Steps:

  • In bowl, toss 1 red onion, cut into 8 wedges, with 1 tablespoon olive oil; season with salt and pepper. Cook in hot wok until caramelized on one side, 3 to 5 minutes.
  • In bowl, toss 3/4 pound trimmed green beans with 1 tablespoon oil. Flip onions; put beans on top. Cook until beans are tender, 5 to 15 minutes.

2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/2 medium red onion, sliced (about 2/3 cup)
2 slices bacon
1 tablespoon whole-grain mustard
1 tablespoon white wine vinegar

Steps:

  • Preheat a grill over medium-high heat. Lay 2 sheets of aluminum foil, about 14 inches long, on top of each other and crimp the edges together and up slightly so it resembles a rimmed baking sheet. Put the beans in the center and toss with 1 tablespoon of the oil, 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • Place the foil baking sheet on the grill and add 2 tablespoons water. Grill the beans, tossing with long tongs occasionally, until lightly charred and softened, about 10 minutes. Add the onions and another 2 tablespoons of water and continue to grill until the beans and onions are tender, another 6 to 7 minutes.
  • While the beans grill, cook the bacon in a small skillet over medium heat until crispy; transfer to a paper-towel-lined plate to drain. Pour off the bacon drippings, leaving about a tablespoon in the skillet. Remove the skillet from the heat and immediately stir in the mustard, vinegar and remaining 1 tablespoon oil until combined.
  • Transfer the beans and onions to a bowl and add the vinaigrette from the skillet. Toss well, crumble the bacon over top and serve.

  • Blanch the beans in boiling water for 3-4 mins until al dente, adding the spring onions for the final 2 mins. Plunge the vegetables into ice-cold water, then drain and set aside.

2 slices thick, cured bacon, chopped
1 sweet onion, (medium), chopped
1/2 cup chicken broth
1/2 teaspoon coarse salt, (or to taste)
1/4 teaspoon freshly ground black pepper, (or to taste)

Steps:

  • Boil the beans for 6-7 minutes, or until crisp tender. Drain and place the colander into a prepared ice bath. Dry the beans well and chop into bite-size pieces (or leave them whole if you prefer). Set aside.
  • Add the bacon to a pot or skillet over medium-high heat. Add the onions. Sauté until the bacon is crispy and has rendered its fat and the onions are translucent. Don't remove the bacon fat! Add the chicken broth, salt, and pepper, and beans. Simmer for 3 minutes. Enjoy!

1/4 tsp ground black pepper
1/2 tsp salt
1/2 tsp garlic powder
1 Tbsp water
1 Tbsp olive oil

Steps:

  • Prepare a clean grill for cooking on medium heat about 350 - 400 degrees F.
  • Lay out one piece of foil about 12'' x 24'' and put the green beans in the middle of the foil, evenly spread out. Fold up ends of green beans to make a edge to contain water and olive oil. Sprinkle the seasonings over the beans, then drizzle with olive oil and water. Fold the ends of the foil in towards each other to form a packet. Wrap another time with foil to double layer the foil to prevent foil from tearing open.
  • Place foil packet on grill over direct medium heat. Cook with lid closed for 8 minutes. Flip the foil packet over and cook an additional 8 minutes. Carefully open the bag and check a bean from the middle of the pile to test if it's done.

1 lb fresh green beans
1 small onion, sliced
2-4 slice bacon cut into quarters (low sodium or turkey)
4 medium mushrooms, sliced
season of choice

Steps:

  • 1. Slice onions and mushrooms and cut bacon slices into quarters. Prep the green beans.
  • 2. Place wok over the heated side of the grill. Add bacon and optional onions. Sear for a couple of minutes.
  • 3. Move basket to unheated side of grill, add beans and mushrooms to wok. Season and stir.
  • 4. Cook over indirect heat (with lid shut), approx. 325°-350° for 30-45 min. stirring often. Cooking time will depend on heat of grill and how al dente you like your beans.

1/4 cup white wine vinegar
3 tablespoons fresh rosemary
3/4 cup extra virgin olive oil
1 pound small new potatoes, sliced in half
3 tablespoons olive oil

1 large red onion, finely sliced

Steps:

  • Place the vinegar and rosemary in a blender and blend until smooth. Slowly add the olive oil until emulsified and season with salt and pepper to taste. Strain into a bowl. Preheat grill. Toss potatoes in a large bowl with olive oil and season with salt and pepper to taste. Grill skin side down until golden, turn over and continue grilling until just cooked through. Place in a large bowl and immediately toss with 1/4 cup of the vinaigrette. Meanwhile, bring a large pot of salted water to a boil and add the haricots verts. Cook for 2 minutes, and immediately plunge into a bowl of ice water. Drain. Add the haricots verts and red onion to the potatoes and drizzle with the remaining vinaigrette.
