3 lbs pork tenderloin

1 teaspoon fresh ground black pepper
4 cups reduced-sodium chicken broth
4 tablespoons balsamic vinegar
4 cups frozen dark sweet cherries
1/2 cup dried sour cherries, finely chopped (optional)
1 tablespoon butter
1 tablespoon light brown sugar

Steps:

  • Heat oven to 350°F Warm 1 tablespoon oil in ovenproof skillet over medium heat. Add shallots; cook 1 to 3 minutes or until.

  • Season tenderloin with salt and pepper. Heat remaining 3 tablespoons oil in ovenproof skillet over medium-high heat. Add.

1 tablespoon canola oil
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1 cup pitted fresh or frozen dark sweet cherries, thawed, chopped
1 jalapeno pepper, seeded and minced
1/2 cup finely chopped peeled jicama
1 ounce semisweet chocolate, grated
2 tablespoons minced fresh cilantro
1 green onion, thinly sliced
1 tablespoon lime juice
1 teaspoon honey
Salted pumpkin seeds or pepitas

Steps:

  • Brush tenderloins with oil; sprinkle with salt, cumin and chili powder. Grill, covered, over medium heat until a thermometer reads 145°, 15-20 minutes, turning occasionally. ⅔ cup honey
½ cup Dijon mustard
¼ teaspoon chili powder
¼ teaspoon salt

Steps:

  • Place meat in a large resealable plastic bag. In a medium bowl, mix together honey, Dijon mustard, chili powder, and salt. Pour marinade over tenderloins, seal, and refrigerate for at least 4 hours.
  • Prepare the grill for indirect heat.

1 tablespoon vegetable oil
2/3 cup chopped onion
2 cups fresh cherries, pitted

Steps:

  • Prepare barbecue (medium heat). Mix preserves, vinegar, and allspice in medium bowl. Set aside 1/4 cup of preserves mixture for glaze; reserve remaining preserves mixture.

8 bone-in pork chops
1 (12 ounce) package frozen black cherries, thawed

½ cup white sugar
2 tablespoons chopped fresh mint

Steps:

  • Whisk together the vinegar, salt, garlic powder, basil, and red pepper flakes in a large glass or ceramic bowl. Add the pork chops and toss to coat. Cover the bowl with plastic wrap; marinate in the refrigerator 6 hours to overnight.
  • Preheat an outdoor grill for medium-high heat; lightly oil the grate.

1 teaspoon each dried oregano, tarragon and rosemary, crushed
2 pork tenderloins (1 pound each), trimmed
RELISH:
1 large red onion, sliced
2 tablespoons olive oil
3 tablespoons sugar
1/2 cup dried cherries
1/4 cup red wine vinegar
1/4 teaspoon dried rosemary, crushed

Steps:

  • In a small bowl, combine garlic powder and herbs; rub over pork. Cover and refrigerate for 30 minutes., For relish, in a large saucepan, saute onion in oil until tender. Add sugar; cook and stir over medium heat for 10 minutes or until onion is browned. Add the cherries, vinegar and rosemary. Bring to a boil. Reduce heat; cover and simmer for 10 minutes.
