Just Cucumber Slices image

This is a simple recipe to have as a refreshing side dish. It's especially good for picnics, bar-b-ques, potlucks and buffets. If you like your slices on the tart side cut back on the sugar a little bit. Please note it will need to be chilled at least 3 hours.

1 large cucumber, peeled and sliced into thick slices
1/2 sliced onion (optional)
1/4-1/2 teaspoon dried dill weed
1/4 cup sugar
1/8 cup vinegar
1/8 cup water
1/4 teaspoon salt

Steps:

  • In a bowl toss together the cucumbers, onion, if using, and dill.
  • Combine sugar, vinegar, water and salt and bring to a boil.
  • Pour over cucumbers.
  • Stir to coat.
  • Cover and refrigerate 3 hours or overnight.

Light and Tasty Cucumber Slices image

This is another attempt at me trying to find low fat and low calories 'treats' that also pack a bit of flavor. I am a pickles freak so I would pretty much be happy with any cucumber and vinegar combo but I especially like these when I want a more delicate flavor. They are good as a side with dishes like salmon or I even sometimes just put a few on a sandwich when I want some zest without any fat. I make this with Splenda because I really don't want the sugar as I am counting fat and calories.

13 ounces cucumbers
2 garlic cloves, crushed and chopped
3/4 cup white vinegar
1 1/2 cups Splenda granular
1/4 teaspoon dried dill

Steps:

  • Slice the cucumber into really thin slices. I use my food processor to do this and it just takes a few seconds.
  • In a bowl combine the white vinegar, Splenda, garlic and dill and just stir until the Splenda is dissolved.
  • Pour wet mixture over the cucumber slices and stir so that the mixture has coated all of the slices.
  • You can eat right away but they are much better if you put them in an air tight container and chill them in the fridge for a few hours (I do them overnight).

3 medium onions, cut into 1/8-inch slices
3 cups sugar
3 cups cider vinegar
4 teaspoons canning/pickling salt
1-1/2 teaspoons mustard seed

Steps:

  • In a large container, combine cucumbers and onions. In a large bowl, combine the remaining ingredients, stirring until sugar is dissolved. , Pour over cucumber mixture; mix well. Cover and refrigerate overnight. May be refrigerated for up to 2 weeks.

1 onion, thinly sliced
1 tablespoon dried dill weed
1 cup white sugar
½ cup white vinegar
½ cup water
1 teaspoon salt

Steps:

  • In a large serving bowl, combine cucumbers, onions and dill. In a medium size bowl combine sugar, vinegar, water and salt; stir until the sugar dissolves. Pour the liquid mixture over the cucumber mixture. Cover and refrigerate at least 2 hours before serving (the longer this dish marinates the tastier it is!).

1 tablespoon whipping cream
2 ounces cream cheese, softened
1/4 teaspoon fresh lime juice
1 shallot, chopped finely
3/4 teaspoon fresh dill, chopped
kosher salt
black pepper
2 ounces smoked salmon, shredded and minced
English cucumber
kosher salt, for the cucumber rounds
diced red peppers or tomatoes

Steps:

  • Score the cucumber skins lengthwise with the tines of a fork; slice them cross-wise 1/2-inch thick, scoop out a small amount making a hole in the centers with a melon baller; sprinkle the cucumber rounds with a small amount of salt; set aside.
  • In a mini processor or mixer combine the whipping cream and cream cheese, add the lime juice, shallot, dill, salt and pepper to taste. Fold in the smoked salmon.
  • Just before serving place a mound of mousse in each cucumber round, garnish with dill weed and serve.

My friend Pan who is Chinese was amazed when I made these Cucumber slices for her. She said they reminded her of home. I try to take her a jar of them whenever we go for a visit.

1 1/2 pound(s) english cucumbers
1 tablespoon(s) kosher salt
1 tablespoon(s) sesame oil
1/4-1/2 teaspoon(s) szechuan peppercorn, according to taste
3/4 - inch piece fresh ginger, cut into thin strips
1/4-1/2 teaspoon(s) hot chili oil
4 tablespoon(s) chinese red rice wine vinegar, chingkiang (not red wine vinegar)
2 tablespoon(s) sugar

Steps:

  • Cut the ends off the cucumbers, cut in half lengthwise and use a small spoon to remove the seeds in the middle. Cut lengthwise into thin strips. Place in a colander, sprinkle the salt over and let sit for 1 hour. Drain and pat dry with paper towels.
  • Heat the sesame oil on medium heat. Stir in the peppercorn. Stir for about 1 minute, until fragrant. Stir in the ginger and the hot chili oil.
  • Turn the heat down and carefully add the red rice vinegar. Stir in the sugar. Bring to a boil, stirring to dissolve the sugar. Remove from the heat and stir in the cucumbers.
  • Transfer to a dish, cover and refrigerate overnight or 2 days. Toss again before serving.

DRESSING
1/2 jar(s) drained well, pimentos
1/2 c red wine vinegar

3 Tbsp vegetable oil
1/2 tsp dried basil
1/2 tsp table blend mrs. dash
1/2 tsp black pepper
1/2 tsp red pepper flakes *optional* will add some heat

  • 1. place sliced vegetables in a bowl that has a lid, for storage in refrigerator
  • 2. Combine dressing ingredients and wisk, until sugar dissolves
  • 3. pour over cucumber and onion slices.

2 medium cucumbers,unpeeled
6 oz crumbled feta
3 Tbsp greek yogurt
1/4 c finely diced red bell pepper
12 medium pimento stuffed olives, chopped
1 tsp oregano, dried or dill weed or some of each to taste
2 tsp lemon juice
1 pinch pepper to taste

Steps:

  • 1. Thinly slice cucumbers about 2 mm, thick with a vegetable peeler or mandolin. Lay cucumber slices on top of paper towel lined cutting board. Set aside.
  • 2. Combine feta and yogurt in a medium bowl(mash feta with a fork). Add remaining ingredients and stir well to combine.
  • 3. Place 1-2 teaspoons of mixture at one end of cucumber slices and roll up loosely. Secure with toothpicks. Repeat until all cucumbers slices are filled and rolled. Chill until ready to serve.

1 cup sliced onion
1 cup sliced green bell pepper
2 tablespoons salt
1 tablespoon celery seed
1 cup distilled white vinegar
1 ½ cups white sugar

Steps:

  • In a mixing bowl, combine the cucumber slices, onions, and green peppers.
  • In a saucepan over medium heat, combine the salt, celery seed, vinegar and sugar. Bring the mixture to a boil. Allow the mixture to cool for 10 to 15 minutes.
  • Combine the mixture in the mixing bowl with the mixture in the saucepan. Pack into sterile jars and refrigerate for 24 hours.

Peel sides of cucumber and slice it into 3 mm thick pieces. Peel garlic cloves, press them into the cheese and add in the dried basil. Mix it as well as you can. Get a piping bag, fill it up with cheese. Then, pet-dry the cucumber and pipe the cheese on top of the cucumber slices. Chop fresh parsley and sprinkle it over the cheese.
