These Grilled Country Style Ribs are first dry rubbed with a blend of ground cumin, oregano, black pepper and other warm spices before grilling. The exterior gets crusty and the tender interior is juicy. No typical BBQ sauce on these for an alternative, but feel free. Plus, no rib bones to deal with, just seasoned meat!

3 lbs country style pork ribs ((typically 4 ribs))
4 tbsp dry rub of choice ((Turkish Spice Blend recipe link, See Note 1})
2 lemons (juiced)
4 tbsp honey
1 cup BBQ Sauce ((optional))

Steps:

  • Rub the ribs with the spice blend with your hands, pressing to adhere. Cover ribs with plastic wrap and place in refrigerator for minimum 1 hour, best overnight.
  • In a small bowl whisk together the lemon juice and honey. Set aside.

This is a recipe inspired by dear friends. We're using a very interesting cut of pork that has a lot of marbling and fat. This, combined with the "Jason Monroe Triple-Dip" marinade method, makes a lip-smacking, simple summer dish paired with a refreshing tomato-melon salad.

1 tablespoon sambal (Thai chili paste)
1/2 cup Palm sugar
4 sprigs cilantro stems and leaves
1/2 onion, sliced
1 knob ginger, fresh, minced
6 Garlic cloves, minced
1/2 cup soy sauce, thin
3 Scallions, thinly sliced
1/4 cup rice wine vinegar
1 teaspoon black pepper
1 tablespoon sesame oil
2 tablespoons Chinese mustard
3 pounds country-style pork ribs
2 tablespoons coriander seeds, toasted, roughly cracked
1 tablespoon minced shallot
2 tablespoons fresh lemon juice
2 tablespoons champagne vinegar
3/4 cup extra-virgin olive oil
Salt and pepper, to taste
2 pints cherry tomatoes, washed and halved, Sungold preferred brand
1 cup watermelon (or other seasonal melon),rind and seeds removed, sliced into 1/4 in. pieces

Vinaigrette, to taste
6 sprigs cilantro, fresh, to garnish

Steps:

  • FOR THE VINAIGRETTE: Toast green coriander seeds for approximately 2-3 minutes in a dry skillet. Place the seeds on a cutting board and crush the seeds with the bottom of a skillet. Add them to a mixing bowl. Chop the shallots, adding salt to help with the mincing later. Using a microplane, zest the rind of one lemon over the shallots. Mince these ingredients together. Add this mixture to the coriander seeds. Add lemon juice and vinegar to the mixture. Season the mixture with a pinch of salt and pepper. Macerate for five minutes. Using a whisk, slowly whisk the EVOO into the coriander shallot mixture until well combined. Taste for salt, adjust seasoning as necessary, and set aside.
  • FOR THE MARINADE: Combine the onion, garlic, scallions (using most of the white), coarsely chopped cilantro, ginger, sesame oil, chili paste, soy sauce and palm sugar in a large mixing bowl. Smear the Chinese mustard onto the ribs and cover the ribs with the marinade. Marinate the ribs the morning you plan to cook them (6 to 8 hours ahead).
  • Light the charcoal using a chimney starter. Place real-wood charcoal into the chimney. Place several sheets of loosely crumpled newspaper under the bottom of the chimney. Ensure the charcoal is red hot, should take approximately 20-25 minutes.
  • Place the grill grate about 1 to 2 inches above the coals to let it heat up. Remove the ribs from the marinade, reserving the marinade, and wiping off all ingredients from the ribs. Chargrill each rib for approximately 5 minutes per side, or until cooked medium well and caramelized. Dip each rib back into the marinade and continue grilling for an additional minute per side to enhance the charred flavor. Repeat dipping process once more.
  • FOR THE TOMATO-MELON SALAD: In a medium mixing bowl, combine the tomatoes and watermelon. Dress with 1/4 cup of the coriander vinaigrette and season with salt and pepper. Toss to combine. Arrange the country ribs on a serving platter. Spoon the tomatoes and watermelon over the ribs. Top with cilantro and serve.

1/2 cup plus 2 tablespoons olive oil
1/4 cup honey
1/4 cup freshly squeezed lime juice (from 2 to 3 limes) plus zest of 1 lime
1/4 cup minced shallots (from 1 large)
3 tablespoons hot sauce, preferably Texas Pete
2 large garlic cloves, minced
Kosher salt and freshly ground black pepper
2 tablespoons salted butter
1 cup pecan halves
2 tablespoons brown sugar
1 small seedless watermelon
One 5- to 6-ounce box baby arugula
1 cup sliced strawberries
1/2 cup blueberries
4 ounces premium-quality blue cheese
1/4 cup chopped fresh parsley
1/4 cup sliced scallions

Steps:

  • For the vinaigrette: Combine the oil, honey, lime juice, zest, shallots, hot sauce, garlic and salt and pepper in a bowl to make a sweet and spicy vinaigrette. Set aside.
  • For the salad: Line a baking sheet with wax paper and set aside. Melt the butter in a large skillet over medium heat. Toss in the pecans and brown sugar, stirring to coat. Cook over medium heat until the sugar begins to caramelize, about 3 minutes. Spread out pecans on prepared baking sheet to cool.
  • Heat an outdoor gas grill to high or prepare a charcoal grill for high, direct-heat grilling. Trim the ends off the watermelon. Stand the watermelon on one cut end and cut in half, then cut each half in half again. Cut the quarters into 1/2-inch-thick slices. Brush the vinaigrette on both sides of the watermelon slices. Add the watermelon slices to the grill in a single layer and cook until warmed through and grill marks appear, 2 to 3 minutes per side. Cool the watermelon, then cut into cubes. (You won't use all the watermelon for the salad. Use as much as you like.)
  • Layer the arugula leaves, grilled watermelon, strawberries, blueberries, blue cheese, pecans, parsley and scallions in a salad bowl. Add vinaigrette and toss just before serving.

1/2 (5-pound) seedless watermelon
1/4 cup balsamic vinegar
Extra-virgin olive oil
Kosher salt (specialty salt is great here, if on hand)
2 cups fresh baby arugula, washed and dried
1 cup goat cheese, crumbled, preferably a French Chevre
Fresh finely cracked black pepper

Steps:

  • Stand the watermelon half cut side down on a cutting board and slice away the rind, leaving a solid block of melon. Turn the block on its side and cut it into 8 squares, roughly 3 by 3 inches and 1-inch thick.
  • Pour the vinegar into a small saucepan and bring to a simmer over medium-high heat. Cook until reduced to a thick syrup consistency. Set aside.
  • Heat a nonstick grill pan over medium-high heat. Drizzle just enough olive oil over watermelon slices to thinly coat and place on hot grill pan. Grill each side about 2 minutes until grill marks appear; transfer to a plate and season with salt.
  • To assemble the salads, put about 1/4 cup of baby arugula on a serving plate, followed by a grilled slice of watermelon in the center, and top with a tablespoon of crumbled cheese and another 1/4 cup arugula. Add another watermelon slice and another tablespoon of cheese. Repeat with remaining ingredients. Finish each salad with a very light drizzle of olive oil and balsamic syrup. Dust with black pepper and serve immediately.

½ cup Burgundy wine
¼ cup barbeque sauce, plus more for basting
¼ cup cider vinegar
¼ cup hot pepper sauce
2 tablespoons Worcestershire sauce
2 tablespoons prepared yellow mustard
4 pounds country-style pork ribs
1 tablespoon onion powder
1 tablespoon garlic powder

Steps:

  • Stir wine, barbeque sauce, cider vinegar, hot pepper sauce, Worcestershire sauce, and mustard together in bowl until well mixed. Place ribs in a baking dish; pour Burgundy wine mixture over ribs and coat completely.
  • Mix onion powder and garlic powder together in a bowl. Dust ribs with powder mixture; let marinate 2 hours, turning once.
  • Preheat grill for medium-low heat and lightly oil the grate.
  • Grill ribs, covered, over indirect heat on the preheated grill for 45 minutes, turning once. Baste with barbeque sauce and grill until meat is tender, about 15 minutes, turning and basting frequently.

1/2 cup soy sauce
1/4 cup unseasoned rice vinegar
3 scallions, thinly sliced
6 garlic cloves, minced
2 tablespoons minced peeled ginger (from one 2x1-inch piece)
1 tablespoon chopped cilantro leaves
1 tablespoon hot chili paste (such as sambal oelek)
1 tablespoon toasted sesame oil
1 teaspoon freshly ground black pepper
1/2 medium onion, sliced
3 pounds (1-inch-thick) country-style pork ribs or bone-in pork chops
2 tablespoons Chinese hot mustard powder
Watermelon:
1 teaspoon coriander seeds
1/3 cup Champagne vinegar or white wine vinegar
2 tablespoons fresh lime juice
1 tablespoon finely chopped shallot
1 teaspoon honey
1/2 cup olive oil
Kosher salt, freshly ground pepper
5 cups coarsely chopped seedless watermelon (cut from half a 6- to 7-pound watermelon)
4 cups Sun Gold or cherry tomatoes (about 1 1/4 pounds), halved
1/4 cup cilantro leaves with tender stems plus more for garnish

Steps:

  • Ribs:
  • First, make the marinade. Bring brown sugar and 1/2 cup water to a boil in a small saucepan, stirring to dissolve sugar. Lower heat to medium and simmer until reduced to 1/4 cup; transfer to a medium bowl. Whisk in soy sauce and next 8 ingredients. Stir in onion. Let cool. Pour the marinade into a large resealable plastic bag.
  • Rub ribs with mustard powder and add to marinade in bag; seal bag and turn ribs to coat. Place bag in a baking dish and chill, turning occasionally, for at least 6 hours and up to overnight.
  • Watermelon:
  • Start with the dressing. In a small saucepan over low heat, toast coriander seeds until fragrant and beginning to pop, 2-3 minutes. Transfer coriander to a baking sheet and crush slightly with the back of a cool skillet. Combine coriander, vinegar, lime juice, shallot, and honey in a small bowl. Whisk in oil and season with salt and pepper. Set vinaigrette aside.
  • Place watermelon in a large bowl; add 1/2 cup vinaigrette and toss to coat. Cover and chill, tossing occasionally, for up to 1 hour to lightly pickle watermelon.
  • Build a medium fire in a charcoal grill, or heat a gas grill to medium-high. Transfer ribs from bag, leaving some marinade clinging to surface, onto a baking sheet. Pour remaining marinade from bag into a medium saucepan. Bring to a boil; reduce heat to medium and simmer for 3 minutes. Set marinade aside.
  • Grill ribs until nicely charred and cooked to medium, about 5 minutes per side. Using tongs, dunk each rib into reserved marinade. Return ribs to grill and cook, turning once, until cooked to medium-well, about 2 minutes per side. Transfer to a platter.
  • Toss tomatoes, 1/4 cup cilantro, and 1 Tbsp. vinaigrette in a medium bowl. Season to taste with salt and pepper.
  • Top ribs with pickled watermelon. Scatter tomato mixture over. Garnish with more cilantro. Serve, passing remaining vinaigrette alongside for drizzling over.

1/4 cup canola oil
1 medium onion, chopped
