CARAMELIZED ONION AND GRAPEFRUIT SALAD

Steps:
- For the caramelized onions: In a large skillet, heat the oil over medium heat. Add the onions, balsamic vinegar, salt and pepper. Cook, stirring occasionally, until the onions are deep golden brown, about 20 minutes. Set aside to cool, about 10 minutes.
- For the dressing: In a small bowl, whisk together the red wine vinegar, lemon juice and honey. Slowly whisk in the olive oil until blended. Season with salt and pepper, to taste.
- For the salad: Peel and trim the ends from each grapefruit. Using a paring knife, cut along the membrane on both sides of each segment. Free the segments and add them to a large salad bowl. Add the lettuce, fennel, cucumber, scallions, and thyme.
- Pour the dressing over the salad and toss until all the ingredients are coated. Arrange the caramelized onions on top and serve.

GRAPEFRUIT, ONION AND BASIL SALAD
This is an interesting and tasty Giada recipe. Great make-ahead recipe, put everything together except the balsamic vinegar, evoo, salt and pepper and store in the fridge until time to serve! The original recipe calls for olives, but I prefer to substitute with feta cheese.

- Cut ends off of grapefruit, set grapefruit up on cut side. Cut the rind off by slicing sections from the top to the bottom, working your way around until you are left wtih just the flesh of the grapefruit.
- Slice grapefruit into rings. Place grapefruit rings on serving platter in an overlapping fashion.
- Sprinkle grapefruit with sliced onion, basil, chives and feta cheese.
- Drizzle balsamic vinegar and olive oil over the top. Season with salt and fresh cracked black pepper.

- Cut grapefruit in half; with a sharp knife, cut around each section to loosen fruit, reserving juice. In a salad bowl, toss the spinach, onion and grapefruit sections.
