Steps:
- Heat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 inch pan.
- In a large bowl, combine cake mix, cherry pie filling, almond extract, and 2 eggs by hand; stir until well blended. Pour batter into prepared pan.
- Bake for 25 to 30 minutes, or until it tests done. Cool.
- In a small saucepan, combine sugar, butter or margarine, and milk. Boil, stirring constantly, for 2 minutes. Remove from heat, and stir in chocolate chips until smooth. Immediately pour over partially cooled cake.

MOIST CHOCOLATE POLENTA CAKE
Steps:
- Preheat the oven to 300 degrees. Butter a 9 by 13-inch cake pan and line it with parchment or waxed paper.
- In the top of a double boiler set over barely simmering water, melt the chocolate and butter together. Stir well and set aside to cool slightly. Meanwhile, in a mixer fitted with a whisk attachment (or using a hand mixer), whip the egg yolks and 1/2 cup of the granulated sugar until very light yellow and fluffy. In a clean, dry bowl, whip the egg whites until soft peaks form. Add the remaining 1/4 cup sugar and continue whipping just until stiff and glossy, about 30 seconds more. Fold the egg yolks into the hot chocolate mixture until barely blended. Fold in the whites until barely blended. Sprinkle the brandy and polenta evenly over the surface of the batter and fold in. Pour into the prepared pan and bake until the center is firm and a tester inserted into the center comes out clean (a few crumbs are okay), 1 to 1 1/4 hours. Let cool in the pan. Cut into squares, dust with confectioner's sugar, and serve.

- Heat the oven to 160C/140C fan/gas 3. Butter and line a 900g loaf tin with baking parchment. Toss the cherries in 1 tbsp of the flour, then set aside.
- Put the butter and sugar in a large bowl, and whisk until light and fluffy. Add the eggs, 1 at a time, mixing well between each addition. Fold in the remaining flour, the baking powder and ground almonds. Stir in the milk, the vanilla and almond extracts, and 100g of the chocolate with a spatula. Scrape half the cake mixture into the tin, scatter half the cherries over the top, then add the remaining cake mixture and the remaining cherries. Bake for 1 hr 10 mins or until a skewer comes out clean.
- Cool in the tin for 10 mins, then remove and place on a wire rack to cool completely. - Preheat oven to 350F and line a 9×13-inch pan aluminum foil for easier cleanup and spray with cooking spray; set aside.
- To a large bowl, add the cake mix, eggs, almond extract and beat with a handheld electric mixer on low speed for about 90 seconds; mixture will be dry with pea-sized lumps and clumps.
- Add the cherry pie filling and stir by hand to incorporate.

- Find a round tin of any size. Line this with greaseproof paper. Preheat your oven to 180 Celsius (fan)/Gas mark 4/350 Fahrenheit. To a large mixing bowl, beat the butter and sugar together until creamed.
- To your bowl, add in the beaten eggs and combine this into the butter and sugar. Make sure every bit is combined. Sift the self raising flour into the mixture and gently fold the flour into the mixture.
- To this, add in the baking powder and cocoa powder. Mix this until the cocoa powder has been combined. Add in your prepared instant coffee (only a quarter of the cup will do) for an extra boost of chocolate. Combine the coffee into the mixture.
- Stir in your glace cherries and transfer the cake mix to your round tin. Bake the cake for 20-28 minutes or until there is no mixture on a skewer when you insert it into the cake. Take the cake out of the pan and leave to cool on a wired rack.
- To prepare the buttercream, combine the butter, icing sugar and vanilla extract. Spread a thin layer on your cooled cake and put any spare buttercream and the cake in the fridge to set.
- After an hour or two, take out the cake and apply the rest of the buttercream to the cake. To prepare the chocolate ganache, chop the chocolate into even pieces and set aside. Heat the double cream in a small saucepan. Once you see tiny bubbles, take it off the heat immediately and stir in your chopped chocolate. You should have a glossy ganache. If the chocolate doesn't melt in the cream, heat it on a very low heat and stir until glossy.
- The ganache will set as it cools. Pour the runny ganache all over the cake and reserve some for a sauce. Place the cake in the fridge until the ganache has a dessert-like consistency when you touch it. To serve the sauce, reheat this on a low heat, not in the microwave. Again, the ganache should be runny and smooth. If you do heat the ganache in a microwave and it has split, heat the sauce on the pan until combined. Serve the cake immediately.

- Preheat the oven to 350*.
- Lightly spray a 9x13 baking dish with baking spray (Baker's Joy or Wilton's Bake-Ease)
- Remove the cherries from the jar, reserving the liquid in the jar to be used in making the cherry frosting . There will be 25-30 cherries in the jar. Remove the stems of 15 of the cherries. Slice the cherries in half, then slice the halves in half again. Keep the remainder of the cherries in the jar with the stems on to garnish the tops of the frosted pieces of cake.
- Using a stand mixer, or a handheld mixer and a large mixing bowl, add the dry cake mix and the cherry Dr. Pepper. No water/milk, eggs or oil will be used in this recipe. Mix on low until the dry cake mix and Dr. Pepper are just combined.
- Using a large spoon, stir in the sliced cherries.
- Pour the batter into the prepared baking dish. Bake for 28 minutes, or until a knife or toothpick inserted comes out clean. Set the cake aside and allow the cake to cool completely.
- Using a stand mixer, or a handheld mixer and large mixing bowl, on medium speed, cream together softened butter, reserved cherry juice (about ¼ to ⅓ cup). NOTE: Make sure the butter is softened, not melted
- Reduce the mixer speed to low, add the 3 cups of powdered sugar ½ cup at a time. This should be a firm frosting consistency, like canned frosting. If the frosting is thin, add up to ½ cup additional powdered sugar. Be careful to not make the frosting very thick that it will not spread easily. Again, the consistency should be like canned frosting.
- Spread the frosting evenly on top of the cake.
- Next, gently score the size of the serving pieces of cake.
- Place one of the reserved cherries with stems in the middle of each piece of cake. If the amount of stemmed cherries is less than the number of servings, remove the cherry stems and slice them in half and garnish the tops of the pieces of cake.
- To help the frosting set before cutting the individual pieces, place the cake in the refrigerator to chill for 30 minutes to 1 hour.
- If using store bought chocolate shavings, sprinkle the shavings evenly over the top of the frosting. Or using a vegetable peeler and a chocolate bar, gently scrape down the sides of the chocolate to make the shavings. (Scrape as you would when peeling the skin of a carrot, but gently).

- You will need a large plastic, microwave safe bundt pan or ring mold for this recipe.
- Do not follow directions on cake mix box- just dump the dry mix into a bowl and add the cherry pie filling and the eggs.
- Mix well.
- Pour into the plastic bundt pan (I spray mine with nonstick baking spray first) and place in your microwave on HIGH for approximately 12 minutes- or until a toothpick comes out clean; NOTE: Older microwaves and those without a spinning base will probably require a bit longer cook time, and you will also need to rotate the pan 1/4 turn every 4 minutes or so for more even baking).
- Let cool upside down on a wire rack.

- Mix cake mix with cocoa, beaten eggs, almond flavouring, melted chips and oil. Use a two cup glass measure to melt the chips and oil. Add cherry brandy if using. Fold in cherry pie filling. Turn into greased bundt pan.
- Bake 350 degrees for 55 minutes. The residue heat will finish the cooking. Cool, turn out onto a plate and glaze.
- Glaze:.
- 3/4 cup semi-sweet chocolate chips.
- 2 tbsp butter.
- 2 tbsp table cream.
- Microwave on medium the chips, butter, and milk until melted . Stir in 1/2 cup icing sugar ( optional ) Cool and pour over cake. I use the same two cup Pyrex measuring cup to melt the chips & oil to put into the cake, and save it unwashed to make the glaze. No point in wasting a bit of chocolate! One time I made it, I used a bit more cherries ( almost 1/2 can more ) and it was the best one yet! After I glazed it and let it cool, I dribbled some of the cherry goo over the glaze to keep it moist- went over huge in my home!
- This cake is best made the day before to allow the flavours to get happy!

- Preheat oven to 350 degrees.
- Prepare a 13x9-inch baking pan by lightly spraying.
