CHEESE STUFFED MANICOTTI
Homemade meat sauce served over manicotti stuffed with three cheeses. This is the best manicotti I have ever had. I always get requests for the recipe.

- Heat a large skillet over medium-high heat. Cook and stir beef, onion, and roasted garlic in the hot skillet until browned and crumbly, 5 to 7 minutes. Continue to simmer until pan juices evaporate, about 10 minutes more. Add diced tomatoes, tomato paste, sugar, 1 1/2 teaspoons salt, oregano, thyme, bay leaf, 1/2 teaspoon pepper, and garlic salt; bring to a boil. Reduce heat to medium-low and simmer until flavors blend, about 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook manicotti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain and cool slightly.
- Mix mozzarella cheese, cottage cheese, 1/4 cup Parmesan cheese, egg, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a bowl. Spoon a generous amount of the cheese mixture into each manicotti shell.
- Pour enough tomato-beef sauce to cover the bottom of a 9x13-inch baking dish. Arrange stuffed manicotti over sauce; pour remaining sauce over pasta. Cover with aluminum foil.
- Bake in the preheated oven until bubbly, about 30 minutes. Sprinkle remaining 1/4 cup Parmesan cheese over manicotti and return to the oven. Bake until cheese filling is melted, 10 to 15 minutes more.

- Drain and flake salmon, reserve liquid. In a bowl, combine salmon, cottage cheese, eggs, onion, parsley, and dill weed. Gently stuff manicotti with salmon mixture. Set aside. In a saucepan, melt butter, stir in flour and salt. Add milk to reserved salmon liquid to equal 1 ½ cups. Stir into flour mixture. Cook over medium heat until thickened. Stir in 1 c Monterey Jack cheese. Pour ½ of the sauce into a 3 qt baking dish. Arrange filled shells over sauce. Top with remaining sauce. Sprinkle with remaining Jack cheese and Parmesan. Bake at 375 for 15 minutes. Uncover and bake 10 minutes longer until cheese is bubbly and lightly browned.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and cool on waxed paper or aluminum foil to prevent the noodles from sticking together.
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, parsley, salt and pepper; fill manicotti with cheese mixture.

Steps:
- Heat oven to 350 degrees.
- Cook manicotti shells according to package directions.
- Mix together remaining ingredients except tomato sauce.
- Stuff shells with mixture.
- Pour about 3/4 of the tomato sauce over the bottom of a large baking pan and place shells on top.
- Spread the remaining sauce over the top of the shells to keep moist.
- Bake about 20 minutes or until sauce is bubbly and cheese is melted.
- You can sprinkle more cheese on the top while baking.

- Preheat oven to 350F and spray a 13x9 inch baking dish with cooking spray.
- Cook pasta in boiling water according to package instructions or until firm to the bite. Drain, cover and set aside.

- Fill a large pot with lightly salted water and bring to a rolling boil. Stir in manicotti and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and place on a baking sheet to cool. Place in freezer until hardened, about 5 minutes.
- Heat 1 tablespoon oil in a large saute pan over medium-high heat. Add sausage, beef, and onion; saute 3 minutes. Add basil, rosemary, thyme, Italian seasoning, and black pepper. Cook until meat is browned, about 8 minutes. Stir in 1/2 can tomato sauce and cook until heated through, 3 to 5 minutes. Transfer to a large bowl and set aside to cool.
- Heat a skillet over medium-high heat for the sauce. Add onion and saute 1 minute. Add remaining tomato sauce, rosemary, and thyme. Stir in basil and red pepper flakes.
- Fold mozzarella cheese and cottage cheese into the cooled meat mixture. Stuff each manicotti shell with meat mixture and place back onto the baking sheet. Place filled shells in the freezer to firm up, about 5 minutes. Slice shells into bite-sized pieces.
- Heat 2 quarts vegetable oil in a saucepan to 350 degrees F (175 degrees C).
- Place flour, bread crumbs, and beaten eggs each in a separate bowl. Dredge manicotti slices in flour, then eggs, and then bread crumbs and place on the baking sheet.
- Fry slices in the hot oil until golden brown and crispy, about 5 minutes. Drain on a paper towel-lined plate. Serve with the spicy tomato dipping sauce.

- Sauce: Heat olive oil in a large saucepan.
- Saute onion and garlic in oil until onion is transparent.
- Add cut up tomatoes, tomato sauce, sugar, and basil.
- Simmer about 20 minutes.
- Filling: Mix ricotta, mozzarella, parmesan, parsley, sugar, and egg together.
- Assemble: Fill uncooked manicotti shells with cheese mixture.
- Place in a lightly greased 9 x 13-inch baking dish; cover completely with sauce.
- Cover and bake at 400°F for about 1 1/4 hours or until pasta is tender.
- Uncover and sprinkle with some Parmesan cheese and bake 15 minutes longer.
- Let sit about 15 minutes before serving.

- Prepare pasta as directed on package; drain. Rinse with cold water, drain and arrange in single layer to fill.
- Meanwhile, mix ricotta cheese, 1 1/2 cup of the mozzarella cheese, 1/4 cup of the parmesan cheese the egg, parsley, salt, pepper and nutmeg.
- Spoon mixture into manicotti shells, using at least 1/3 cup per shell. Place filled manicotti shells in a single layer in greased 13X9 inch baking pan.
- Pour spaghetti sauce over manicotti shells.
- Sprinkle with remaining 1/2 cup mozzarella cheese and 1/4 cup parmesan cheese, bake at 350 for 35 minutes or until hot.

One of my favorites recipes--a rich combination of sausage and three cheeses stuffed into manicotti shells! And it's not too difficult!

Steps:
- Brown sausage, cool slightly.
- Mix cheeses, sausage, olives, onions in large bowl.
- Stuff hard manicotti shells with above mixture (do not cook shells first or they will be near impossible to stuff).
- Place stuffed shells in 9x13 Pyrex/glass baking dish.
- Spread remaining sausage/cheese mixture over shells.
- Pour spaghetti sauce over top. You may only need 1 1/2 cans of sauce depending on the pan size.
- Pour 1/2 can water along sides.
- Cover and refrigerate over night--this wait period will help the shells soak up water and get stoft.
- Bake at 350°F for 40-50 minutes or until bubbly.
