For at least one meal at your summer rental, serve sausages. They come seasoned and self-contained, with no need for condiments or sauces. After a long trip, you just throw them on the grill or under a broiler, and serve with a salad on the side. Or, even better, toss them into your salad (in this case, a lightly grilled radicchio salad), letting their fat flavor the leaves along with the lemon juice and good olive oil you also packed.

2 large heads radicchio, about 10 ounces each
3 to 4 tablespoon extra-virgin olive oil, more to taste
1/4 teaspoon salt, more to taste
2 pounds sweet or hot Italian sausages
1 lemon, halved
Basil leaves, for serving

Steps:

  • Light or heat up the grill. Halve radicchios lengthwise through stem end, and toss with 1 tablespoon olive oil (or more if you need it to coat) and 1/4 teaspoon salt.
  • Put radicchios, cut side down, and sausages on the grill and cover. Let cook for 2 to 3 minutes, until outer radicchio leaves are dark brown. Transfer to a cutting board and let cool while sausages finish cooking, about 5 minutes more.
  • When cool enough to handle, thinly slice radicchios. The outsides should be charred, and the insides should still be crisp and raw. Combine in a bowl with another 2 tablespoons olive oil and the juice of half a lemon. Taste and correct seasonings, adding lemon juice, salt and olive oil to taste.
  • Spread radicchio on a platter and top with grilled sausages. Garnish with basil and serve.

3 tablespoons extra-virgin olive oil, plus more for serving
4 pork sausages (about 1 pound), casings removed
1/2 white onion, diced
Pinch red pepper flakes
1/2 cup white wine
1 pound pasta, such as cavatelli or orecchiette
1/3 cup freshly grated Parmigiano-Reggiano, plus more for topping
1/2 head radicchio, thinly sliced
1/2 cup walnuts, toasted and hand-crushed

Steps:

  • In an 8- to 12-quart pot, bring 6 quarts (24 cups) salted water to a rolling boil.
  • In a large nonstick skillet, heat 2 tablespoons of the olive oil over medium-high heat until hot but not smoking. Add the sausage and cook, breaking it up with a wooden spoon, until browned but not yet crispy. Remove the meat from the skillet with a slotted spoon and set aside.
  • Add the onions and remaining tablespoon of olive oil to the skillet and saute until the onions are soft. Add the sausage back along with a pinch of red pepper flakes and saute an additional minute. Reduce the flame to medium low and pour in the wine, cooking until it is reduced by half, 3 to 4 minutes. Remove the sauce from the heat.
  • Add the pasta to the boiling water and cook until al dente. Drain the pasta and add it to the sauce in the skillet. Add the Parmigiano-Reggiano and radicchio and toss to combine the ingredients. Garnish with the crushed walnuts, a drop of extra-virgin olive oil and a light dusting of freshly grated Parmigiano-Reggiano.

4 heads radicchio
1/2 cup balsamic vinegar
1/4 cup olive oil
1 tablespoon red chili flakes
1 head garlic, peeled and finely chopped
Pizza Dough, recipe follows
3 sprigs fresh rosemary, leaves finely chopped
1 pound fresh spicy Italian sausage
4 ounces taleggio cheese, sliced into 2- by 1/2-inch slices
Kosher salt
3 1/2 cups "00" flour
1 teaspoon dry active yeast
1/2 tablespoon sugar
1 tablespoon extra-virgin olive oil, for oiling the bowl

Steps:

  • Remove the stems and quarter the radicchio heads. Mix the balsamic, olive oil, chili flakes and chopped garlic to make a marinade. Submerge the radicchio, cut-side down, in the marinade for 1 hour prior to grilling.
  • Crumble the sausage into a medium saucepan and cook over medium-high heat until fully rendered and slightly browned, 8 to 12 minutes. Using a slotted spoon, remove the cooked sausage to a tray lined with paper towels.
  • Remove the radicchio from the marinade, reserving the marinade itself for dressing the finished radicchio. Grill the radicchio over an open flame starting with the cut-side down, and rotating until slightly charred on the outside (we suggest a charcoal grill, but if not using an outdoor grill, a griddle or grill pan would suffice). Once cooked, remove to a tray to cool. When the radicchio is cool, chop into 1-inch squares and toss with the reserved marinade.
  • Roll out the pizza dough into three 12-inch circles, 1/4-inch thick.
  • Start by grilling 1 pizza over medium-high heat on the grill. Once the bottom has a slight char, flip the pizza and top with some of the grilled radicchio, cooked sausage, chopped rosemary and taleggio slices (about 3 per pizza). Cover with the grill lid to melt the cheese and crisp the bottom, just a few minutes. Remove the pizza from the grill with a wide spatula to a cutting board. Let cool for a few minutes, and then slice into 6 or 8 pieces. Repeat with the remaining dough and ingredients.
  • Combine the flour, 3/4 cup water, yeast and sugar in the mixing bowl of a stand mixer. Knead on medium speed for 10 minutes. Place in an oiled bowl and allow the dough to rest for 1 hour, covered, in a draft-free spot.
  • Punch down and shape the dough into two to three 10-ounce balls. Allow to proof on an oiled tray or container covered with a towel or lid until almost doubled in size.

I'm sure I wouldn't like raddichio without the dressing because of the bitter taste. The dressing is great with it. And I like that it's grilled. It reminds me of when we cook romaine lettuce on the bbq.

4 garlic cloves, finely chopped
1/4 cup olive oil
1 teaspoon chopped fresh rosemary leaf
1 teaspoon chopped sage
1 teaspoon chopped thyme
1/4 cup balsamic vinegar
kosher salt, to taste
1/2 teaspoon black pepper
4 heads radicchio, halved through the root
grated parmesan cheese, for garnish (optional)

Steps:

  • Place the garlic, olive oil, rosemary, sage, thyme, vinegar, salt, and pepper in a large bowl and mix well.
  • Add the radicchio and gently toss so that it is well coated.
  • Cover and let marinate at room temperature for at least 1 hour.
  • Preheat grill.
  • Place the radicchio on hot grill and baste the marinade on top.
  • Grill turning with tongs till edges of the radicchio are crisp and almost beginning to look burnt, about 15 minutes.
  • Serve immediately, with grated Parmesan cheese.

1 tablespoon butter
2 teaspoons olive oil, divided
2 medium red onions (about 10 ounces each), halved, thinly sliced (about 5 1/2 cups)
2 large heads of Chioggia or Treviso radicchio (about 20 ounces total), cored, thinly sliced (about 8 cups)
3 tablespoons balsamic vinegar
4 fully cooked chicken-apple sausages (about 3 ounces each)

Steps:

  • Melt butter with 1 teaspoon olive oil in heavy large skillet over medium heat. Add red onions and cook until soft and golden brown, stirring often, about 25 minutes. Add radicchio and sauté until wilted, about 2 minutes. Add balsamic vinegar and cook over medium-high heat until liquid is absorbed, about 1 minute. Season to taste with salt and pepper. Keep onion-radicchio mixture warm while preparing sausages.
  • Heat remaining 1 teaspoon olive oil in another heavy large skillet over medium-high heat. Add chicken-apple sausages and cook until sausages are well browned and heated through, turning frequently, about 5 minutes.
  • Serve onion-radicchio mixture alongside sausages.
