Steps:
- Combine the sugar, cream, cocoa and butter in a small saucepot over medium heat and cook, stirring, until the butter melts and everything is combined, a few minutes.
- Transfer to a mason jar and store in the refrigerator. It will harden as it cools so when ready to use, simply reheat in a saucepan over medium-low heat.

- Combine the heavy cream, butter, brown sugar, corn syrup and salt in a saucepan. Bring to a simmer over medium heat, whisking. Add the chocolate and cocoa powder, reduce the heat to low and cook, whisking, until the chocolate is melted and the sauce is smooth, 1 to 2 minutes.
- Whisk in the vanilla. Let cool 10 minutes before serving. To store, let cool completely, then cover and refrigerate up to 2 weeks; reheat before serving.
QUICK AND YUMMY HOT FUDGE SAUCE
Created this out of what was on hand for a luscious ice cream topping. Be sure not to skimp on the quality of cocoa or ice cream!

- Melt the butter in a saucepan over medium heat.
- Add the powdered milk, cocoa, sugar and water and stir until smooth.
- Continue to stir over medium heat (stir constantly!) until mixture just begins to boil.
- Remove from heat.
- Add vanilla.
- Let stand a minute or two, then serve warm over vanilla ice cream!

- Heat to boiling over medium heat, stirring constantly.

- For the sorbet: Combine sugar and water in a medium saucepan over medium heat. Stir often until the sugar has dissolved and the mixture is just starting to boil. Remove from heat and stir in blood orange and lemon juice.
- Once chilled, use an ice cream maker according to manufacturing instructions. Transfer to an airtight container and let freeze overnight.
- About an hour before serving the sorbet, add wine and cream to a medium saucepan over medium heat. Let cook until there are bubbles forming around the edges of the pot and then stir in the sugar. Let mixture come to a boil, stirring often to make sure the sugar is completely dissolved. Once boiling, reduce heat to low and whisk in the butter.
