¼ cup light soy sauce
1 ½ tablespoons honey
1 tablespoon grated fresh ginger
1 clove garlic, minced
1 pound salmon fillets
1 teaspoon sesame oil
2 teaspoons sesame seeds

Steps:

  • Whisk soy sauce, honey, ginger, and garlic together in a bowl until marinade is evenly mixed. Set aside 1/4 of the marinade.
  • Place salmon fillets in shallow dish; pour the remaining marinade over the salmon. Cover dish with plastic wrap and refrigerate for 5 minutes.
  • Heat sesame oil in a large skillet over medium-high heat.
  • Remove salmon from marinade, shaking to remove excess marinade, and place, skin-side up, into the hot oil; cook for 4 minutes. Discard unused marinade in the shallow dish. Flip salmon and drizzle the reserved 1/4 of the marinade over salmon; sprinkle with sesame seeds. Cook until fish flakes easily with a fork, 5 to 7 minutes. Flip salmon, remove skin, and cook 1 minute more.

1 1/2 tablespoons toasted sesame oil
1 tablespoon grated peeled ginger, plus 1 inch thinly sliced
1 cup quinoa, rinsed
Kosher salt
3 heads baby bok choy (about 12 ounces), trimmed and thinly sliced
1 red jalapeno pepper, seeded (1/2 minced, 1/2 thinly sliced)
3 scallions, thinly sliced
4 6-ounce skinless center-cut salmon fillets (preferably wild)
3 tablespoons low-sodium soy sauce
Juice of 1 lemon
1/4 cup fresh cilantro, torn

Steps:

  • Heat 1/2 tablespoon sesame oil in a medium saucepan over medium heat. Add the grated ginger; cook until slightly softened, 1 minute. Add the quinoa; cook, stirring occasionally, until lightly toasted, 2 minutes. Add 1 1/4 cups water and 1/4 teaspoon salt. Bring to a boil, then reduce the heat to medium low. Cover and cook until the water is absorbed and the quinoa is tender, about 12 minutes.
  • Add the bok choy, minced jalapeno and half of the scallions to the quinoa. Cook, covered, until the bok choy wilts, about 7 minutes.
  • Meanwhile, bring 3/4 cup water, the sliced ginger and sliced jalapeno to a boil in a large skillet over medium heat. Add the salmon. Cover and cook until just cooked through, 5 minutes. Transfer to a plate using a slotted spatula. Stir the soy sauce, lemon juice, remaining scallions and 1 tablespoon sesame oil into the poaching liquid.
  • Fluff the quinoa; season with salt. Serve with the salmon; drizzle with the soy sauce mixture and top with the cilantro.

1 tablespoon grated ginger
2 cloves garlic, minced
1 small shallot, minced
1 stalk lemongrass, finely chopped
Juice of 2 limes
2 tablespoons fish sauce
1 tablespoon packed light brown sugar
Kosher salt
2 sides wild salmon, skin on (1 3/4 to 2 pounds each)
3 tablespoons fish sauce
2 tablespoons rice vinegar
1 tablespoon Sriracha
1 tablespoon toasted sesame oil
2 teaspoons packed light brown sugar
Juice of 1 lime
Kosher salt
1 carrot, julienned
3 scallions, chopped

Steps:

  • Prepare the salmon: Whisk the grapeseed oil, ginger, garlic, shallot, lemongrass, lime juice, fish sauce, brown sugar, a pinch of salt and 1/2 cup water in a medium bowl. Place the salmon on a rimmed baking sheet and pour the marinade on top. Turn the salmon so the marinade coats both sides. Cover and refrigerate, 30 minutes.
  • Meanwhile, make the carrot-sesame dressing: Whisk the fish sauce, rice vinegar, Sriracha, sesame oil, brown sugar, lime juice and a pinch of salt in a medium bowl until the sugar dissolves. Add the carrot, scallions and 1/4 cup water; stir to combine. Set aside.
  • Preheat a grill to medium high. Remove the salmon from the marinade, wiping off any excess. Brush the grill grates with grapeseed oil. Brush the skin side of the salmon generously with grapeseed oil, then place on the grill skin-side down. Cover and cook until the skin is crisp and the salmon is nearly cooked through, about 8 minutes. Uncover and cook until the salmon is just cooked through, about 5 more minutes. (Do not flip the fish.)
  • Transfer the salmon to a platter and spoon the carrot-sesame dressing on top.

1 cup soy sauce
1 cup muscovado (dark brown) sugar
1 (5 inch) piece of fresh ginger root, peeled and minced
¼ cup olive oil
2 cloves garlic, smashed
1 (3 pound) whole salmon fillet with skin
1 untreated cedar plank

Steps:

  • Whisk together the soy sauce, muscovado sugar, minced ginger, olive oil, and garlic in a bowl, and pour into a resealable plastic zipper bag. Add the salmon fillet, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator overnight or up to 2 days.
  • About 1/2 hour before grilling, soak cedar plank in water.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the salmon from the marinade, and shake off excess. Discard the remaining marinade. Place the salmon, skin side down, onto the cedar plank.
  • Grill with the grill cover closed until the salmon is opaque but still juicy, about 20 minutes. Carefully remove the salmon from the plank in one piece, leaving the skin on the plank.

1 teaspoon finely grated lime rind
1/4 cup lime juice (about 1 large lime)
2 teaspoons vegetable oil (Becel)
1 teaspoon minced fresh ginger
1 jalapeno pepper, seeded and finely minced
2 (6 ounce) salmon steaks

Steps:

  • Whisk together lime rind, lime juice, oil, ginger and jalapeno.
  • Set aside a teaspoon of the mixture.
  • Place salmon steaks in a dish just large enough to hold them.
  • Pour remaining lime juice mixture over salmon and turn to coat.
  • Marinate at room temperature for 15 minutes, turnig once (Do not marinate longer than 30 minutes or the salmon will go mushy).
  • Preheat bbq to medium high and grease grill.
  • Bbq salmon turning once, until cooked through, about 3 to 4 minutes on each side.
  • Remove to platter and spoon reserved lime juice mixture over salmon.
  • Serve immediately.
  • If you wish to broil salmon, place on a rack set over a pan.
  • Broil about 4 inches from heat, turning once, until salmon is cooked through, about 3 to 4 minutes per side.

1/4 cup olive oil
2 tablespoons toasted sesame oil
2 tablespoons rice vinegar
2 tablespoons brown sugar
2 tablespoons soy sauce
2 garlic cloves, grated
1 tablespoon freshly grated ginger
1 -2 tablespoon toasted sesame seeds
4 green onions, sliced
1/4 cup honey
1 teaspoon toasted sesame oil
1 teaspoon soy sauce
1/2 teaspoon freshly grated ginger
1/2 teaspoon toasted sesame seeds

Steps:

  • Line a baking sheet with aluminum foil and place a wire rack over top. Spray the rack with nonstick spray.
  • In a large bowl or baking dish, combine olive oil, sesame oil, soy sauce, garlic, ginger, vinegar, brown sugar and whisk well until combined. Add salmon to the dish or place everything in a ziplock bag, then refrigerate and marinate for 30 minutes.
  • Preheat the broiler in your oven. (Or preheat your grill, etc if you prefer to use something else.).
  • Remove salmon with kitchen tongs and place directly on the wire rack. Sprinkle with a little bit of salt and pepper, then place directly under the broiler. Cook for 10-12 minutes, depending on the salmon's thickness (our's was just about an inch thick), until opaque and easily flakable with a fork. You can flip the salmon halfway through cooking if desired.
  • Remove and serve immediately, with a sprinkling of toasted sesame seeds, green onions and the glaze below.
  • To make sesame ginger honey glaze, combine all ingredients in a bowl and whisk until smooth. Pour over salmon.

1/3 cup soy sauce
1/3 cup orange juice
1/4 cup honey
1 green onion, chopped

  • Place onions in small bowl and chill until ready to use.

1 tablespoon olive oil

Steps:

  • Preheat grill to medium-low heat.
  • Drizzle 1/2 teaspoon sesame oil onto each filet and rub onto all sides. Then drizzle 1 teaspoon soy sauce onto each filet and repeat.
  • In a small bowl, combine garlic powder, onion powder, ginger, paprika and black pepper. Sprinkle evenly onto all sides of each filet.
  • Allow to marinate at room temperature for 20 minutes.
  • Just before grilling, carefully apply olive oil to grill rack via paper towel or grill brush.
  • Grill salmon for 5-7 minutes on each side (depending on filet thickness--thinner filets will take less time to cook through) or until cooked through. Try to only turn the filets once to prevent the fish from breaking apart.
