CHEESY ZUCCHINI NOODLES WITH BACON

- Cut the zucchini into long noodles using a spiralizer (or use 1 pound store-bought zucchini noodles). Set aside.
- Put a rimmed baking sheet in the oven and preheat to 425 degrees F. Toss the tomatoes with 1 tablespoon olive oil in a small bowl and season with salt and black pepper. Spread on the hot baking sheet and bake until the tomatoes are slightly softened and just browned around the edges, 7 to 10 minutes.
- Meanwhile, cook the bacon in a medium nonstick skillet over medium heat until browned and crisp, about 7 minutes. Remove to a paper towel¿lined plate and wipe out the skillet. Melt the butter in the skillet and add the scallion whites and garlic; cook until softened, about 1 minute. Add the flour and stir to combine, about 30 seconds. Whisk in the milk, mustard, cayenne and 1/2 teaspoon salt. Cook, whisking, until slightly thickened, about 2 minutes. Remove from the heat and whisk in the cheese until smooth.
- Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the zucchini noodles and season with salt and black pepper. Cook, stirring, until the zucchini is just softened, 2 to 3 minutes. Using tongs, transfer the zucchini to the cheese sauce, leaving any extra liquid in the skillet. Cook over medium heat, gently tossing until coated; season with salt and black pepper. Top with the roasted tomatoes, bacon and scallion greens.
MAC AND CHEESE WAFFLES WITH BACON
Who doesn't love a waffle, more importantly, a savory waffle? I created this recipe during some late-night thinking, as I do with most recipes that I make. I thought about two things that my wife loves: waffles and a little spicy mac and cheese, so I wondered, "Why not smash them together?" Happy wife, happy life, as they say. These waffles will satisfy at all hours of the day for your partner, friend, family member or even if you're on your own -- but a warning: You'll want to eat more than one!

- Bring a large pot of salted water to a boil.
- Meanwhile, cook the bacon in a large skillet over medium heat, stirring occasionally, until crispy, 7 to 8 minutes. Remove with a slotted spoon to a paper towel-lined plate. Pour bacon fat into a heatproof container (save for another use) and wipe the skillet clean with paper towels.
- Melt the butter in the large skillet over medium heat. Add the flour and whisk until tan in color, about 1 minute. Add the milk and bring up to a simmer, whisking every couple of minutes, until thick enough to coat the back of a spoon. Add the three cheeses in batches, whisking after each addition, until melted. Remove from the heat.
- Add the pasta to the boiling water and cook according to the package directions until al dente, then drain. Transfer to a large bowl, add 3/4 of the cheese sauce and 3/4 of the cooked bacon and stir to combine. Pour onto a rimmed baking sheet, spread it to the edges and refrigerate for 1 hour. Reserve the remaining cheese sauce for serving.
- Preheat your waffle iron to medium high. Spray with nonstick cooking spray and add enough mac and cheese to cover most of the iron. Press down hard to squeeze the waffle iron shut (don't worry if some mac and cheese falls out). Cook until golden brown, about 4 to 6 minutes.
- Meanwhile, reheat the reserved cheese sauce over low heat. Plate the waffle with a side of cheese sauce and garnish with some of the remaining bacon. Repeat with the remaining mac and cheese.
PECAN BACON
Steps:
- Preheat oven to 375°. Place bacon in a single layer in a foil-lined 15x10x1-in. baking pan. Bake until lightly browned, 16-18 minutes., Remove bacon from pan. Discard drippings from pan, wiping clean if necessary., In a shallow bowl, mix remaining ingredients. Dip both sides of bacon in brown sugar mixture, patting to help coating adhere; return to pan., Bake until caramelized, 8-10 minutes longer. Remove immediately from pan.

- Preheat the oven to 350 degrees F. Grease a 9- by 9-inch pan with butter.
- Whisk together the sugar and eggs in a large bowl. Whisk in the butter, cocoa and vanilla. Stir in the flour and salt. Add the chopped semisweet and bittersweet chocolates, bacon and pecans and stir to combine.
- Spread the batter into the pan.
- Bake until the brownies are moist but not wet, testing with a toothpick, 25 to 30 minutes. They will be very fudgy. Scoop and serve warm or cool completely before cutting.

BAKED BRIE WITH CANDIED PECANS AND BACON

- Preheat the oven to 325 degrees F.
- Cook the bacon in a large skillet over medium heat until golden and crisp, 4 to 5 minutes per side. Transfer to paper towels to drain and cool and then finely chop.
- Mix the bacon, cherries, pecans, vinegar, rosemary, thyme, pinch of salt and a few grinds of pepper in a small bowl.
- Trim off the top rind of the Brie, leaving a 1/4-inch border around the edges and put in a small baking dish. Top with the pecan mixture, letting it mound and fall into the dish around the Brie. Cover the dish with foil, and bake until the cheese is warm and gooey, 30 to 35 minutes.
- Serve warm with bread and/or crackers.

- In a medium bowl, combine the pecans with the water and liquid aminos. Soak for 3 hours, then drain.
- Make the pico de gallo: In a medium bowl, combine the tomatoes, onion, cilantro, garlic, salt, pepper, and lime juice and mix well. Set aside until ready to serve the tacos.
- Slice the mango flesh off of the pit, then cube. Set aside.
- Add the drained pecans to a food processor with the mushrooms, green and red bell peppers, red onion, jalapeño, taco seasoning, garlic and herb seasoning, and lime juice. Pulse a few times until the mixture is well chopped and resembles ground meat. Do not over-process.
- Serve the pecan "meat" in butter lettuce leaves. Top with pico de gallo, jalapeño, mango, cilantro, avocado, lime juice, and Tajín seasoning.

- In a small bowl, whisk together the lemon zest, garlic, lemon juice and olive oil; stir in the beans and set aside.
- In a medium-sized heavy skillet, cook the bacon pieces over low to medium-low heat, turning as needed to achieve uniform crispness. Using a slotted spoon, transfer to a paper towel to drain. Pour off the bacon drippings, reserving 1/4 cup in the skillet.
- Meanwhile, prepare the pasta according to package directions. (Serving hint: As the pasta water heats, place your serving bowl or platter over the pot to heat it.) Drain well, reserving 1/2 cup cooking water.
- Transfer the pasta to the warmed serving bowl, add the beans with their marinade and the bacon pieces and toss lightly.
- In the skillet used to the cook the bacon, heat the reserved bacon drippings over medium-high heat until hot. (To test, add an herb leaf to the hot drippings. When it sizzles, the temperature is right) Add the parsley, sage and rosemary to the hot drippings and saute quickly, 10 to 15 seconds. Drizzle and scrape the bacon drippings and herbs onto the pasta mixture and toss to blend. For a moister coating, add a little of the reserved cooking water. Serve immediately with the salt, pepper and grated romano.
