This fresh take on a family favorite makes a delicious dinner tonight and, later in the week, stars in a savory filling for Spinach-and-Turkey Hand Pies. A combination of white and dark ground turkey meat are mixed with breadcrumbs, chopped fresh dill, and crumbled feta cheese for Greek-inspired flavor.

2 teaspoons extra-virgin olive oil
1 small red onion, diced small
2 garlic cloves, finely chopped
2 large celery stalks, diced small
Coarse salt and ground pepper
1 pound ground white-meat turkey
1 pound ground dark-meat turkey
1 large egg
2 slices white sandwich bread, cut into small pieces
4 ounces feta, crumbled (1 cup)
1/4 cup fresh dill, chopped

Steps:

  • Preheat oven to 350 degrees. In a medium skillet, heat oil over medium. Add onion, garlic, and celery and cook, stirring occasionally, until vegetables are soft, 7 minutes. Season with salt and pepper.
  • In a large bowl, combine vegetables, turkey, egg, bread, 1 1/4 teaspoons salt, and 1/2 teaspoon pepper. Using your hands, mix until combined. Mix in feta and dill. Transfer to a parchment-lined rimmed baking sheet and form into a 4-by-10-inch loaf. Bake until cooked through, 45 to 55 minutes, rotating sheet halfway through. Let rest 10 minutes before slicing.

2 slices wheat bread (use glute-free, if needed)
1/4 cup milk
2 eggs
2 lbs ground turkey (93/7)
1 10 ounce package frozen chopped spinach (Thaw and drain. See notes.)
1 1/2 cups crumbled feta cheese
1/3 cup pitted chopped greek olives
1 14.5 canned diced tomatoes (drained)
1 tablespoon Worcestershire sauce
1 teaspoon granulated garlic
2 teaspoons oregano
1 teaspoon salt
1 teaspoon pepper
1/2 cup marinara sauce

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl mash together bread and milk until a paste forms. If you need to use a little more milk that's fine.
  • Mix in the 2 eggs.
  • On top of the bread and egg mixture add the turkey, spinach, feta cheese, olives, diced tomatoes, garlic, oregano, salt, and pepper.
  • Using your hands, mix everything together until all the ingredients are evenly distributed. Try not to over mix.
  • On a baking sheet sprayed with cooking spray form meatloaf mixture into a loaf. Spread marinara sauce on top.
  • Bake for 1 hour 15 minutes.
  • Let the meatloaf cool for 5 minutes and serve.

2 teaspoons olive oil
1/2 cup diced red onion
1 teaspoon grated or minced garlic
1/2 cup diced roasted red peppers
1/3 cup crumbled feta
1/4 cup chopped kalamata olives
1 tablespoon fresh chopped dill
2 tablespoons chopped flat leaf parsley
2 teaspoons dried oregano
Kosher salt and fresh ground black pepper to taste
1 egg
1/4 cup panko, gluten free if needed
1 tablespoon milk
1 pound lean ground turkey, I use 93/7%
1 cup plain non-fat Greek yogurt
1/2 cup grated English or Persian cucumber, squeeze out excess moisture with your hands or a towel
2 tablespoons lemon juice
1 tablespoon dill
1/4 teaspoon garlic powder
Kosher salt and fresh ground black pepper to taste

Steps:

  • Pre-heat the oven to 400° F. In a non-stick skillet over medium heat, sauté the onion in the olive oil until it starts to soften, about 2 minutes. Add in the garlic and sauté another 30 seconds. Dump the mixture into a large mixing bowl.
  • Add the peppers, feta, olives, dill, parsley, oregano, egg, panko, milk, salt and pepper to the mixing bowl and whisk everything together. Add in the turkey and use your hand to combine the mixture being careful not to over-mix.
  • Line a baking sheet with parchment paper or foil (spray the foil with cooking spray) and form the meat mixture into a loaf that is equally thick all the way around. Bake for 30-40 minutes or until a meat thermometer inserted into the middle reads 170° F. Let the meatloaf rest for 5-10 minutes before serving.
  • In a medium sized bowl stir together all of the ingredients for the tzatziki sauce. Taste for for seasoning and serve with the meatloaf.

1/4 cup 2% milk

2 garlic cloves, minced

2 pounds lean ground beef (90% lean)

Steps:

  • In a large bowl, combine the first 10 ingredients. Crumble beef over mixture and mix well. Pat into two greased 8x4-in. loaf pans. Cover and freeze one meat loaf for up to 3 months., Bake remaining meat loaf, uncovered, at 350° for 50-60 minutes or until no pink remains and a thermometer reads 160°. Let stand for 5 minutes. Transfer to a serving plate; sprinkle with cheese. , To use frozen meat loaf: Thaw in the refrigerator overnight. Bake as directed; sprinkle with cheese.

1/2 cup plain bread crumbs
1/3 cup chopped fresh flat-leaf parsley
1/4 cup chopped garlic and herb-marinated sun-dried tomatoes
2 cloves garlic, minced, optional
2 eggs, at room temperature, lightly beaten
2 tablespoons whole milk
1/2 cup crumbled feta cheese
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 pound ground turkey, preferably dark meat

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F.
