Chicken Sandwich Spread image

This creamy chicken sandwich spread is loaded with diced chicken, celery, and onion and perfect to spread on toast or crackers.

2 cups diced chicken (cooked and cooled)
2 hard boiled eggs (chopped)
1/2 cup mayo
1 tbsp dijon mustard
1 tablespoon sweet pickle relish
1 stalk celery (diced)
1/4 cup diced yellow onion
1/4 teaspoon salt

Steps:

  • Finely dice the chicken, eggs, onion, and celery. Add everything to a large bowl and mix to combine.
  • The spread can be served immediately, but will taste best if stored in the refrigerator overnight to allow the flavors to meld.

Can't believe this has never been posted. Wonderful spread. Guests can never figure out what is in it. The chicken is cans of Underwood chicken spread. Prep time does not include refrigeration time.

1 tablespoon garlic wine vinegar (or vinegar with garlic added)
2 (5 ounce) cans chicken, spread
1/2 cup mayonnaise
1/2 cup pecans, chopped, can use walnuts
3 tablespoons soy sauce
1/4 cup chives
1 pint sour cream
ginger, to taste
salt, to taste
1 tablespoon minced onion, to taste

Steps:

  • Mix together vinegar, chicken, mayo, pecans, ginger, salt & onion. Form into a mound on serving plate. Top entirely with sour cream & chives. Refrigerate for at least 1 hour.Serve with your favorite crackers.

1/4 to 1/3 cup mayonnaise
Salt and black pepper, to taste
Optional: no-salt herb blend , to taste
Optional: garlic powder, to taste
Optional: onion powder, to taste
Optional: cayenne pepper, to taste

Steps:

  • Gather the ingredients.
  • Mince cooked chicken finely and put in a medium bowl.
  • Add 1/4 cup mayonnaise and salt and pepper, to taste. Mix gently. Add extra mayonnaise, as needed, until spread reaches desired consistency.
  • If you like, flavor the spread with a no-salt herb blend, a little garlic or onion powder, or a dash of cayenne pepper.
  • Spread in between slices of bread and enjoy.
