Yogurt makes a great base for a marinade, adding a milky tang and helping to tenderize all kinds of meats. In this case, the yogurt is spiked with aromatics - toasted cumin, green chile, herbs, and plenty of ginger and garlic - which impart complex flavors to a butterflied leg of lamb destined for the grill. Lightly pickled, spicy onions make a bright garnish here, but you can skip them if it seems like one step too many. Instead, just slice up a red onion and scatter the raw slivers over the top of the meat for a contrasting crunch. If you'd rather cook this inside, you can broil it instead of grilling.

2 limes
2 medium red onions, peeled
2 1/2 teaspoons kosher salt, plus more as needed
Pinch of granulated sugar
1/8 teaspoon cayenne pepper, plus more as needed for sprinkling
1 1/2 tablespoons cumin seeds
2 teaspoons coriander seeds
1/3 cup plain yogurt, plus more for serving, if desired
1/3 cup fresh mint leaves and tender stems, plus more for serving
1/3 cup fresh cilantro, leaves and tender stems, plus more for serving
6 garlic cloves
1 small jalapeño pepper, seeded if desired
1 inch piece of ginger, peeled and sliced into thin coins
1/2 teaspoon black pepper
1 boneless butterflied leg of lamb, about 5 to 6 pounds without the bone
Flaky sea salt

Steps:

  • Grate the zest from one of the limes and squeeze the juice. Reserve both separately. Cut the other lime into wedges and save for serving.
  • Cut one onion into wedges; put into a blender and add lime zest. Halve remaining onion and slice it very thinly; put slices into a sieve and rinse well with cold water. Transfer onion slices to a small bowl.
  • Add lime juice to bowl with onion slices, sprinkle lightly with salt, sugar and cayenne. Toss well and refrigerate for at least 6 hours or until serving.
  • In a small skillet over medium-low heat, toast cumin and coriander seeds until fragrant, 1 to 2 minutes. Transfer to the blender with the onion and lime zest. Add yogurt, mint, cilantro, garlic, jalapeño, ginger, black pepper, 2 1/2 teaspoons kosher salt and 1/8 teaspoon cayenne. Blend until smooth.
  • Place the lamb on a rimmed baking sheet, bowl or in a large resealable plastic bag. Pour marinade all over lamb, turning to make sure it is thoroughly coated. Cover lamb (or close the bag), and refrigerate for at least 6 hours or overnight.
  • Heat the grill (or broiler). Wipe lamb with paper towels, removing most of the yogurt mixture. Grill or broil lamb until a digital thermometer reads 115 degrees for rare, or 125 for medium (about 6 to 15 minutes per side, depending on how you like your meat and how thick the lamb is). If the meat starts to char before it's done, move it to a cooler part of the grill to finish cooking. Or if broiling, move it farther away from the broiler's heat source.
  • Transfer to a cutting board, tent loosely with foil, and let the meat rest for at least 10 minutes before slicing. Arrange meat on a platter, spooning any juices from the cutting board over the slices, and top with more mint, cilantro, the spicy onions, yogurt if you like, and a sprinkling of flaky salt. Serve immediately, with the lime wedges on the side.

3 sprigs fresh rosemary
3 sprigs fresh thyme
4 cloves garlic
2 1/2 teaspoon plus 2 tablespoons olive oil
1 pound lamb tenderloin
3/4 cup Israeli couscous
1 cup heirloom cherry tomatoes, halved
1/4 cup chopped fresh basil
1 medium vine-ripened tomato, thinly sliced
1 teaspoon cumin seeds, toasted 1 minute in a dry skillet
1/4 cup fat-free Greek yogurt
1/4 cup seeded and roughly chopped cucumber
1/8 teaspoon confectioners' sugar
1 tablespoon chopped fresh mint

Steps:

  • Strip leaves from stems of rosemary and thyme, then chop coarsely. Smash garlic cloves, then chop coarsely. Pulse herbs, garlic and 1/2 teaspoon oil in a food processor until smooth. Place lamb in a 13" x 9" glass baking dish; rub with garlic mixture; cover; refrigerate 1 hour. Remove from fridge and let sit at room temperature 30 minutes before grilling. Cook couscous as directed on package; transfer to a bowl. Toss with 2 teaspoon oil, cherry tomatoes and basil. Season with salt and pepper; set aside. Make raita: Heat oven to 375°F. Toss tomato slices with remaining 2 tablespoons oil and spread on a baking sheet; roast until tomatoes brown in spots, about 30 minutes. Grind cumin seeds to a fine powder in a coffee grinder or spice mill. Puree roasted tomato in a blender with cumin, yogurt, cucumber and sugar until smooth. Stir in mint. Season with salt and pepper. Transfer to bowl and refrigerate until ready to eat. Heat grill to medium-high heat (about 375°F). Grill lamb, about 2 minutes per side for medium. Remove from grill and let rest 10 minutes; cut into 1-inch-thick slices. Divide couscous and lamb among 4 plates. Serve with 1 tablespoon raita per plate.

1 tablespoon fresh lemon juice
2 teaspoons ground cumin
1 teaspoon ground coriander
2 1/4 pounds boneless lamb sirloin, trimmed, cut into 1-inch cubes
1 cup water
1/4 teaspoon salt
2/3 cup couscous
1/2 cucumber, seeded, chopped
1 ripe tomato, chopped
1/2 small onion, halved, thinly sliced
2 tablespoons olive oil
2 tablespoons chopped fresh dill
6 6-inch-diameter pita breads

Steps:

  • Set strainer over large bowl. Line strainer with 2 layers of cheesecloth (do not let strainer touch bottom of bowl). Spoon yogurt into strainer. Let stand at room temperature 1 hour (liquid will drain out and yogurt will thicken; discard liquid). Mix yogurt, garlic and lemon juice in small bowl. Season to taste with salt.
  • Rub cumin and coriander over lamb pieces. Thread lamb onto 6 metal skewers. (Yogurt and lamb can be prepared 4 hours ahead. Cover separately and chill.)
  • Combine 1 cup water and 1/4 teaspoon salt in medium saucepan. Bring to boil. Add couscous. Remove from heat. Cover; let stand until liquid is absorbed, about 5 minutes. Transfer couscous to large bowl; fluff with fork. Cool to room temperature. Stir in chopped cucumber, tomato, onion, olive oil and fresh dill. Season with salt and pepper.
  • Prepare barbecue (medium-high heat). Grill lamb to desired doneness, turning frequently, about 10 minutes for medium-rare. Transfer to platter. Sprinkle with salt. Grill pitas until heated through and lightly toasted, about 1 minute per side.
  • Place 1 pita on each of 6 plates. Spread yogurt mixture evenly over pitas. Spoon couscous down center of pitas. Slide lamb off skewers onto couscous.

5 cups warm water
3 pounds 6 ounces flour
1 tablespoon plus 1 teaspoon salt
1/2 cup minced shallots
1/4 cup sumac
3/4 cup toasted sesame seeds
1/2 cup chopped Italian parsley leaves
1/2 bunch chopped fresh thyme leaves
1 1/2 cup extra-virgin olive oil
1 quart goat yogurt, drained in cheesecloth for at least 4 hours or overnight, refrigerated
1 tablespoon toasted, ground cumin seeds
1/2 tablespoon chopped garlic
1/4 cup chopped mint leaves
1/4 cup chopped cilantro leaves
1/6 cup extra-virgin olive oil
Salt and pepper

Steps:

  • Mix yeast with water. Add flour and salt. Mix for 15 minutes. Add more flour if dough seems wet. Should clean sides of bowl but be semi-sticky.
  • Proof in an oiled container for approximately 1 hour. Roll into 3-ounce balls on a semolina sprinkled sheet pan. Cover and refrigerate.
  • Mix zatar ingredients to combine. Set aside at room temperature.
  • Put drained goat yogurt in a mixing bowl and add the remaining sauce ingredients.
  • Preheat as grill to medium heat.
  • When ready to grill, take a ball of dough and with your hands or a rolling pin, stretch the dough to about an 8-inch circle. Brush lightly with olive oil and grill on medium fire until it starts to puff. Flip and cook on other side for about 1 minute more. Place on a kitchen towel and cover until all doughs are cooked.
  • Take the warm flatbread, drizzle with 1 to 2 tablespoons of zatar, drizzle with yogurt sauce and roll up taco or wrap style. For a more substantial meal, add your favorite grilled meat and top with any combination of your favorite items, like: chopped romaine, sliced red onion, cucumbers, tomatoes, mint, cilantro and/or feta cheese

1 cup torn lettuce leaf
1/2 cup diced tomato
1/2 teaspoon kosher salt

Steps:

  • Add all the seasoning mix ingredients to a dry heavy sauce or saute pan over medium heat.
  • Stir for approximately 1 minute or until fragrant; remove from heat source.
  • In a big mixing bowl, add the lamb, seasoning mix, and 3 tablespoons cold water.
  • Gently mix together with your hands (don't overwork the meat).
  • Wet your hands and shape mixture into 4 patties, approximately 3/4 inch thick each.
  • Cover and chill in the refrigerator until you are ready to grill.
  • Right before you are ready to grill: whisk together the sauce ingredients in a bowl.
  • Lighty spray or brush the patties with olive oil.
  • Grill over medium direct heat for 7-9 minutes (medium-doneness), turn once half-way through gill time.
  • Place lamb patties inside pita pockets and add a large spoonful of yogurt sauce.
  • Slip in a little lettuce and tomato and serve.

For Sauce:
1 1/2 cups/360 milliliters plain Greek yogurt
1 small tomato (seeded and chopped)
4 mint leaves (finely chopped)
1 clove garlic (minced)
2 teaspoons/10 milliliters cumin seeds (toasted)
6 whole peppercorns
1/2 teaspoon/2.5 milliliters sea salt

Steps:

  • Gather the ingredients.
  • Toast cumin seeds in a pan for 1 to 2 minutes, add peppercorns and toast for an additional minute. Remove from heat.
  • Using spice or coffee grinder, pulverize cumin and peppercorns until powdered.
  • Pour the yogurt to a large bowl. Stir in pulverized cumin and pepper, garlic, and salt. Add the tomato and chopped mint to the mixture and stir to combine. Store in refrigerator until ready to use.
