The sweetness of the lobster and tomatoes is balanced by a light but flavorful lemon-orange dressing. Tarragon adds a fresh zing.

2 whole lobsters (1 3/4 pounds each)
2 tablespoons extra-virgin olive oil
1 1/2 teaspoons finely grated orange zest, plus 1 tablespoon fresh orange juice
1 1/2 teaspoons finely grated lemon zest, plus 2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon finely grated shallot
Coarse salt
12 cups mixed greens such as Bibb lettuce, mache, and arugula (10 ounces)
1 large yellow tomato, halved and thinly sliced
2 teaspoons finely chopped fresh tarragon, plus more for garnish

Steps:

  • Prepare an ice-water bath. Bring a large pot of water to a boil. Reduce heat to medium-low. Plunge lobsters into water headfirst, and simmer, covered, for 11 minutes. (Do not let water boil.) Transfer lobsters to ice-water bath using tongs. Let stand for 10 minutes to cool.
  • Meanwhile, whisk together oil, zests and juices, mustard, shallot, and 1/2 teaspoon salt.
  • Crack lobster claws, knuckles, and tails, and remove meat. Slice tail meat 1/2 inch thick, and leave claws and knuckles whole.
  • Combine lobster, greens, tomato, and tarragon. Drizzle with dressing, and toss to coat. Garnish with tarragon. Serve immediately.

This lobster salad is wonderful on its own-but piled onto a hot dog bun it becomes a perfect lobster roll.

4 (1 1/2-lb) live lobsters
1/4 cup finely chopped shallot
(1 large) 3 tablespoons fresh lemon juice
1/3 cup mayonnaise
2 tablespoons finely chopped fresh tarragon
Accompaniment (optional): hot dog buns (preferably top-split), buttered and grilled or toasted if desired

Steps:

  • Plunge 2 live lobsters headfirst into an 8-quart pot of boiling salted water. Loosely cover pot and cook lobsters over moderately high heat 9 minutes from time they enter water, then transfer with tongs to sink to cool.
  • Return water to a boil and cook remaining 2 lobsters in same manner.
  • While lobsters are cooking, combine shallot, lemon juice, and 1/2 teaspoon salt in a large bowl and let stand at room temperature 30 minutes.
  • When lobsters are cool, remove meat from claws, joints, and tails. Discard tomalley, any roe, and shells (or save for another use). Cut meat into 1/2-inch pieces.
  • Whisk mayonnaise, tarragon, and 1/4teaspoon black pepper into shallot mixture. Add lobster meat and toss gently to coat.

1/2 cup extra virgin olive oil, plus extra for the tomatoes
1/4 cup citrus champagne vinegar
2-3 tbsp fresh squeezed orange juice
1 lemon freshly squeezed
1.5 tbsp honey
1/8 tsp of each, salt + pepper, plus additional for the roasted tomatoes ((fresh cracked best!))
1/8 tsp garlic powder, plus additional for the roasted tomatoes
12 oz lobster pieces, fresh or thawed
bagged arugula
1 avocado, diced
1 orange, peeled and cut into segments
1/2 pint cherry tomatoes, roasted and cooled

Steps:

  • First, let's roast the tomatoes. Preheat an oven to 400.
  • Cut the tomatoes in half (length wise) and coat in evoo. Then add some freshly cracked salt, pepper + garlic powder and combine.
  • Place the tomatoes on a baking sheet lined with parchment and roast for 5-7 minutes until tomatoes start to blister. Remove and allow to cool.
  • In a large mason jar or similar shakeable container, squeeze the lemon and orange juice through a strainer to prevent pulp and seed pieces from sneaking in.
  • Add the remaining ingredients and shake well to completely combine.
  • Slice an avocado in half, remove the pit and dice the entire avocado into 3/4" cubes and scoop out.
  • Cut the skin from the orange, and the gently slice into segmented piece (see video and photos for details)
  • If using frozen lobster, rinse in cold water until thawed and pat dry very well using paper towels.
  • Using a small round ring (I used a large biscuit cutter), add arugula, then split the additional ingredients between two plates and layer each ingredient overtop the arugula.
  • Add 1/2 the diced avocado, orange segments and lobster to each plate. Gently divide up the roasted tomatoes between the two plates.
  • Shake the dressing again and spoon it overtop the salad.
  • Add additional cracked pepper overtop, remove the plating ring and serve immediately.
  • Enjoy!

3 tablespoons fresh tarragon, chopped
4 oranges (suggest Cara Cara, or Navel)
2 tablespoons Dijon mustard
1/4 cup sunflower oil
salt

4 (1/4 lb) lobster tail, in shells, splitting shells in middle with kitchen shears
1 head butter lettuce
1 medium avocado, cut into 1/2-inch cubes
1 yellow bell pepper, coarsely chopped
1 small red onion, coarsely chopped
1 pint grape tomatoes, cut into halves

Steps:

  • Prepare dressing by whisking tarragon, juice and zest of 2 oranges, Dijon mustard and oil together in a medium bowl. Season dressing to taste with salt and white pepper.
  • Set aside 1/4 cup of the dressing to use as a marinade for the lobster tails.
  • Spoon some of the marinade onto the lobster meet through the spilt in the shells.
  • Prepare grill for medium high heat. Place lobster on the grill split side up.
  • Grill lobster tails for 8 minutes per side or until meat is opaque and can be easily pulled from the shells.
  • On 4 serving plates place lettuce leaves as a bed for the salad.
  • Remove the lobster meat from the shell and cut each tail in half lengthwise.
  • Top lettuce leaves with lobster meat, avocado, tomato, bell pepper, onion and segments of the two remaining oranges.
  • Drizzle each serving with dressing; pass additional dressing on the side.

1 tablespoon Dijon mustard
3 tablespoons seasoned rice vinegar
2 1/2 tablespoons fresh orange juice
1 1/2 tablespoons olive oil
1 1/2 tablespoons chopped fresh tarragon or 1 1/2 teaspoons dried
1 large shallot, minced
1 teaspoon (packed) grated orange peel
1 large yellow bell pepper
1 large red bell pepper
2 8-to-10 ounce uncooked lobster tails (thawed, if frozen)
12 ounces small green beans, trimmed
1 large white-skinned potato, cut into 1/2-inch pieces
1 large ear fresh corn
10 cups mixed baby greens (about 5 ounces)

Steps:

  • Place mustard in small bowl. Whisk in 2 tablespoons vinegar and orange juice. Gradually whisk in oil. Mix in tarragon, shallot and orange peel. Season dressing to taste with salt and pepper.
  • Char bell peppers over gas flamer or in broiler until blackened on all sides. Enclose in paper bag and let stand 10 minutes. Peel and seed peppers; cut into 1/2-inch pieces. Place in large bowl.
  • Bring large pot of salted water to boil. Add lobster tails and cook 10 minutes. Transfer to bowl of ice water and cool. Add green beans to same pot of boiling water and cook until crisp-tender, about 5 minutes. Using slotted spoon, transfer beans to another bowl of ice water and cool. Add potato to same pot of boiling water and cook 2 minutes. Add corn kernels; cook until potato and corn are just tender, about 2 minutes longer. Drain well; add to bowl with peppers. Drain green beans; pat dry with paper towels. Add beans to potato mixture.
  • Drain lobster; remove meat from shells. Cut meat crosswise into rounds. (Dressing, lobster and salad can be prepared 4 hours ahead. Cover separately and refrigerate.) Mix lobster with 1 1/2 tablespoons dressing. Mix remaining dressing into salad. Season with salt and pepper.
  • Toss greens with remaining 1 tablespoon vinegar. Place on large platter. Mound salad on greens. Arrange lobster over greens and serve.

GRILLED LEMON-TARRAGON LOBSTER

1/4 cup (1/2 stick) butter
2 tablespoons fresh lemon juice
1 1/2 teaspoons grated lemon peel
2 tablespoons chopped chives
1 tablespoon chopped fresh tarragon or 1 teaspoon dried
2 live lobsters, each about 1 1/2 pounds

Steps:

  • Prepare barbecue (medium-high heat). Stir butter lemon juice and lemon peel in heavy small saucepan over low heat until butter melts. Mix in chives and tarragon; season with salt and pepper. Set pan at edge of grill to keep sauce warm.
  • Meanwhile, bring large pot of water to boil. Drop lobsters headfirst into water. Cover pot; boil lobsters 2 minutes. Transfer lobsters to work surface. Using heavy large knife or cleaver, split lobsters in half lengthwise. Scoop out and discard gray intestinal tract, gills and sand sac from head. Leave any red roe or green tomalley intact if desired. Crack claws. Brush cut side of lobsters with 1 tablespoon butter sauce.
  • Grill lobsters, cut side down, 4 minutes. Turn again so that cut side is down and grill until lobster meat is just opaque but still juicy, about 2 minutes. Transfer lobsters to plates. Brush lightly with sauce. Serve, passing any remaining sauce seperately.

4 ounces butter
1 garlic clove, minced
1 teaspoon chopped fresh ginger or 1/2 teaspoon ground ginger

Steps:

  • Preheat grill.
  • Remove the soft part of lobster tail with scissors.
  • Hit shell lightly with a mallet to make it lie flat.
  • Melt butter in saucepan and add garlic, ginger, tarragon, mustard and salt.
  • Spoon some of the butter mixture over tails and reserve remaining.
  • Let stand 20 minutes.
  • Grill lobster 4 inches from heat for 10 - 15 min with meaty side up, basting frequently with reserved butter mixture.

Warm Butter-Poached Lobster Salad with Tarragon-Citrus Dressing image

Coarse salt
2 tablespoons distilled white vinegar
1 live lobster (about 1 1/4 pounds)
1 tangelo, tangerine, or orange (7 ounces), plus 1 cup juice, strained
1/2 cup (1 stick) cold unsalted butter, cut into small pieces
1 sprig fresh tarragon, plus 10 leaves
1/4 teaspoon freshly ground white pepper
4 leaves Bibb lettuce

Steps:

  • Bring a large pot of water to a boil; add 2 tablespoons salt and the vinegar. Plunge lobster head first into water; cook 3 minutes (meat will not be fully cooked). Transfer lobster to a cutting board.
  • Using a kitchen towel to protect your hands, twist off tail and claws; discard body. Twist fan off end of tail, and push meat out of shell. Alternatively, use kitchen shears to cut up length of tail, and pull shell away from meat. Cut tail meat in half lengthwise, and transfer to a plate lined with paper towels; set aside. Separate claws from knuckles; twist and pull off pincers, being careful to keep meat intact. With back of knife, crack knuckle end of claw to loosen shell. Gently remove whole piece of meat; set aside with tail. Using your finger or the handle of a spoon, push knuckle meat out of shell. Wipe any white residue off meat. Meat can be refrigerated in an airtight container up to 2 hours ahead; bring to room temperature before poaching.
  • Remove peel and pith from tangelo using a sharp knife. Working over a bowl, carve out flesh between membranes, allowing segments to drop into bowl. Squeeze juice from membranes into bowl. Transfer juice in bowl to a separate bowl; reserve juice for dressing.
  • Put 1/3 cup juice into a small saucepan; bring to a boil. Reduce heat to low, and whisk in butter, 1 piece at a time, until smooth. Add a pinch of salt and the tarragon sprig. Submerge lobster meat in the butter sauce. Poach until opaque and cooked through, 2 1/2 to 3 minutes.
  • Whisk 3 tablespoons warm poaching liquid into 2 tablespoons reserved juice in bowl; whisk in pepper and 1/2 teaspoon salt. Add lobster to dressing; toss gently to coat. Just before serving, add tangelo segments and tarragon leaves; toss gently to combine. Season with salt.
  • Arrange 2 lettuce leaves on each serving plate. Place lobster and tangelo segments on top. Spoon dressing over top.
