Number Of Ingredients 33

Dough
1 ¼-oz. envelope active dry yeast (about 2¼ tsp.)
1 tsp. sugar
⅓ cup (42 g) whole wheat flour
2½ tsp. kosher salt
2 Tbsp. extra-virgin olive oil, plus more for bowl
3 cups (375 g) bread flour, plus more for surface
Burst Cherry Tomatoes
3 Tbsp. extra-virgin olive oil
1 pint cherry tomatoes
Kosher salt, freshly ground pepper
3 garlic cloves, thinly sliced
1 tsp. dried oregano
Lemony Swiss Chard
1 bunch Swiss chard
3 Tbsp. extra-virgin olive oil
Kosher salt, freshly ground pepper
½ tsp. crushed red pepper flakes
1 garlic clove
1 lemon
½ oz. Parmesan, finely grated (about ½ cup)
Tomato Passata
1 (28-oz.) can whole peeled tomatoes
⅓ cup extra-virgin olive oil
2 tsp. kosher salt
Assembly
Bread flour (for dusting)
Extra-virgin olive oil (for brushing and drizzling)
1 1-lb. ball mozzarella, torn into bite-size pieces
8 oz. Manchego cheese, coarsely grated
4 oz. sliced pepperoni and/or thinly sliced soppressata (optional)
Rosemary Agrodolce (optional)
Basil leaves, torn if large, and crushed red pepper flakes (for serving; optional)

Steps:

  • Dough
  • Stir yeast, sugar, and 1¼ cups warm (not hot) water in the bowl of a stand mixer until yeast dissolves. Let sit until mixture is foamy, about 5 minutes.
  • Add whole wheat flour, salt, and 2 Tbsp. oil to yeast mixture and mix to combine. Fit mixer with dough hook and, with mixer on low speed, gradually add 3 cups (375 g) bread flour, mixing until a shaggy dough forms, about 4 minutes from when you start adding the flour. Stop mixer and scrape down sides of bowl to incorporate any dry bits into dough. Increase mixer speed to medium and knead until dough is smooth and shiny, about 5 minutes.
  • Transfer dough to a lightly floured surface and knead briefly to bring together. Shape into a ball, place in a large lightly oiled bowl, and turn to coat. Cover bowl and let dough sit in warm draft-free spot until doubled in size, 1-1½ hours. Make your toppings while your dough is rising.
  • Burst Cherry Tomatoes
  • Heat oil in a large skillet over medium-high. Add tomatoes, season with salt and pepper, and cook, stirring occasionally with a wooden spoon, until skins start to blister and split, about 2 minutes. Add garlic and toss to coat. Cook, lightly pressing on tomatoes with spoon to release juices without smashing completely, until garlic is softened, about 2 minutes. Mix oregano into sauce; taste and season with more salt and pepper if needed.
  • Do ahead: Sauce can be made 4 days ahead. Let cool, then cover and chill. Bring to room temperature and stir to combine before using.
  • Lemony Swiss Chard
  • Cut Swiss chard leaves away from ribs and stems, then cut crosswise into 3"-wide strips. Trim away woody part from stems; discard. Finely chop ribs and stems.
  • Heat oil in a large skillet over medium-high. Add ribs and stems and season with salt and black pepper. Cook, stirring occasionally, until they release some liquid, look slightly shriveled, and are a shade or two darker, about 5 minutes. Add leaves and red pepper flakes and toss to coat. Season with more salt and black pepper and reduce heat to medium. Cook, tossing occasionally, until leaves are bright green, wilted, and tender, about 4 minutes. Transfer chard mixture to a medium bowl and let cool slightly.
  • Finely grate garlic into bowl with chard mixture, then finely grate in zest from lemon; mix well. Add Parmesan and mix again to combine. Taste and season with more salt, black pepper, and red pepper flakes, if needed.
  • Do ahead: Chard mixture can be made 2 days ahead. Let cool, then cover and chill. Bring to room temperature and stir to combine before using.
  • Tomato Passata
  • Purée tomatoes in a blender on low speed (or use an immersion blender if you have one) until smooth (try not to aerate it too much). Transfer sauce to a medium bowl and stir in oil and salt.
  • Do ahead: Passata can be made 3 days ahead. Cover and chill, or freeze up to 6 months.
  • Assembly
  • Prepare a grill for medium-high indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off). Clean grate. Turn out dough onto a lightly floured surface and divide into 4 pieces. Working one at a time, gently shape into balls. Transfer to a lightly floured small rimmed baking sheet and cover. Let sit 20-30 minutes.
  • Place a ball of dough on a lightly floured surface (keep remaining balls covered) and, using your fingers, press out to an 8" round. Drape dough over the backs of your hands and gently pull and stretch, rotating dough as you go, until about 12" in diameter (it's okay if it's not a perfect circle).
  • Brush dough with oil. Place, oiled side down, on grill over direct heat and cook until large bubbles appear across surface, dough stiffens, and underside is dark brown, about 2 minutes. Brush top with oil, turn over, and cook just to lightly dry out second side, about 30 seconds.
  • Using tongs and a metal spatula, move dough over to cooler side of grill. Top with a spoonful of passata or burst cherry tomatoes and one quarter of cheese (either alone or in combination). Add pepperoni or salami (if using), then some of the lemony Swiss chard, and/or Rosemary Agrodolce as desired. Carefully slide pizza back over direct heat. Cook until cheese is melted and toppings are heated through, about 2 minutes. If dough is in danger of burning on underside but toppings need more time, return pizza to cooler side, cover grill, and cook another 1-2 minutes.
  • Transfer pizza to a cutting board and drizzle with more oil. Top with basil and red pepper flakes if desired.
  • Repeat with remaining ingredients to make 3 more pizzas.

POTATO, SAGE, AND ROSEMARY PIZZA



Potato, Sage, and Rosemary Pizza image

3 tablespoons extra-virgin olive oil
12 ounces unpeeled small Yukon Gold potatoes, sliced into very thin rounds
1 (13.8-ounce) tube refrigerated pizza dough
2 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh sage
2 garlic cloves, chopped
1/4 teaspoon dried crushed red pepper
1 cup (packed) grated whole-milk mozzarella cheese (about 4 ounces)
1/2 cup finely grated Parmesan cheese

Steps:

  • Preheat oven to 400°F. Heat oil in heavy large skillet over medium heat. Add potato slices in single layer. sauté until just tender, about 5 minutes. Cool briefly.
  • Unroll dough on rimmed baking sheet. Scatter potato slices over dough, leaving 3/4-inch plain border. Sprinkle with rosemary, sage, garlic, and crushed red pepper. Sprinkle with cheeses to cover.
  • Bake pizza until crust is crisp and cheeses melt, about 20 minutes. Using metal spatula, loosen crust from sheet. Slide out onto platter or board and serve.

I found this recipe years ago, from Betty Crocker, I think. My boys really loved it! Even though they are grown now, they still ask for it. It is so simple and gives you that "Pizza Kick".

This recipe works best with small potatoes that are about 1 1/2 inches in diameter. If using medium potatoes, 2-3 inches in diameter, cut potatoes in quarters. If potatoes are larger than 3 inches in diameter, cut each potato into eights. Since potatoes are cooked in microwave, use wooden skewers. Very good recipe done on the BBQ. Recipe came from Cooks Illustrated.

vegetable oil, for grill rack
4 tablespoons olive oil
8 medium garlic cloves, minced
1 teaspoon fresh rosemary, chopped
kosher salt
2 lbs Red Bliss potatoes, scrubbed, halved, and skewered
ground black pepper
2 tablespoons fresh chives, chopped

Steps:

  • Turn all burners to high, cover, and heat grill until very hot, about 15 minutes. use grill brush to scrape grill clean; oil cooking grate. Leave primary burner on high and reduce other burners to medium.
  • Meanwhile, heat olive oil, garlic, rosemary, and 1 1/2 teaspoons salt in small skillet over medium heat util sizzling, about 3 minutes. Reduce heat to medium-low and continue to cook until garlic is light blond, about 3 minutes. Pour mixture through fine-mesh strainer into small bowl'; press on solids. Measure 1 tablespoons solids and 1 tablespoons oil into large bowl and set aside. Discard remaining solids but reserve remaining oil.
  • Place slewered potatoes in single layer on large microwave safe plate and poke each potato several times with skewer. Brush 1 tablespoons strained oil and season libererally with salt. Microwave on high powder until potatoes offer slight resistance when pierced with the tip of a paring knife, abot 8 minutes, turning them halfway through cooking time. Transfer potatoes to baking sheet coated with 1 tablespoons strained oil Brush with remaining tablespoons strained oil; season with salt and pepper to taste.
  • PLace potatoes on hotter part of grill. Cook, with lid down, turning once, until grill marks appear, about 4 minutes. Move potatoes to cooler part of the grill; continue to cook with lid down until paring knife slips in and out of potato easily; 5-8 minutes longer. Remove potatoes from skewers and transfer to bowl with reserved garlic/oil mixture; add chives and toss until thoroughly coated. Serve immediately.

  • Mix oil and rosemary in a small bowl, set aside. Mix the next 6 ingreidents plus 1/2 teaspoon salt and 1/2 teaspoon pepper in a medium bowl, cover and refrigerate. Cook the potatoes until tender. Drizzle the rosemary oil over the potatoes-toss well. Put the potatoes on the grill-cut side down and cook turning frequently until tender and brown in spots, about 8 minutes. To serve, transfer the potatoes into a serving bowl and toss with the mayo mixture. Serve warm

1 cup warm water (105F to 115F)
1 tablespoon sugar
1 envelope dry yeast
3 tablespoons olive oil
3 cups flour
1 1/2 teaspoons salt
1 tablespoon finely chopped fresh rosemary
3/4 cup olive oil
6 tablespoons balsamic vinegar
3 tablespoons minced garlic
2 tablespoons chopped fresh rosemary
1 lb hot Italian sausage
2 yellow bell peppers or 2 red bell peppers, cored,quartered lengthwise
1 large red onion, peeled,cut through root end into ½ inch thick wedges
3 cups grated mozzarella cheese
3/4 cup freshly grated parmesan cheese
2 cups crumbled chilled soft fresh goat cheese (such as Montrachet)
4 plum tomatoes, halved,seeded,chopped
1 cup chopped green onion top

Steps:

  • For dough: Combine water and sugar in processor.
  • Sprinkle yeast over; let stand until foamy, about 10 minutes.
  • Add oil, then 3 cups flour and salt.
  • Process until dough comes together, about 1 minute.
  • Turn dough out onto floured work surface.
  • Sprinkle with rosemary.
  • Knead until dough is smooth and elastic, adding more flour by tablespoonfuls if dough is sticky, about 5 minutes.
  • Lightly oil large bowl.
  • Add dough; turn to coat with oil.
  • Cover bowl with plastic, then towel.
  • Let stand in warm, draft-free area until dough doubles, about 1 hour.
  • Punch down dough.
  • Knead in bowl until smooth, about 2 minutes.
  • For toppings: Whisk first 4 ingredients in medium bowl.
  • Let vinaigrette stand 15 minutes at room temperature or refrigerate for up to 2 hours.
  • Prepare bbq (medium heat).
  • Arrange sausages, peppers and onion on baking sheet.
  • Brush with some of vinaigrette.
  • Sprinkle with salt and pepper.
  • Grill sausages until cooked through and peppers and onion until slightly charred and crisp-tender, turning and basting occasionally, about 12 minutes for sausage and 8 minutes for peppers and onion.
  • Transfer sausage and vegetables to cutting board.
  • Cut sausages into ½-inch pieces and peppers into thin strips.
  • To finish: Add coals to bbq, if necessary.
  • Divide dough into 4 equal pieces.
  • Stretch out each piece on floured surface to 9-inch round.
  • Place 2 dough rounds on grill.
  • Grill over medium heat until top of dough puffs and underside is crisp, about 3 minutes.
  • Turn rounds over.
  • Grill 1 minute.
  • Transfer to baking sheet with well-grilled side up.
  • Repeat with remaining 2 dough rounds.
  • Sprinkle each with ¼ of mozzarella and Parmesan.

Adapted from a recipe in 'The Australian Women's Weekly's Cooking on a Shoestring'. If you aren't vegetarian and you can stretch your shoestring to include bacon, a couple of rashers of bacon tastes great as an additional topping. I've added a couple of extra herbs to the original recipe that had only the rosemary and, if you're making this, I'd encourage you to use whatever are your favourite herbs. I've included the pizza dough from the original recipe but I've also made this with Recipe #4892, which I found when checking on Zaar before posting this recipe. It also makes a deliciously crisp and flavoursome pizza base. The preparation time below includes the 60 minutes standing dough when making the dough.

1 teaspoon caster sugar
7 g sachet dried yeast (about 1/4 ounce)

Steps:

  • Combine the water, sugar and yeast in a small jug; stand in a warm place for about 10 minutes or until the mixture becomes frothy.
  • Sift the flour and salt into a large bowl, add the yeaast mixture; mix to form a soft dough; knead the dough on a floured surface for about 10 minutes or until it is smooth and elastic; place the dough in a lightly greased large bowl; cover; stand in a warm place for about an hour or until it has doubled in size.
  • Preheat the oven to 220°C/200°C fan-forced/400°F/6 gas mark and grease two oven trays.large enough to accommodate two18cm x 30cm (7 inch x 12 inch) pizzas.

3 teaspoons sugar
1 teaspoon salt
1 teaspoon pepper
Dough
2 tablespoons olive oil
1 cup water at room temperature
2 cups bread flour
2 teaspoons sugar
1 teaspoon salt
1 teaspoon instant yeast

Steps:

  • Sauce 1. Heat oil in large pot over medium heat. Add garlic and shallots and cook until soft, about 3-5 minutes. 2. Stir in oregano and basil, stir, and add diced tomatoes, crushed tomatoes, tomato paste, sugar, salt and pepper. 3. Simmer 20 minutes. Makes about 5 cups. Dough 1. Mix water and oil. 2. Add bread flour, sugar, salt and yeast to food processor. Pulse once or twice to mix. 3. While running, add water mixture through tube. Process until dough forms a ball that clears the sides of the bowl. If dough doesn't form a ball, add more flour one tablespoon at a time until it does. 4. Transfer dough to mixing bowl sprayed with olive oil. Cover and let rise for 2 hours. Pizza assembly Heirloom Tomato Sauce One batch pizza dough 1 12 ounce package bacon, cooked and chopped 1 shallot, chopped 8 ounces shredded fontina cheese Fresh rosemary for garnish 1. Divide dough into 4 sections. Roll into balls, dust with flour, and roll each one out to about a 6-8 inch size crust. Don't worry if the shape isn't perfect, grilled pizza is supposed to look rustic! Layer crusts in between wax paper. 2. Heat grill to medium high and lay crusts on grill. Grill for about 5 minutes, lifting up to check every minute to make sure the crusts aren't cooking too fast. Pop any big dough bubbles with a knife. 3. Remove crusts and turn over so grilled side is UP. Spread about 1/4 to 1/3 cup sauce on each crust, sprinkle with fontina cheese, and then shallots, and then bacon. Return to grill, put cover down, and grill until cheese is melted and bottom of crust is browned. 4. Remove from grill, sprinkle with rosemary and cut into sections. Makes 4 personal sized pizzas.

ROSEMARY CHICKEN AND POTATO PIZZA

This is a delightfully different pizza from the California Pizza Kitchen Cookbook. It's a bit fussy, but most of the parts could be done in advance and then assembled when you're ready to eat. Use whatever crust you like.

1/2 lb red new potato
1 tablespoon minced garlic

1/4 teaspoon white pepper
1 teaspoon salt
2 tablespoons olive oil
2 teaspoons minced garlic
1 teaspoon soy sauce
1/2 teaspoon salt
2 tablespoons olive oil
2 chicken breasts
1 recipe pizza dough
1 1/2 cups mozzarella cheese, shredded
1 teaspoon dried rosemary
1 1/2 teaspoons dried oregano
4 teaspoons chopped fresh parsley

Steps:

  • garlic-shallot butter with lemon:.
  • melt 1 T butter in a nonstick saucepan over medium high heat.
  • add shallot, garlic and thyme.
  • cook, stirring until mixture is light brown 7-8 minutes.
  • add salt, pepper, wine, lemon juice and chicken base.
  • cook till mixture is reduced to about 1/2 cup (toward the end, reduce heat to low and stir frequently to prevent scorching).
  • Remove from heat, quickly and thoroughly whisk in remaining 4 T butter.
  • Rosemary potatoes:.
  • preheat oven to 325.
  • combine sliced potatoes with garlic, oregano, rosemary, white pepper, salt and olive oil; coat thoroughly.
  • transfer the potato slices to a sheet pan; spread them out in a single layer, do not overlap.
  • discard leftover marinade - do not pour it over the potatoes.
  • cook the potatoes in the preheated oven for approximately 45 minutes.
  • some of the slices may need to be flipped over to promote even browning.
  • remove the potatoes from the oven when they begin to brown.
  • use a steel spatula to remove the potatoes from the sheet pan.
  • place potatoes on paper towels at room temperature to drain off any excess oil. do not refrigerate.
  • Grilled garlic chicken:.
  • combine garlic, soy sauce, salt and olive oil. marinate the chicken breasts in the garlic oil for about 15 minutes.
  • grill the chicken breasts for 5-7 minutes on each side (discard uncooked marinade).
  • remove the cooked chicken from the grill and chill thoroughly.
  • cut into 3/4 inch cubes and set aside in refrigerator.
  • to make pizza:.
  • preheat oven to 400.
  • prepare pizza dough, and spread out onto your favorite pizza pan (use your favorite dough, homemade or storebought).
  • use a large spoon to spread garlic shallot butter over the surface of the prepared pizza dough, within the rim.
  • cover the butter with the mozzarella.
  • distribute the grilled garlic chicken evenly over the cheese.
  • sprinkle the rosemary and oregano over the chicken.
  • place the rosemary potatoes over the other toppings, spaced abotu 1 inch apart.
  • transfer the pizza to the oven, bake till the crust is crisp and golden and the cheese at the center is bubbly, about 12-15 minutes.
  • when cooked, carefully remove the pizza from the oven.
  • sprinkle half the parsley over the hot potato topping.
  • slice and serve.

GORGONZOLA DOLCE, FINGERLING POTATOES, RADICCHIO, AND ROSEMARY

This was one of the original ten pizzas we served at the Pizzeria. I knew I wanted to offer a potato pizza, and I love the combination of potatoes and Gorgonzola.

Yield makes 1 pizza (serves 1)

Number Of Ingredients 8

1 round of Nancy's Pizza Dough (page 126)
1 tablespoon extra-virgin olive oil
Kosher salt
2 cups thinly sliced radicchio
6 ounces roasted fingerling potatoes (about 4 potatoes; see Smashed Potatoes with Rosemary, page 255)
3 ounces Gorgonzola dolce, crumbled
2 ounces low-moisture mozzarella, cut into 1/2-inch cubes
1 teaspoon fresh rosemary tufts

Steps:

  • Prepare and stretch the dough and preheat the oven according to the instructions given in "Nancy's Scuola di Pizza" (page 128).
  • Brush the rim of the dough with the olive oil and season the entire surface with salt. Lay the radicchio over the surface of the pizza.
