"I came across the recipe for this glaze in a grilling manual but wasn't satisfied with it. I kept the combination of orange marmalade and lime juice and adapted the seasonings to my liking," explains Helen Faddis of Gloucester, Massachusetts. "It's also great on spareribs and chicken."

1 teaspoon cornstarch
1/8 teaspoon ground ginger
1 tablespoon soy sauce
1 teaspoon water
1/4 cup orange marmalade
1 tablespoon lime juice
1-1/2 teaspoons olive oil
1 garlic clove, minced
2 bone-in pork loin chop (3/4 inch thick)
1 small lime, thinly sliced

Steps:

  • In a small saucepan, combine the cornstarch, ginger, soy sauce and water until smooth. Stir in the marmalade, lime juice, oil and garlic until blended. Bring to a boil; cook and stir mixture for 1-2 minutes or until thickened. , Place the pork chops in a greased 8-in. square baking dish. Spoon glaze over pork, turn to coat. Top with the lime slices. Bake, uncovered, at 400° for 30-40 minutes or until pork juices run clear.

4 pork chops
1/3 cup orange marmalade
1 tablespoon chopped fresh sage
2 tablespoons soy sauce
1 clove garlic, minced
2 tablespoons orange liqueur (Grand Marnier) (optional)
salt
fresh ground black pepper

Steps:

  • In a small bowl, combine marmalade, sage, soy, garlic, Grand Marnier, salt and pepper.
  • Pour over chops, and marinate for 30 minutes (I put the chops and marinade in ziplock bags).
  • Grill the chops, reserving the marinade.
  • While the chops are cooking, add the marinade to a small saucepan, bring to a boil, then remove from heat.
  • To serve, spoon glaze over the pork chops and garnish with sage leaves.

1/2 cup kosher salt
1 tablespoon smoked salt
1 teaspoon black peppercorns
1 bay leaf
1 cup honey
4 tea bags black tea
4 (6-ounce) bone-in pork chops
1 tablespoon toasted sesame oil
3 tablespoons low-sodium soy sauce
1/2 cup white wine
1 orange, zested and juiced
1 tablespoon mirin
1 tablespoon grated fresh ginger
3 tablespoons honey
Salt and pepper

Steps:

  • For the brine: Combine 1/2 gallon cold water, kosher salt, smoked salt, peppercorns, bay leaf, honey and tea bags in a large zip-top bag. Place the pork chops into the bag and the bag into the refrigerator. Let marinate for 2 hours. Remove the chops from the brine and pat dry with a paper towel. Discard the brine and allow the pork chops to come to room temperature, about 20 minutes.
  • Prepare a grill or grill pan to medium-high heat. Place the pork chops on the grill and cook for 6 to 8 minutes per side. Remove to a plate, cover with foil and keep in a warm place while making the glaze.
  • For the glaze: Combine the sesame oil, soy sauce, white wine, orange zest and juice, mirin, ginger, honey and salt and pepper in a medium saucepan over medium-high heat. Bring to a low boil and reduce the heat to low. Simmer about 10 minutes.
  • Drizzle about 3 tablespoons of the glaze on each pork chop and serve immediately.

4 bone-in center-cut pork chops, about 1 inch thick
salt and pepper
2 tablespoons vegetable oil
1/2 small yellow onion, chopped fine
1/2 teaspoon ground ginger
1 cup orange juice, plus
3 -4 oranges, zest of (2 strips orange rind)
1/2 cup low sodium chicken broth
1/2 cup packed dark brown sugar
1 teaspoon hot sauce
1 tablespoon unsalted butter

Steps:

  • Pat chops dry with paper towels and season with salt and pepper.
  • Heat 1 tablespoon oil in large skillet over medium-high heat until just smoking.
  • Add chops and cook until well browned, about 4 minutes per side.
  • Transfer chops to a plate.
  • Add remaining oil and onion to skillet and cook until lightly browned, about 3 minutes.
  • Stir in ginger and cook until fragrant, about 30 seconds.
  • Stir in juice, zest, broth, sugar and hot sauce, scraping up any browned bits from bottom of pan.

2 tablespoons dark brown sugar, or to taste
1 cup ketchup
1 cup mayonnaise
½ cup prepared yellow mustard
¼ cup Worcestershire sauce
1 teaspoon chili powder
⅛ teaspoon ground cayenne pepper
6 (3/4 inch thick) pork chops

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Place the brown sugar, ketchup, mayonnaise, yellow mustard, Worcestershire sauce, chili powder, and cayenne pepper into a bowl, and stir until blended.
  • Place the pork chops on the preheated grill, and cook the chops until the surface is seared but the meat is just barely pink in the middle, about 5 minutes. Brush the chops with the glaze mixture, and flip to cook the glaze onto the meat. When the glazed side shows good grill marks, flip again, brush glaze onto the pork chops, flip, and grill until the other side shows nice brown grill marks. An instant-read thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C).

  • Trim fat from chops. Place chops in a plastic bag set in a shallow dish. For marinade, in a small bowl stir together 2 tablespoons of the honey, the orange peel, 1/4 cup orange juice, 2 tablespoons of the soy sauce, garlic, mustard, and 2 teaspoons of the ginger. Pour over chops; seal bag. Marinate in the refrigerator for 2 hours, turning bag occasionally. Drain chops, discarding marinade.
  • For the orange glaze, in a 2-quart saucepan combine remaining 6 tablespoons honey, 1/4 cup of the orange juice, 2 tablespoons soy sauce, and 4 teaspoons ginger. Bring to boiling; reduce heat. Boil gently, uncovered, for 5 minutes or until sauce is reduced by half (should have slightly less than 1/2 cup), stirring frequently. (Watch carefully as mixture will bubble up.) Set aside.
  • For a charcoal grill, arrange medium-hot coals around a drip pan. Test for medium heat above pan. Place chops on grill rack over pan. Cover; grill for 30 to 35 minutes or until an instant-read thermometer inserted in center of chops registers 160 degree F, turning once halfway through grilling and brushing with glaze the last 5 minutes. Spoon on any additional glaze before serving. (For a gas grill, preheat grill. Reduce heat to medium. Adjust for indirect cooking. Grill as above). Makes 6 servings.
