stick skillet over medium heat. Cook chopped chard stems in hot oil until hot, about 1 minute. Stir the chard leaves with the stems; cook and stir together 1 minutes more. Drizzle remaining olive oil over the mixture and stir to coat. Continue cooking and stirring until the leaves are nearly wilted, 4 to 5 minutes. Remove from heat and immediately sprinkle kosher salt and squeeze lime half over the chard. Stir to season evenly.

3/4 lb flank steak
1 teaspoon dried oregano
1/4 teaspoon ground cinnamon
2 garlic cloves, minced
1 teaspoon salt
1/4 teaspoon ground black pepper
1 red pepper
1/2 head red leaf lettuce
1/4 cup pecans, toasted
20 grape tomatoes
1/4 cup feta cheese
1/2 cup cucumber, cut into bite-sized pieces
2 tablespoons fresh basil, chopped
2 tablespoons of fresh mint, chopped
5 tablespoons balsamic vinegar
1 tablespoon olive oil
1 tablespoon Dijon mustard
1 teaspoon sugar
1 dash cinnamon (optional)
salt & pepper

Steps:

  • First, make a rub for the steak, using the oregano, ground cinnamon, garlic, salt, and pepper. Mix in a small amount of oil so it adheres to flank steak. Grill flank steak 5 minutes per side for rare. Cook pepper approximately 10 minutes, turning to cook evenly. Remove from grill and allow pepper and steak to sit for 5 minutes before slicing. Cut steak and pepper into strips.
  • While steak is cooking, prepare salad by mixing lettuce, pecans, grape tomatoes, cucumbers, feta cheese, mint and basil.
  • For vinaigrette, whisk together balsamic vinegar, olive oil, mustard, sugar, salt and pepper to taste, and a dash of cinnamon (if desired).
  • To assemble salad, arrange lettuce mixture in large bowl or on individual serving platters. Top each with equal amounts of pepper and flank steak. Drizzle with vinaigrette.
